The onions in your sandwich is salsa criolla... Red onios, lime juice, salt, black pepper, a little bit of oil and sometimes chillies ( ajies).
Inka Kola or Golden Kola in USA is very popular because it is only one that doesn't have this weird after taste like Coca-Cola when you eat hot chillies.. And goes well with Chifa.
Lomo Saltado is considered creole food but it has a Chinese influence because of cooking style.
Chifa is Cantonese food mixed with Peruvian ingredients/techniques or vice-versa and was originated more than 120 years ago.

Lomo saltado and that tallarín saltado are not chifa and definitely they are not supposed to be eaten with chopsticks lol how weird, the waiter should have told you guys.
Chifa is the name of the chinese/peruvian restaurants and they serve platea like arroz chaufa which is stir fried rice with vegetables, egg and chicken, and also is not eaten with chopsticks, just the regular good old fork.
Inka cola is peruvian but was bought by Coca cola, because they couldnt compete against the higher demand of Inka cola. In Perú that soda is usually the perfect sweet drink to get when eating pollo a la brasa or ceviche because it goes well with the salty dishes.
I would have suggest you try food menus for the cost of 2 dollars (you get and entree, a soup, a dish, dessert and a drink).
Also, you missed a lot more like pollo a la brasa, causa limeña acevichada, papa a la huancaina, seco de cordero and street food, which for one dollar you can get: papa rellena, ceviche, anticuchos, choclo con queso, papa sancochada con huevo y salsas, tamales, arroz con leche, mazamorra morada, etc. Hope to see you again in Perú some other time. Best of luck, con your next destination.

Born in Lima, now live in the USA. The onions served in the chicharon sandwich is called salsa criolla made with purple onions that are sliced very thin and washed in cold water so it’s not too strong or bitter, Add salt, pepper, lemon juice, olive oil and Aji Amarillo. This salsa is made fresh or you can place it the fridge or about an hour, otherwise the lemon juice tends to cook the onions and changes the flavor. So glad you both love Peruvian food - it’s the best in all the world! 🇵🇪🇺🇸

Peruvians tend to drink the Inca Kola soda in glass with lots of ice cubes, which cuts down on the sugar. And since it can get very hot in the summer, people can get lethargic fast, so this drink really quenches their thirst. The lomo saltado and tallarín saltado you guys had at that place doesn’t look like the typical Peruvians have on the regular. I suggest if you guys have time, to try out the chifa (Peruvian Chinese food) at the Peruvian Chinatown. Now that place really knows how to serve up these types of plates. You can also find a really good lomo saltado from the Tanta restaurant chain by famous chef Gaston Acurio. This chain is reasonably priced. Also, don’t forget the fruits! They’re amazing and many you can’t find anywhere in the world. Great video by the way :).

Cutting the meat and vegetables into small pieces so the can be picked up with chopsticks and sautéing them quickly in high heat are Chinese cooking techniques.
