I am very happy for you to be able and try the food from my country, I wish you did have somebody there who can advise you about where to eat better, there are multiple presentations of ceviche in Peru you need to find which is your favorite, I tried Mexican style but they use tomato, personally I cant eat a salty food with a sweet one, that is just me, Good luck with your channel.
Don’t be shocked, but CEVICHE is actually originally from Peru. They invented it, it’s in the history books, and that’s why it makes sense that they have the most variety of that dish. It’s also the national food dish. Mexico and Costa Rica and all other countries you have ate from just have their take on it. It’s like how Americans have their take on tacos. Word travels around quickly and customs merge.

It's not a tourist trap! I'm not so sure about the exact numbers, but I think Peru has like 4 of the Best 50 restaurants in the WORLD... and they're all in the Miraflores area. Besides that, it has always been an upscale district, so that could explain the prices. But even so I really think it's worth the try because peruvian cuisine is top notch!
And the restaurant they went to isn't even considered a "very expensive restaurent", it´s in the like middle ranges of "expensive" (i recognize it). There are restaurants that charge 500 bucks for a fucking stone. Once Kylie Jenner and her mom came to Peru and they went to this "extremely expensive restaurant". The food was so wierd Kylie ended up going to Mc'Donalds.

@@DelightfulTravellers what other country has ceviche? Other countries cook or steam the fish and put in a bunch of vegetables. They make salad or cocktail. Ceviche is raw fish marinated in citrus. That is all. If the fish is cooked or steamed or if it is just one ingredient among many, it is not ceviche. People may add chocolate if they want to to make it more delicious but it would not be ceviche. It is a dish of the coastal people who only had the sea as a source of food and needed to marinate de raw fish with anything strong so they won't die a horrible death. They weren't making a cocktail or a salad for tourists.

But since Onions and Lime did not make its way to South America by then, the region used the juice from a sour fruit named Tumbo. Coast empires relied alot on seafood and there's even traces in Paracas that fish was dried in order to preserve it and commercialize it to the Andes.
The potato, corn, and many other earth products are originally from Perú. We have more than 3,000 variety of potato, and many of corn, from 4,000 to 2,000 years before Christ. One of them are the sweet potato and the “choclo” (kind of big corn) that goes with the ceviche. The pre-Incas even at that time (BC) ate the fish row only cook with a fruit juice (tumbo) and ají. The “anticuchos “ were introduces in our gastronomy by the slaves from Africa, the conquers (spaniels) ate the meat of the cows, and to the servants they gave the interiors of the animal: heart, liver, kidneys, tripes or stomach, lungs, etc. And they used our spices, herbs, ají, etc and creates many, many delicious dishes. The picarones are made with sweet potato, pumpkin, anise and flower, fried, you eat it with a sweet honey call “chancaca”. Perú has more of 490 original dishes, after the fusion of the different cultures arrived. First the native product, then Spaniel influence, French (after their revolution many came to Perú), African slaves, Chinese, Japanese, Italian, German, etc. Also we have more of 250 different desserts. I hope I have help you to understand, a little bit, our love for our gastronomy and for the presents our land (pachamama: Mother Earth in Quechua) gives us. Aahhhh, Miraflores is a tourist site, so many of the restaurants are more expensive. Next time try to eat in the “mercados” (markets?)
Yes, you are right, the corn is from Mexico, there have been many discrepancies about it in the FAO, but they have recently said that the first corn is from that area
Chef timour is from France but lives in Perú; if you're open to suggestions, he can tell you what places to go as the restaurant you visited didn't seem like the best, there were missing ingredients on couple of dishes.
It is believed that more than 2000 years ago in the Peruvian coast, the Mochica culture prepared a dish based on fresh fish, which was cooked with juice of a local fruit called tumbo(citric); then in the time of the Incas, fish was macerated with chicha, and it was until the arrival of the Spaniards when the ingredients that we know today in ceviche were added: lemon and onion. According to the historian Javier Pulgar Vidal, the word "seviche" comes from "Siwichi" which is a Quechua terminology that translates as fresh or tender fish. Other versions are also discussed as "cebiche" from the word bait, used to refer to a delicacy or food...I would like to invite you to Chiclayo, where the Moche culture flourished, and Chachapoyas where the Sachapuyos had their Empire, Peru is not only Lima and Cuzco . Cañete is like 2 to 3 hours from lima and it actually alot closer to the ocean so their seafood is amazing. I love peruvian food just wishes that people would try more variety than lomo, ceviche, papa a la huancaena. Its become to popularized here in NY

Yes, for sure you can get those dishes much cheaper and more delicious in other places near Miraflores, like Magdalena, Lince, Surquillo, even Callao etc...but probably will need some guide...if you try everything in Miraflores, will probably not get the real flavor of our Peruvian dishes...

Ceviche was created in Peru. Pisco is also from Peru. Miraflores is one of the more expensive places in Lima because of the amount of tourists. Staying and eating in Lima is usually cheap.
The prices depend on the restaurant you wanna eat. There a lot of places you can enjoy peruvian food in low costs. For example the "mercados" . Inside them there are little places you can try delicious and cheap food. Ask people around where you can find a "mercado".

The juice in a ceviche is called Leche de Tigre or Tiger's Milk, but actually there are no tigers in Peru. It has that name because in Peru it's the best cure for hangovers.
You want to eat something delicious and inexpensive, real food street? Go to the Mercado de Surquillo and you will find wonderful food, you will not regret it. And you will pay a fifth of what you paid!! Thanks for the video!!
Peruvian ceviche is the best for me…. (OPINION). I fell in love with it when my family and I went there. It’s just sooooo good! Peruvian dishes are some of my ULT favorite.
Anticucho is a fusión and adaptation between Perú and Áfricans slaves, history says rich People in Perú Just eat the meat of the cow but throw away the heart, lung, kidneys and the Áfricans slaves cooked it and eat, but peruvians saw it and started to cooked it and start the fusion between both continents
Actually you are right. The área where you was is one of the most expensive área in Lima. Beside of that the plates were really small. Unfortunally some of the best street food are in area a little diferent

Churros originated in Spain, Mexican churros are just a take on it. You should’ve gone to Manolo which is a block and half away from where you had the picarones for the Peruvian take on churros. Everything is much more expensive in that area of Miraflores, it’s mostly a tourist area

I was watching your video and glad to see you enjoyed our food, regardless the misunderstanding about the ceviche, just to clarify, yes you will find ceviche everywhere and that’s fine, few months ago a ate a ceviche in Indonesia, it was really good, but just for your records, ceviche is originally from Perú and I’m proud that it has spread around the world!!!
Wow, the ceviche looked intimidating. I actually think the cow heart looked really good! I’m not sure what I would think of pumpkin onion rings, I’d have a hard time getting past sweet onion rings 😂
We travel a lot and any of countries we mentioned that have Ceviche do a great version. It might not be like Peru's version but it's still great. That's like saying other countries can't do pizza - Trevor
I tried Ceviche in Puerto Rico (had carrots, was rather sweet and dry. Horrrendous) and in Mexico (was ok, but to call it ceviche.... too far from that). Peruvian Ceviche is beyond amazing. Yea, I'm Peruvian and tho I am biased, I try to be as neutral as possible.

Leche De Tigre is the sauce/dressing the ceviche is in and it's not a milk it's a base of lime juice, salt, pepper, aji Amarillo (Peruvian yellow pepper), onion, and cilantro. (There are different variations even within the country of Peru but this is the most common base to work from) The milky look is actually caused from the combination of ingredients with the fish. It is very common to drink leche de tigre separate from the ceviche also (Sometimes when drinking in separate in a small glass they do add a bit of pisco to the mix). Also like everyone has been mentioning you are in the most touristy area causing it to be more expensive. The best places to eat usually and best prices are the places that typically look like someone's house (hole in the wall type place) and street vendors outside of miraflores.
i'm Peruvian and those places are good... but not enough, there are so many places to visit with special foods like Seco de Res, Pachamanca, Thimpo anyway, great video By the way
I ate with only 7 soles (3,5 CAD$) and it was very good! If you go to public local markets where everything is fresh, you will pay for the dish and not for the place, you should try it next itme
I suggest you watch "Viaja y Prueba", Luciano Mazzeti is a Peruvian Chef and RUclipsr, he travels around Peru (and also the world) showing us great places to eat with low budget. Delicious food in Perú is in places you less expected, I hope you are still in Lima. 😋😋😋
Peru is becoming well known for its cuisine. As attention grown worldwide, so has its prices. So expect to see restaurant with high price points to meet demand and reputation as Peru has most recognized chefs worldwide in the top 20. But, without a doubt you could go many other places cheaper anywhere in Peru to experience Peruvian cuisine. Enjoy!
I'm Peruvian/American lived in New Jersey for 35 years....now back to my roots here in Lima. Miraflores is a much expensive town. You can eat all of that for way much cheaper price. Just ask freely if any questions. Liked your video. Greetings and lots of luck to you guys.

Hey guys! Your video is amazing! I am Peruvian-Canadian :) and yup! Lima is an expensive city :p I live in Toronto and over here living expenses (especially food, clothing and housing) are just slightly higher than in Lima. The only cheap thing in Lima is the commute. :) You should go to Arequipa, it is a very unique city in all Latin America, the food is ACTUALLY incredible and its very cheap. It is the Quebec of Peru :)

What you call "tiger milk" is the lemon based marinade that "cooks" the fish (it cooks it in the same way vinegar cooks the fish in a sushi). The orange thing is a sweet potato and the yellow thing is indeed corn. Aji means chili pepper. Picarones are made of sweet potatoes. Trevor, maybe you would like to try cau cau (cow stomach) and cuy (guinea pig). Anna, if you liked aji de gallina, you will like papa a la huancaina. You should try to drink Inca Kola and chica morada. Peru and Lima are really cheap. Miraflores, Barranco, Cercado de Lima and San Isidro are upscale, business and/or tourists districts, so the prices there are higher than elsewhere (but they don't speak as much English and there isn't as much tourism elsewhere).

Lima is typically very cheap, Miraflores is one of the more expensive places. Miraflores is where the more rich people live and where a lot of tourist in Lima choose to live, that's why it is more expensive. Love this video
MIRAFLORES and SAN ISIDRO are the FINANCIAL and BANKING CENTERS of Peru. Everything is expensive there. Next time, you should try to explore other districts of Lima and other parts of Peru. Food prices are 1/5 of what you spent in Miraflores. Cost of living in PERU is very low also. The American Dollar can go a long way in Peru. You can live in Peru for $1,000 dollars per month. I am glad you liked Peruvian food. Many of your fellow countrymen and citizens from around the world fly long distances just to go on a food tour in Lima. Great video.
In answer to your question, yes, the restaurant you went was a bit pricy but, hey Miraflores is a touristic area so it's meant to be pricy. The beauty of Lima is that there is amazing food for every budget, actually not too far from where you were is the Surquillo market where you can find amazing food for a third of what you paid, well....next, maybe time.
You've been in the center of Miraflores, which is an upper class and touristic district. Although eating in a fine restaurant is more expensive since the boom of peruvian food, you can certanly eat very well for much less if you go to other parts of the city, like Barranco, Chorrillos o el Callao. It is expensive if you go to tourist oriented restaurants, the rest of Lima is not reaaally expensive you can find all the dishes you ate for half the price. Even in Miraflores there are many good inexpensive restaurants.
I’ve never seen a ceviche served with fish chunks that big. Lol. Looks like you two went upscale eateries which is reflected on the price. The anticucho and ají de gallina are as comfort food as it gets for Peruvian food, it shouldn’t be as expensive as the prices listed in your video.

I could eat ceviche and causa every single day. 😍 Miraflores, San Isidro and surrounding areas are touristic destinations so everything is way more expensive. Try the local markets, great food, prices and people!
Miraflores has some of the most expensive food in Peru, but anywhere else you can have amazing food for very little money! Also, the reason why ceviche in Peru is so good, it’s because it originated there and then went throughout South and Central America where different countries adapted it to their own cultures. All great versions, but the original Peruvian ceviche will forever be the best 😜
What?!!!! Peru has the best ceviche in the world. Ask any country. And that’s sweet potatoe, its mainly to ease down the lime flavor of its too sour and also if you order the ceviche spicy, it’s to mild your tongue down. The tigers milk is the ceviche juice run off, the liquid part that was on the bottom of the dish. There’s actual a dish called tigers milk ( Leche de tiger) which is more of the juice and less of the fish.

Yess you paid for the area! Actually the food is way more cheaper outside Miraflores, but is the safest because many people want to be smart over tourist like many countries so be with couple of friends from Peru , is easy safe and cheap to walk around
There are some places that are really expensive, but the thing about Lima is that is so big and you can give the same tour with less money. I can recommend some places not that far from where you went guys. Thanks for visiting!
OMG! I had that exact cow heart dish in that same restaurant and I loved it! I can even taste it! It was though a fancy restaurant, that's why you found it so expensive. But it's really worth it, the desserts there were AMAZING too. I went to la casa del ceviche too, really good 👌 and picarones in plaza Kennedy were great. You guys should had hooked up with a local person, so you could really try small neighborhood mom/dad restaurants. The places that you visited charge way too much.

I’m Peruvian living in USA... we love fish because we know the taste of it.... we eat it fresh, never frozen and most probably the fish you eat for lunch in a restaurant was swimming few hours ago,; they go to the fish market at 4-5am to buy the best fishes. On the other hand, eating fish in USA is totally deferent experience because they have been frozen before so I understand why people don’t like seafood much here.... they don’t know the real taste of freshness.
Thanks for watching Fernando! Any coastal city / town in the USA or Canada (which is where we are from) has fresh fish. It's the same kind of thing. They catch it in the morning and if you want, you can eat it that day. That happens all over the world and not just in Peru. That all said, your seafood in Peru is exceptional. Living close to the ocean in USA doesn’t mean that you have access to fresh ( not frozen) fish... according to FDA freezing the fish is part of the process to kill parasites... for sushi/cebiche the requirement is if I remember well is -4 degrees for 7 days minimum.... so, most probably if you didn’t catch your fish you have been eaten frozen fish as “Fresh” . Even if you go to Costco to buy “fresh” seafood, there is a little sign saying that they have been frozen previously. And the FDA allows to market it as “fresh” under their parameters.
@@fernandolino6493 we live in a small city called Halifax on the east coast of Canada. The fish is fresh. Sure they freeze it too for big box stores. But it's pretty easy to find freshly caught fish here to buy and cook at home or at a restaurant. You can even buy it off the wharf from fisherman - Trevor
Canada is not USA and I don’t know the regulations in your country but it’s a fact that most American don’t eat fresh fish, they don’t even know the taste of real orange juice.( recently squeezed, no added sugars, colors and real pulp) and a lot more vegetables and meat.... the chicken taste different, the Yelp of the eggs have very pale yellow color, etc .... I read a lot comments not only in your channel regarding seafood, and I can tell the consumption is very low comparing with other countries..the quality is very poor in general... flounder is very delicious fish but here even if you pay premium the flavor is disgusting, the texture is not firm as it should be. By the way, pisco is far from tequila.... pisco is made of grapes(wine) , the oldest distillery in America is in Peru ( hacienda la Caravedo, since 1684) , Pisco is considered a Brandy and one of the finest liquors because of the quality and process to produce it..... I think you need eight bottles of wine to get one bottle of pisco.
Hey, guys, just to update you in the food prices: lima has dishes (really good ones) from US $2.00 all the way to US $250.00 so, take your pick. Just last week I had some really inexpensive steaks at US $4.00 and then we eat at Central Restaurant at US$250.00 a person... it’s the stuff you got to do once in your life time. Highly recommended this place. Lima has several restaurants ranking in the top 50 of the world, so, don’t be surprised to pay through the nose on those. Panchita is not even close, but it’s a nice spot for locals. Go to Barranco !!! Also, go to the “Mercado de Surquillo”. There, good and inexpensive food. You’ll also see an try fruit you’ve never seen in your life. Go, go, go...

To give you an idea, a really good aji de gallina costs about 4 usd, Lima is very cheap, but you went to the most expensive places it has to offer. Visit Lince, Jesús Maria, Pueblo Libre, they are also safe for the most part, and a lot less expensive. Miraflores and San Isidro are the most expensive boroughs in metropolitan Lima.

@@DelightfulTravellers what other country has ceviche? Other countries cook or steam the fish and put in a bunch of vegetables. They make salad or cocktail. Ceviche is raw fish marinated in citrus. That is all. If the fish is cooked or steamed or if it is just one ingredient among many, it is not ceviche. People may add chocolate if they want to to make it more delicious but it would not be ceviche. It is a dish of the coastal people who only had the sea as a source of food and needed to marinate de raw fish with anything strong so they won't die a horrible death. They weren't making a cocktail or a salad for tourists.

But since Onions and Lime did not make its way to South America by then, the region used the juice from a sour fruit named Tumbo. Coast empires relied alot on seafood and there's even traces in Paracas that fish was dried in order to preserve it and commercialize it to the Andes.

The potato, corn, and many other earth products are originally from Perú. We have more than 3,000 variety of potato, and many of corn, from 4,000 to 2,000 years before Christ. One of them are the sweet potato and the “choclo” (kind of big corn) that goes with the ceviche. The pre-Incas even at that time (BC) ate the fish row only cook with a fruit juice (tumbo) and ají. The “anticuchos “ were introduces in our gastronomy by the slaves from Africa, the conquers (spaniels) ate the meat of the cows, and to the servants they gave the interiors of the animal: heart, liver, kidneys, tripes or stomach, lungs, etc. And they used our spices, herbs, ají, etc and creates many, many delicious dishes.
The picarones are made with sweet potato, pumpkin, anise and flower, fried, you eat it with a sweet honey call “chancaca”.
Perú has more of 490 original dishes, after the fusion of the different cultures arrived. First the native product, then Spaniel influence, French (after their revolution many came to Perú), African slaves, Chinese, Japanese, Italian, German, etc.
Also we have more of 250 different desserts.
I hope I have help you to understand, a little bit, our love for our gastronomy and for the presents our land (pachamama: Mother Earth in Quechua) gives us.

Cañete is like 2 to 3 hours from lima and it actually alot closer to the ocean so their seafood is amazing. I love peruvian food just wishes that people would try more variety than lomo, ceviche, papa a la huancaena. Its become to popularized here in NY

Yes, for sure you can get those dishes much cheaper and more delicious in other places near Miraflores, like Magdalena, Lince, Surquillo, even Callao etc...but probably will need some guide...if you try everything in Miraflores, will probably not get the real flavor of our Peruvian dishes...

Miraflores is one of the more expensive places in Lima because of the amount of tourists. Staying and eating in Lima is usually cheap.
The prices depend on the restaurant you wanna eat. There a lot of places you can enjoy peruvian food in low costs. For example the "mercados" . Inside them there are little places you can try delicious and cheap food. Ask people around where you can find a "mercado".

Churros originated in Spain, Mexican churros are just a take on it. You should’ve gone to Manolo which is a block and half away from where you had the picarones for the Peruvian take on churros. Everything is much more expensive in that area of Miraflores, it’s mostly a tourist area

Yes, it does have pumpkin (zapallo). In my city, Chimbote (north of Lima) people use fig for the sweet sauce to put on top of the picarones.

I tried Ceviche in Puerto Rico (had carrots, was rather sweet and dry. Horrrendous) and in Mexico (was ok, but to call it ceviche.... too far from that). Peruvian Ceviche is beyond amazing. Yea, I'm Peruvian and tho I am biased, I try to be as neutral as possible.

Leche De Tigre is the sauce/dressing the ceviche is in and it's not a milk it's a base of lime juice, salt, pepper, aji Amarillo (Peruvian yellow pepper), onion, and cilantro. (There are different variations even within the country of Peru but this is the most common base to work from) The milky look is actually caused from the combination of ingredients with the fish. It is very common to drink leche de tigre separate from the ceviche also (Sometimes when drinking in separate in a small glass they do add a bit of pisco to the mix).
Also like everyone has been mentioning you are in the most touristy area causing it to be more expensive. The best places to eat usually and best prices are the places that typically look like someone's house (hole in the wall type place) and street vendors outside of miraflores.

Hey guys! Your video is amazing! I am Peruvian-Canadian :) and yup! Lima is an expensive city :p I live in Toronto and over here living expenses (especially food, clothing and housing) are just slightly higher than in Lima. The only cheap thing in Lima is the commute. :) You should go to Arequipa, it is a very unique city in all Latin America, the food is ACTUALLY incredible and its very cheap. It is the Quebec of Peru :)

What you call "tiger milk" is the lemon based marinade that "cooks" the fish (it cooks it in the same way vinegar cooks the fish in a sushi). The orange thing is a sweet potato and the yellow thing is indeed corn. Aji means chili pepper. Picarones are made of sweet potatoes.
Trevor, maybe you would like to try cau cau (cow stomach) and cuy (guinea pig). Anna, if you liked aji de gallina, you will like papa a la huancaina. You should try to drink Inca Kola and chica morada.
Peru and Lima are really cheap. Miraflores, Barranco, Cercado de Lima and San Isidro are upscale, business and/or tourists districts, so the prices there are higher than elsewhere (but they don't speak as much English and there isn't as much tourism elsewhere).

Lima is typically very cheap, Miraflores is one of the more expensive places. Miraflores is where the more rich people live and where a lot of tourist in Lima choose to live, that's why it is more expensive. Love this video

MIRAFLORES and SAN ISIDRO are the FINANCIAL and BANKING CENTERS of Peru. Everything is expensive there. Next time, you should try to explore other districts of Lima and other parts of Peru. Food prices are 1/5 of what you spent in Miraflores. Cost of living in PERU is very low also. The American Dollar can go a long way in Peru. You can live in Peru for $1,000 dollars per month. I am glad you liked Peruvian food. Many of your fellow countrymen and citizens from around the world fly long distances just to go on a food tour in Lima. Great video.

In answer to your question, yes, the restaurant you went was a bit pricy but, hey Miraflores is a touristic area so it's meant to be pricy. The beauty of Lima is that there is amazing food for every budget, actually not too far from where you were is the Surquillo market where you can find amazing food for a third of what you paid, well....next, maybe time.
You've been in the center of Miraflores, which is an upper class and touristic district. Although eating in a fine restaurant is more expensive since the boom of peruvian food, you can certanly eat very well for much less if you go to other parts of the city, like Barranco, Chorrillos o el Callao. Nice video!
It is expensive if you go to tourist oriented restaurants, the rest of Lima is not reaaally expensive you can find all the dishes you ate for half the price. Even in Miraflores there are many good inexpensive restaurants.

I’ve never seen a ceviche served with fish chunks that big. Lol. Looks like you two went upscale eateries which is reflected on the price. The anticucho and ají de gallina are as comfort food as it gets for Peruvian food, it shouldn’t be as expensive as the prices listed in your video.

Miraflores has some of the most expensive food in Peru, but anywhere else you can have amazing food for very little money! Also, the reason why ceviche in Peru is so good, it’s because it originated there and then went throughout South and Central America where different countries adapted it to their own cultures. All great versions, but the original Peruvian ceviche will forever be the best 😜
What?!!!! Peru has the best ceviche in the world. Ask any country. And that’s sweet potatoe, its mainly to ease down the lime flavor of its too sour and also if you order the ceviche spicy, it’s to mild your tongue down. The tigers milk is the ceviche juice run off, the liquid part that was on the bottom of the dish. There’s actual a dish called tigers milk ( Leche de tiger) which is more of the juice and less of the fish.

Very nice video. Also in Peru and the food here is simply the best. We have found much cheaper options but outside the very touristy streets.

There are some places that are really expensive, but the thing about Lima is that is so big and you can give the same tour with less money. I can recommend some places not that far from where you went guys. Thanks for visiting!
The picarón is made with a dough made of sweet potato and a native variety of pumpkin: zapallo loche.
Miraflores is expensive, but is the best place to visit, you never get regret about the food for that price (3.5-5 / 5 stars of everything)
OMG! I had that exact cow heart dish in that same restaurant and I loved it! I can even taste it! It was though a fancy restaurant, that's why you found it so expensive. But it's really worth it, the desserts there were AMAZING too. I went to la casa del ceviche too, really good 👌 and picarones in plaza Kennedy were great. Loved this video, I'm from Chile, so i'm catching up with your Chile videos right now. You guys have been a great finding. Great work!

You guys should had hooked up with a local person, so you could really try small neighborhood mom/dad restaurants. The places that you visited charge way too much.
While that is a great idea it's not very easy to do. We're just 2 random people after all... we can't exactly ask a stranger to take us around 🤣- Trevor

I’m Peruvian living in USA... we love fish because we know the taste of it.... we eat it fresh, never frozen and most probably the fish you eat for lunch in a restaurant was swimming few hours ago,; they go to the fish market at 4-5am to buy the best fishes. On the other hand, eating fish in USA is totally deferent experience because they have been frozen before so I understand why people don’t like seafood much here.... they don’t know the real taste of freshness.
Thanks for watching Fernando! Any coastal city / town in the USA or Canada (which is where we are from) has fresh fish. It's the same kind of thing. They catch it in the morning and if you want, you can eat it that day. That happens all over the world and not just in Peru. That all said, your seafood in Peru is exceptional. Living close to the ocean in USA doesn’t mean that you have access to fresh ( not frozen) fish... according to FDA freezing the fish is part of the process to kill parasites... for sushi/cebiche the requirement is if I remember well is -4 degrees for 7 days minimum.... so, most probably if you didn’t catch your fish you have been eaten frozen fish as “Fresh” .
Even if you go to Costco to buy “fresh” seafood, there is a little sign saying that they have been frozen previously. And the FDA allows to market it as “fresh” under their parameters.
@@fernandolino6493 we live in a small city called Halifax on the east coast of Canada. The fish is fresh. Sure they freeze it too for big box stores. But it's pretty easy to find freshly caught fish here to buy and cook at home or at a restaurant. You can even buy it off the wharf from fisherman - Trevor
Canada is not USA and I don’t know the regulations in your country but it’s a fact that most American don’t eat fresh fish, they don’t even know the taste of real orange juice.( recently squeezed, no added sugars, colors and real pulp) and a lot more vegetables and meat.... the chicken taste different, the Yelp of the eggs have very pale yellow color, etc .... I read a lot comments not only in your channel regarding seafood, and I can tell the consumption is very low comparing with other countries..the quality is very poor in general... flounder is very delicious fish but here even if you pay premium the flavor is disgusting, the texture is not firm as it should be.
By the way, pisco is far from tequila.... pisco is made of grapes(wine) , the oldest distillery in America is in Peru ( hacienda la Caravedo, since 1684) , Pisco is considered a Brandy and one of the finest liquors because of the quality and process to produce it..... I think you need eight bottles of wine to get one bottle of pisco.
Hey, guys, just to update you in the food prices: lima has dishes (really good ones) from US $2.00 all the way to US $250.00 so, take your pick. Just last week I had some really inexpensive steaks at US $4.00 and then we eat at Central Restaurant at US$250.00 a person... it’s the stuff you got to do once in your life time. Highly recommended this place.
Lima has several restaurants ranking in the top 50 of the world, so, don’t be surprised to pay through the nose on those. Panchita is not even close, but it’s a nice spot for locals.
Go to Barranco !!!
Also, go to the “Mercado de Surquillo”. There, good and inexpensive food. You’ll also see an try fruit you’ve never seen in your life. Go, go, go...

To give you an idea, a really good aji de gallina costs about 4 usd, Lima is very cheap, but you went to the most expensive places it has to offer. Visit Lince, Jesús Maria, Pueblo Libre, they are also safe for the most part, and a lot less expensive. Miraflores and San Isidro are the most expensive boroughs in metropolitan Lima.
