Ok. I just started on your channel and have a few comments/ critiques. First, your Love for any type of fishing is clearly apparent. Your sound quality is really good and makes the video easy on the ears. What I like best is that you are genuinely happy when others catch fish and or accomplish something. Well done overall. Keep up the good work. Fishing is hard, hard work and making it constantly look fun is not easy. Thank you for your hard work.

Poke looks really good. You can try adding Togarashi Seasoning (not too much), sweet yellow onions, and Wakame (edible seaweed). I also like to make a dipping sauce that I either mix with my white rice or cover/dip the tuna. Either Spicy Mayo (Japanese Mayo with Sriracha 50/50 split) or "my secret sauce"( KimChee Base, Sriracha, Honey, Togarashi/ Japanese 7 spice).

Ponzu sauce instead of soy sauce. They sell it at Publix. Add more green onion and the white part of the green onion. Jalapeño too. And red chili’s. No seeds in the peppers. Finley chopped red onion.
The rice. Hit it with rice wine vinegar. Recipe on bottle. They sell at Publix. Makes the rice so much better.

I work on a long line boat most of our catch is tuna some swordfish but most of money nowadays comes from tuna the reason the tuna looks so bright red in the grocery store is because they gas it with carbon dioxide not monoxide dioxide and that's what gives it that bright red look and it'll stay like that long after it's good to eat but don't let it fool you it don't mean it's fresh

It's pretty damn hard to beat fresh blackfin!!!
I make my sauce with the first 8 ingredients first then add tuna and mix. Put your rice in a bowl add tuna, sesame seeds, green onion then sliced avocado. I also like black rice in my poke! It's tasty with just chips and a drizzle of sriracha on top!
    1-tablespoon finely chopped shallots
    2-tablespoons mayo
    1-tablespoon honey
    2-teaspoons spicy chile paste
    1-tablespoon gochujang
    1-teaspoon ish of sesame oil
    1-teaspoon ish of soy sauce
    1-teaspoon wasabi paste
    1lb ish of fresh tuna
    1 avocado
Salt pepper white and black sesame seeds to taste

we honestly just hunt any kind of structure in the Bluewater, deep ledges or wrecks, BIG floating debris if we are lucky enough to find them. Just like any fishing its never a guarantee, some days for float for hours and hours and never see a single wahoo. persistence always pays! unfortunately wahoo spearing season is over for us down here!

New subscriber! Try adding rice vinegar, salt, and sugar (if you have access to kombu, its adds a nice depth) to your rice to make sushi rice. It's my go-to when we catch tuna or bonito (out of SoCal). Takes your poké to a whole other level!
    There's a recipe on Serious Eats that's a nice resource: www.seriouseats.com/recipes/2010/07/sumeshi-vinegared-sushi-rice.html

Looked pretty good to me, was that sushi rich? If not that’s probably only thing I would change and as I’ve said in my other comment I should try leaving the tuna in the fig rapped in paper tower and plastic rap for 2-3 days. 95% of fish is better the fresher it is but tuna is one of a few fish that it’s better after a few days in the fig. Give it a try next time u have tuna or wahoo.

U should try drying the fish off completely then rapping the meat in paper towers and plastic rap for 48-72 hours. I know people talk about eating fresh fish only hours old and all that but tuna actually taste way better when u let the meat cure for a few days.

    • @KeyWestWaterman
      @KeyWestWaterman  4 года назад

I recently had a discussion with someone about this! I notice sometimes the meat is more tender after a few days "resting" good to know thank you!

Key West Waterman I don’t know y but I find myself falling down the rabbit whole and end up watching over a dozen videos of people filleting fish. I’ve learned some really great ways to process fish and that’s where I found out about the aging process of tuna. In Japan after they process the fish they dry it off completely then rap it in paper towers and plastic rap and put it in the frig for 2-3 days. I’ve tried it and I’ve actually noticed a big difference, it’s definitely more tender and the flavor is enhanced.
