This is.the best eggplant recipe I've ever made. We just inhaled this for dinner. The dressing is insanely flavorful. What I love about America's Test Kitchen recipes is, they use ingredients that are readily available at most markets. I was able to make this with ingredients I had on hand. For those interested, I air fried the eggplant. (tossed in good amount of veg oil first) It came out delicious. When I have more time, I will try the frying method. LOVED IT. Thanks, Dan and ATK.

If your reason for not being able to use fish sauce is veganism than the fix is relative easy; there are plenty of pretty good vegan fish sauces around. You can probably find them in an asian supermarket or else online.

@@click9914 I never thought of using mushrooms to make a substitute fish sauce. I have a jar of teriyake marinated portabellas, and the liquid in the jar would be perfect. I found them on eBay. Great idea.

Some may not have seen it before. I saw it years ago when Rachel Ray used it on her show. Personally, I prefer to cut each one with a serrated knife.
The lady in this video does not contribute at all with her little comments & grunts to the video - it is soooo annoying and does not add a thing to Dan's presentation.
In Thailand we never ever put ginger in our spicy salad, next time try lemongrass. Also, rice vinegar? We don't even use it in our cuisine that's from Japanese cuisine, we use white vinegar. You should call it an Asian-inspired spicy salad. Yes, they played it safe by calling it Thai 'inspired' but what's wrong with learning the right thing? All he did was putting a bunch of Asian ingredients in his crispy eggplant salad and call it Thai? He didn't even use Thai eggplant?!? Fish sauce, palm sugar, spicy salad, fried shallots, and cilantro are EVERYWHERE in South East Asia. Only his Thai chili and basil has anything to do with Thailand if that's the case then I could probably put Italian sausage in my Thai spicy salad and call it Italian-inspired spicy salad.

Why is this named making Thai eggplant salad and then use a Japanese eggplant? I was hoping to see Thai eggplant, which is what the title says. Thumbs down for this video.
Please try to cook without producing trash like zip lock bags, coffee filter etc. Lot of these can be done with minimal waste. You guys do a great job with taste, just being thoughtful is enough; it is not very hard.
What would you use to get the moisture out of the eggplant?
you could use a cotton kitchen towel if you so desire. wash them right after cooking.

You should bake the eggplant and not fry it in two cups of oil! Not healthy! I also bake shallots to crisp them and never fry them.
Eggplant is culinarily offensive. If all you are is a tasteless substrate to convey sauce, get out of my dish.
I love breaded fried eggplant, sauce or no sauce. I also love it in a ratatouille.
