    You can thickly slice galangal, freeze them, and later use a micro plane to grate them. They are very workable at that point. Personally I have no choice but to buy galangal is large qualities so I have to freeze the majority.

    For shoppers, look for galangal in the refrigerated section -- you won't find it in fresh produce sections unless you are at a highly specialty market. Same with lime leaves.

    Great episode! Thank you for helping us extend our Horizons. I love Tom yum. I assume you could change that to Tom Kah simply by adding some coconut milk? And I love the idea of making a big batch of crispy fried shallots. But how do you store them and how long will they last? And the same question for the frying oil. 😋

    I just watched this again tonight on Create TV. The soup recipe is too difficult for a home cook, and the ingredients are not easily obtained. One could just use the noodles, and make a nice broth, and use the mushrooms, scallions and cherry tomatoes. The pepper jam IS worth making. I make some with my serrano peppers. Dan's eggplant salad is a lot easier and very good.

    The soup - a very tasty...ingredient-and-step-ridden pain.
    Will save a step and mail order the galangal, lemon grass + lime leaves - and perhaps oyster mushrooms and thai chiles - if I make it again…(w/the shallot jelly now frozen in reserve)

    Didn't know people called galangal "Thai ginger". In Thai we call ginger "ขิง" and galangal "ข่า", so two different words. The concept of one being the Thai version of the other is very strange.

      Galangal is referred to as 'Thai ginger' or 'Siamese ginger' because it is in the ginger family. The best substitute for galangal is young ginger. Here in the Philippines I have to just substitute ginger because I have not found a source for galangal. 😎

      My mom was raised in Tachekawa. She is Caucasion, and is an amazing Japanese home cook.
      Ditto all 5 of her kids, including me. I am blond haired, blue eyed and have studied food culture/recipes/and the Native people of many Countries for over 40 years.
      Go figure.
      I agree with the other comments.
      Anyone can learn how to make fantastic dishes from around the World!

    Galangal is not "Thai ginger". That's like saying an orange and a grapefruit are basically the same thing.

      "Thai ginger" is just a name. Chili peppers have nothing to do with black pepper. Are they not peppers anymore now?
      There are so many examples of this: Asian pears, Chinese broccoli, etc.

      @@kylechalve Galangal has nothing in common with ginger except in appearance. Not sure what point you were trying to make with the pepper analogy, but I expect more from ATK. They should have at least acknowledged that you can't substitute one for another.

      @@triton6127 Chili peppers are named after black pepper. They're not related at all. "Thai ginger" is a name, like "Chinese broccoli" or "Saigon cinnamon". They didn't make it up.

      Yeah, it is lazy uploading - on the longer videos I always skip the first 60 seconds. If they are going to leave it all, they should add chapter marks (super easy on YT). That is why I prefer the edited, single recipe, videos.

    1. Recognize your condition:
    God's commandments prove that we have broken His law.

    2. Realize that the price/penalty of sin is death and hell.
    Romans 6:23, AV: "For the wages of sin is death..." Revelation 20:15, AV: "And whosoever was not found written in the book of life was cast into the lake of fire." Hell is a real place, where those who die without accepting The Lord Jesus Christ will go for all eternity.
    3. Realize that The Lord Jesus Christ paid your sin debt.
    Romans 5:6,8, AV: "For when we were yet without strength, in due time Christ died for the ungodly." "But God commendeth his love toward us, in that, while we were yet sinners, Christ died for us." The Lord Jesus Christ, the Son of God, suffered and died on the cross for your sins. John 3:16, AV: "For God so loved the world that he gave his only begotten Son, that whosoever believeth in him should not perish, but have everlasting life." The Lord Jesus Christ loves you. He wants you to be saved and live in Heaven with Him for all eternity.
    4. Receive The Lord Jesus Christ as your Saviour.
    John 1:12, AV: "But as many as received him, to them gave he power to become the sons of God, even to them that believe on his name." In faith, trust the Lord Jesus as your Saviour today. Acts 16:30-31, AV: "...Sirs, what must I do to be saved? And they said, Believe on the Lord Jesus Christ, and thou shalt be saved..." John 5:24, AV: "Verily, verily, I say unto you, He that heareth my word, and believeth on him that sent me, hath everlasting life, and shall not come into condemnation; but is passed from death unto life."
    Would you like to know for sure that Heaven will be your home?
    Do you admit that you are a sinner and deserve hell for your sins?
    Do you believe that The Lord Jesus Christ died to pay your sin debt?
    Will you repent and ask The Lord Jesus Christ to save you today, right now?
    Ephesians 2:8-9, AV: "For by grace are ye saved through faith; and that not of yourselves: it is the gift of God: Not of works, lest any man should boast."
    Romans 10:9,13, AV: "That if thou shalt confess with thy mouth the Lord Jesus, and shalt believe in thine heart that God hath raised him from the dead, thou shalt be saved." " For whosoever shall call upon the name of the Lord shall be saved."

Lively - Since you took it upon yourself to use this recipe video to instruct others in a different topic, I also shall instruct you - The Bible does indeed tell us about the 10 Commandments, which should all be kept, which would lead to peace among people. It also commands us to keep Yahweh's Holy Days, NOT the worldly "holidays". It also tells us to use the true name of the Messiah, Yahshua, for Salvation, not "jesus". Your last quoted verse sums that up - what IS that name? It is not LORD, it is YHWH.

      These are pretty close, slightly altered to make them better IMO. I hate lemongrass in my soup and always strain it. Do you have an "authentic" recipe to share?

      How does this negative comment help? It's called "America's Test Kitchen ". For most Americans who will never meet a person from Thailand much less go to southeast Asia, it is inspiring to see new foods explained.

      Well... it is America's Test Kitchen. They do Americanize the recipes, and ingredients. Sometimes they are way off, but these are close enough. It may not be what you get on the street in Chiang Mai, but it is pretty close to what you would get in a US Thai restaurant. 😎

Get off yr moral high horse and watch a different YT channel if you want purely authentic Thai cuisine. There are plenty of great ones out there.
