Fantastically simple! Funny how the skin is the key to the sauce, something most people want removed from their filets.

OMG... Other than crusty bread, boiled potatoes, or steamed grains, such as rice, quinoa, buckwheat groat, barley, etc., can soak up all the delicious juice to complete a full meal. Plus, the collagen in the fish skin is so good and important for the bones, joins, tendons, hair, skin, etc. of our health! Thank you, ATK!

This looks good for hot weather, but also for supper in homes where one eats breakfast-dinner-supper, and needs light fare.

I like the suggestion of using fresh grape tomatoes during winter. Interesting is the use of parsley stems which seems a standard recommendation on recipe sites from Italy( personally, I have doubts it is effective). I have seen other recipes with fish broth( home made and canned), and recipes that cook broth before adding fish. I like the use of wine. I think it is overkill with the thermometer , but that is American Test Kitchen being chemistry nerds! Nonna never had an instant thermometer . Julia should cut back on the bread, it looks like, but I still like her hair. Oh, again there is that pay wall of American Test Kitchen. I am sometimes tempted to subscribe but Google still has stories of difficulty cancelling.
