1:59 where she adds water, it's best to pour in hot or boiling water so the melted sugar won't be shocked and solidify

Arnibal: I boil 1 liter water, and pour 1/2 kg brown sugar, do not stir allow the sugar to melt, then add banana essence about 2tbs. This is easier!

Why melt the sugar first? Because you want to get the caramel taste of it rather than just a sweetened water from dissolving the sugar into boiled water. Just so everybody knows. 😉

It gives a different taste unlike just melting it in hot water give it a try

To prevent the sugar from hardening, don't add cold water but add hot or warm water instead.

Thank you btw for the recipe. Much appreciated. Will give it a go.

Why do you need to melt the brown sugar first? Does it make a huge difference if you’ll just dilute the sugar in water and let it boil? Thanks

    • @mysweetambitions

It brings out the molasses better this making the syrup taste better and the colour is even better

I think it's up to the person. Personally, I grew up with my lola using half an over ripe banana that she squishes until it becomes a liquidy paste and mixes into the syrup.
