    Salam Yousef Jan, your videos are the best. I live in the U.S. and have no family here..I so miss my mom’s cooking and have been learning to make Persian meals that comfort me when I miss my parents who passed away a few years ago… watching your videos not only teaches me how to make delicious meals…it soothes my soul…MERCI and God bless you and your family for all you do for us!!

    A simple blend of ingredients that creates the most magnificent flavour. I’m Pakistani but born in U.K. - I dated an Iranian girl before for 2 years, and tried all of her mom’s cooking. I fell in love with it, when we need a change from our spicy food - nothing beats Iranian food. Gheymeh and Fesenjoon are absolutely delightful.
    I enjoy cooking Pakistani food, so the Persian recipes are similar with less spice and they opt for low and slow rather than our usual high heat fast stir frying (like karahi) - but aside from that they have similarities.
    Iranian Khoresht’s are a great way to enjoy hearty and healthful foods with a few beautifully merged ingredients that are cooked on a low and slow simmer so they can marry together. It also focuses on tanginess, sourness and tartness which is what I have found most appealing about it.
    Khoresht Gheymeh is divine, and I personally recommend anybody from any culture to try it. Youseff cooks it magnificently.

    I had this at a restaurant and can now tell you this is my new favourite. Before i used to go for Chelov kabab kobideh but this comfortably knocks it off the top spot. I also love kachk b damjan and salad oliveh as sides.

    Thank you Yousef for showing how to make Persian food in English!! I was born in Iran and left there when I was 7 years old. My mom still makes Persian food but I never learned how to make it. Now, I am older and would like to make my own. So thank you for making this easy to follow along.

    Please, could you tell me whether fries like this were an import from the west or from France, in particular? This addition does seem a little bizarre to me, when the rest of the dish is so subtle and delicious. Nowadays, one finds fries everywhere. I live in Cyprus, where they are usually served with fish or kebabs but not with ‘wet food’.

      This has always been included in the dish as far as I know and not something that is new. Often they are made as small cubes and not long cut like fries. It does seem strange but it really adds to this dish. It probably was an import at some point, but not in recent times.

    Hi Yousef, this is brilliant. If I made it with beef, which cut would you recommend? And which cut of lamb did you use for the one you made?

      If you use beef, I usually use any type of bee you use for stew, or london broil. For lamb, I usually use leg

      At our house, more often than not, we make this with beef. But personally I prefer the lamb version (my wife does not, haha).
