- Southern Buttermilk Biscuits
3 cups all-purpose flour
3 3/4 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 Tablespoons sugar
3/4 cup COLD butter, cubed
1 1/4 cups buttermilk
Preheat oven to 400°.
In a large bowl, combine the flour, baking powder, baking soda, salt, and sugar. Cut in the very cold butter with two knives or a pastry blender until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not over mix.
Turn onto a lightly floured surface. Sprinkle a little flour on top of the dough. Pat into a rectangle that’s about an inch thick. Cut out biscuits and place on a parchment paper lined pan with the sides of biscuits almost touching.
Bake 15 to 18 minutes or just until tops are lightly golden. Makes approximately 11 to 12 biscuits.
I used to use all purpose flour, adding all those ingredients until I started making them with seld-rising flour, 1 stick of cold butter, cut up and 1.5 cups of buttermilk, and I make my own buttermilk also. 460° for 12-15 minutes. So easy. Thanks Tom! You're a good teacher!
MR. TOM a retired school teachers in our church. Where my late husband was choir director told this advice when cooking biscuits make more than you need.take the ones you don't need bake them in oven about 6 or7 min. Let cool and in a good freezer container whe need them take out and finish baking this was some the best advice I receive I'm 86 now and still do it was great having 4 children and a husband that loved biscuits. I really enjoy your videos.
Like your dad I like golden brown biscuits. Hate white half baked biscuits. My grandkids always say “Burn one for Granny Liz”. 😊
My great aunt Lily use to make an anatomically correct little man with left over dough. She was a hoot!
😂😂😂
My Grannie and all six of her children were left handed. Lol. Makes me homesick for my childhood. God has all of them now 😇
I never thought to use a box grater to shred the butter. What a great tip. Thank you Tom.
Childhood memory looking at your biscuits, mamas leftover biscuits. My sister would fight over them. Cut in half, butter both sides, and fry in a cast iron pan. I think a air fryer might work. Pour syrup of your choice over them. Wonderful breakfast.
Use the leftover dough formed w/ your hands into a ball…. Then press down. Smaller but just as good. A little taste w/ honey ., so good!
I agree with you! I’m a big fan of biscuits with honey!
That's what I was thinking. Where's the baby biscuit? Use all the dough that way.... Thanks for showing how to make changes on the fly(like when it was still too dry).
Great biscuits Tom!!!!!
Cut them in squares. No waste or re-forming the dough. Nothing says a biscuit has to be round! 😁
God gave us hands to use !!! Hands are God given tools Amen 🙌🏼🙌🏼
We agree - but clearly, not everyone does! Thank you so much for watching our video and reaching out with an encouraging comment. We really do appreciate it.
You take the last little bit of dough and hand from it into the chef's treat
Love these biscuits! I butter the tops right after they come out of the oven.
I also love seeing the different Tshirts you wear, places and sayings.
My grandmother showed me how to make biscuits. Her are her instructions. Get a bowl of flour and make a hole in the center of it. Add some lard and mix it together with your hands. When the lard is mixed in it gradually add some milk a little at a time and mix that in too with your hands. And when it looks right pat it out on the table and use a glass to cut into biscuits. Have a cookie sheet with some lard melted in it and when coat the biscuit on both sides with the grease and bake till they look done. Her stove was a wood burning stove and she never burnt anything as long as I have known her.
My mother-in-law is 94 and this is exactly how she makes biscuits. She can whip them out in no time and everyone loves them. I have tried with her watching me and mine never are as good as hers.
I'm sitting here, my mouth is drooling. I can almost taste them! Mmmmmm
YUM YUM YUM!!!!!! I don't buy canned biscuits anymore. One time, I didn't have buttermilk. Well, I used plain full fat greek yogurt thinned down to pouring consistency, like buttermilk. Best biscuits I ever made.
Good idea; it never crossed my mind to use plain Greek yogurt.
When we were you d kids our dad told us about moms first time making biscuits! He called them hockey pucks!! But over the years moms biscuits were great. So practice makes perfect.
Love how you explain things!
I want to cook like you when I grow up, I’m 76 yrs. Old😅
I love your videos. I have never tried to make biscuits before, but I look forward to it now.
Mmm... Gimmie all the biscuits and gravy! 🤣
Another lefties here!! I'm going to make these tomorrow!!
Biscuits and gravy yum yum. Have to have some tomorrow.
I'm born & raised in New York, but I think I inherited my love for southern foods from my daddy who was born & raised in North Carolina. I'm also ½ Italian, so i also love Italian cuisine, too. I can't say that I like all types of cuisine cause I don't, but i do like a lot.
I just started watching your channel. Everything I’ve made so far has been good. I make theses biscuits every morning and my husband loves them. Thank you
Ok there it is - I have no excuse now lol! Thank you for putting this one up! We've gotten where we don't like canned biscuits anymore - soooo glad to have this recipe!!!!
We hope you enjoy them. There’s a big difference between a homemade biscuit and a canned on. Thank you so much for watching.
I love biscuits. My cast iron biscuit pan takes them to another level
We use our cast iron to bake them in occasionally. Cast iron products are great additions to the kitchen!
I’m a lefty too. Lefties are always right, is what I’ve always heard. Love homemade buttermilk biscuits. You need to put a damp towel under the board so it will stay in place.
Good suggestion. We appreciate you watching our videos.
Thank YOU---LORD JESUS for Tom & Melissa!
I’m going to make these on Saturday with some homemade sausage gravy! Yummmm….
Now I know how to make biscuits. Thank you sir.
my aunt used to love drinking buttermilk....she used to churn the milk for her grandmother, and then go to school, and as she was coming home Granny had a glass for her to drink before going home, just something between her and her granny.
Love yr t shitrts wish had one from texas strong
Even honey would be a hit on these biscuits!!
Thank you for showing potential corrections, it’s very helpful. I’m less intomidated!
Please don't be intimidated! I know it's frustrating to try something and it not work out exactly like you hoped, but we always learn something in the process so we never consider it a loss! But I'm hopeful they will turn out to meet your expectations the very first time! Thanks for watching our channel!
I'm about a year late, but I found it! You made it look simple enough. I'm gonna try it! Thank you guys so much!❤
My mother always took those last scrapes and made a smaller biscuit. May not have looked as nice but it surely was good!
Beautiful!
I love the way you teach cooking skills. Thank you so much.
Yum yum. I can’t almost taste one.
I never knew about why you shouldn't twist the dough. You are a great teacher. I recently bought a bag of frozen biscuits. I think I will make my own and freeze them after they are gone.
You’re such a good teacher!
Thank you! I think his teaching skills really shine through when he's in the kitchen!
Tom,
Weather has a lot to do with whether or not my dough is sticky or perfect. I don't know what is, but the weather will mess me up, every time! Thanks, for your hard work. Love your videos, Melissa!
In South Africa - I’m in Johannesburg - we call these scones & have them with jam & cream, yum!! I thought you were making biscuits that my friend in Kansas says they have with gravy & a meal. Biscuits to us are cookies to you. Love your channel
How interesting
I do 3c of self rising flour, 1 stick of frozen butter, grate that into flour, work butter into flour, add 1 1/4c buttermilk
Very good video. Thank you for sharing. 🎉
Oh my yum yum. My fav!💜
I am intimidated as a self taught cook to make biscuits. I have made biscuits once or twice but will try now that you taught me . Thanks for your recipe . God Bless you both!
Oh so yummy thank you for sharing ❤
Hope you enjoy them. And thanks so much for watching our channel!
Look good. My husband likes his biscuits lightly browned too, but I like them a little more cooked. He was raised on canned biscuits and prefers them, while I love the homemade biscuits.
This Southern Buttermilk Biscuits recipe looks so delicious 😋 Mr. Tom.
I make awesome biscuits. After they cook, I brush melted butter on the top of them. I also bake blueberry biscuits. Mine are so light and fluffy. My husband and son loves them
I was watching this and my 3 year old..that absolutely loves biscuits, asked for these. I made them super quick and they are so amazingly good. My daughter normally picks breading out of biscuits and she is eating these like a sandwich. Thank you for sharing! This has changed our breakfast routine.
Your response had made us very happy! We love that your family enjoyed them!
What a great Mom!
I have a biscuit weakness...omg...they are just too good..I swear I should've been born southern...watching from n.y.
Biscuits look gorgeous.
My mom made this all the time. The little dough was lovingly called her baby buscuit. Thank you for bringing back those precious memories. ❤ Happy New Year to you and your family. Do you also have recipe for the blueberry jam?
Will be making me some biscuits 😋 looks so good ❤
Not much is better than homemade biscuits. Going to get my sweet husband to make these.
Everybody I know makes the little bit of dough left over into a baby biscuit. No waste!
I just love the way you teach and cook at the same time!! It really helps with the visual lol!! So many variations of making a biscuit.I’m definitely making these. Can I ask, what type of mixing bowls do you prefer? And does it make a difference? Thank you Tom and Melissa love you guys god bless 🙏❤️
Oh man‼️you made my mouth literally water , those looked so good❣️
Looks perfect!
Sir. You. Are. A. Good. Teacher. You. Don’t. Go. So. Fast. And. You. Don’t. Get. In. A. Hurry. That. Is. Good. We. Love. You’ll. Very. Much. God. Bless. ❤❤❤❤❤❤❤❤
Looks so so good
Awesome job
That little bit extra at the end I always say that’s the dogs biscuit and I put it on there anyway and they love my biscuits!
What part of West Virginia are you from? I’m originally from Illinois, but I’ve been in West Virginia for 30 years now and I call at home. We live down around Summersville.
You could HAVE made a baby biscuit with that small dough. Love homemade biscuits. Your a awesome teacher instructor for cooking/baking. THANKS for all THESE recipes.❤️❤️😁😊🖐️👌👍
Great teaching and video, and great-looking biscuits!❤❤
Thanks so much! 😊 We appreciate that you are watching.
I have always feared biscuits for some reason. I love biscuits and gravy. I will try yours and see if i do a better job.😅
Love homemade biscuits and love making them. Recipe looks delicious thank you for sharing.
You’re very welcome!
You can just make the last biscuit by shaping it with your hands so you don't waste any dough! Just put it all together and flatten it same as the others. Mama always made hers by hand----never had a biscuit cutter----and they were perfectly shaped! Of course, she made them every morning, so she had a lot of practice! The last biscuit would be her "little long biscuit," as she called it; she just made it the same thickness, but just a little longer than the others. All were delicious! I have continued the tradition. I don't make them every morning, but when I make them and have a little left over, I make the "little long biscuit" like Mama did!
What a lovely story of your mother. Thank you for sharing it with us. We really appreciate that you're watching our videos.
@@comesitatmytable9044So enjoyable!
By the way I'm from West Virginia too
Those look like what my grandmother called "cathead" biscuits. 😋
That’s a term we’ve heard here before! We hope you get a chance to make some soon!
OMG those biscuits looked soooo tasty!! Will definitely give them a try! Need to learn how to get them to ride like that! I tried a slightly different recipe yesterday, but they didn't rise like Tom's did. Will definitely give this a shot. Thanks for this recipe.
You are welcome. We sure hope you enjoy them. Thank ou so much for watching our channel.
Your biscuit recipe looks great!!.. Have you tried frying this... I like fried Biscuits with Honey Butter injected inside...
Sounds good
In England we call these Scones, I make buttermilk scones with jam and clotted cream, just delish.😊
We love scones, too! We enjoyed some fantastic pastries when we visited London last year. WOW! Such deliciousness! Thank you so much for watching our channel. We really appreciate it.
What is clotted cream? Is that what we Americans call cottage cheese? OR curds and whey?
Great job Tom and Melissa they turned out great . Sure would like your recipe and video of your Cat Head Biscuits. Can't seem to make it work for me yet. I can follow your instructions though and they work good. Fred.
I just watched this video .. in it you mention that you would love to be able to buy the pastry board w/a cloth cover. I was on Fleet Farm site and they have them. They also mention Amazon. I love watching your videos!!!!!!!
A damp dish rag or dish towel will keep your disk from sliding around on your counter top. Lovely kitchen, by the way! YUMMY looking biscuits, so much better than canned, and cheaper. Tom, you make and cook all your food with love!
I am binge watching your videos because I'm a new subscriber. I LOVE your channel and the way you instruct! You truly are a fantastic teacher! One thing I've noticed you saying is that you feel like your hand gets in the way because you're left handed. On the contrary! In my opinion it's much easier to see what you're doing than most right handed creators. Of course it helps when you have a cracker jack videographer😉♥️!! Thanks for being so real and sharing your family recipes. The memories are similar to mine so it's very appreciated 💞🙏🏼💞
T & M, I need a good recipe for biscuits! O gotta try this right quick! Doug❤️⭐⭐⭐
We also have a recipe using the Formula L biscuit mix. It makes a nice biscuit as well.
You abandoned the baby biscuit! lol. My dad was the same as yours. He'd drop his toast down 2 or 3 times & it was black! I liked mine barely browned as a kid. Now of course I like it crunchier but nothing like dad.
Those look so good. I miss my gas stove so much! & that jam looks amazing!
My Mom would shape that last little piece into a biscuit shape. Don't waste it. My Dad liked his toast burned. I do too. It gives it more flavor...Biscuits I don't want burned.
As I watched other videos, either pie dough or biscuits, the chefs use a plastic or metal bench scraper to help turn over the dough or fold it in half, maybe you could try this another time or two. Good luck 🍀, your vid are AWESOME 👍 God bless 🙏
God bless you sir
The type of day can affect the dough as well. The humidity can make you add or subtract the liquid in your dough
YUM!!!
❤❤
Pillsbury frozen biscuits are the closest you can get to homemade. My mother-in-law used lard instead of butter.
It's been a long time since I've made biscuits, but I may have to now.😋. Nothing is quite like homemade and my mom's were the best. The last piece of dough became the ugly biscuit at our house and it was my favorite.😂
FYI folks---you can put your butter in freezer -- then use a grater and grate your frozen butter -- grate mix grate mix---works well for me
Yum Yum
Can buscits so expensive we love you both happy holidays
I would love to know if these freeze well? And if so, how?
Ha! You just answered :)
Oh my word ......yummy! Now i need to make bisquits! Any recipe for yeast rolls you could do ?
I just looked on Amazon, Is this similar to the board that you have, “Bethany Housewares 20 Inch Pastry Board and Cloth Set”? I would love to have one, too! Everything you make, looks delicious! Thank you for all your recipes! Eventually will get to try all of it!
My Grandmother and Mother Taught Me Everything with Cooking and They Knew What They were doing!
Those biscuits looked very tasty. My only question is why not roll the leftover dough into a ball and flatten it out and bake it too? It would’ve been just as good and tasted the same.
YUM!😋♥️
If you cut them square with a floured knife, no leftover scraps
Yummmmmy❤❤❤❤❤❤
It's hard to beat a nice, warm biscuit. Thanks so much for watching our channel.
Hey Mr Tom…enjoying your videos….question….do you have a preference for APF brand and the butter..salted or non salt butter?…thanks
Mine is a Vienna sausage can.
That would work! Nice size for a biscuit. Thanks so much for watching our channel. Have a wonderful day!
