Zaynab never disappoints, just made this and it was amazing - didn't have noodles so added fresh peas and a potato instead. Next time I will cut the pieces of ginger a bit smaller to have a better distribution throughout the soup, added some cilantro I had laying around too. 10/10!

I LOVE her. She’s so different! She’s serious about her food, like you KNOW you can trust her. She’s meticulous and really puts a lot of thought into her recipes. I feel so validated when she dont peel the ginger and carrot. People always say that its a good practice to peel them, but they tend to look clean already that I dont see the hassle to do that (I do peel onion, garlic and potato tho)
It's a great basic recipe for anyone wanting to start making their own soup. I do think it would have been better to braise the chicken, skin side down in the pot first, remove it and throw it back in after the vegetables. Braising the chicken would have intensified the chicken flavor. When it comes to using ramen or chow mein noodles in a soup I always give them one minute in their own pot of boiling water and then transfer them over.
I would think so. it already has a southeast Asian kind of flavour profile so lemongrass seems like it would complement the aromatics already in the recipe

Agreed, I never peel mine either. The only things I peel are garlic and onions.
All of the nutrition in potato is contained in the skin. Don’t peel them either. Just give them a good wash.

What's the purpose of boiling them in a separate pot? Do the noodles release starch or something?
