Aromatic Chicken and Ginger Soup with Carla Lalli Music

- Ginger and spice and everything nice! No it's not a spiced pumpkin latte, it's a nourishing, warming, and delicious-smelling soup that will heal you if you're sick and fortify you for ongoing health regardless. The chicken poaches in the broth, which then becomes the base for the finished soup. It's silky with coconut milk and golden from turmeric, and you want it in your life.
This soup is flavored in part by
star anise and black pepper and
served with rice noodles, all of
which are commonly found in
Vietnamese pho recipes, along
with coconut milk and turmeric,
which are not. If you want to play
around with the aromatic base,
try browning the shallot, garlic,
ginger, turmeric, dried chiles, star
anise, and lemongrass in a little
bit of vegetable or coconut oil before adding water to
the stockpo. This will lend the
broth a sweeter, deeper taste and
dark golden color.

Carla going through the ingredients and i'm like "Oh, these are familiar. It's just like..." and then the popup mentions Pho and I had a good laugh in my chair. My local international grocery store has these "Pho kits" that has all those aromatics in a giant tea bag. It's super convenient.

I want to make this but quick question does the ginger make it too spicy? An does the coconut throw off the flavor?
This looks amazing, I can't wait to try it. My soup workaround if I want carbs but not noodles (I usually want noodles, but you know) is to throw white rice or chopped up potatoes in at the beginning and let them cook until they fall apart and disappear into the soup.

When I first saw the video the time was covering up the word 'soup', making it look like 'souf' - and I thought 'soufflé', so there is your challenge, to figure out how to make a chicken and ginger soufflé! The soup does sound great!

Looks delicious! I haven’t made it to this recipe in your book yet. Curious, if we do want to make this in the summer, any advice on converting the recipe for a slow or pressure cooker?
If you make a lot of whole chicken soups or stock based dishes, saving the picked carcass is THE move. I make Hainanese chicken rice or a soup a few times a month or so and making it with the extra carcas makes a massive difference.
Also recommend getting into making your own master stock!

i believe that one is 5.5 qts. A tall pot (like what you'd use for boiling pasta water) is also an excellent option-and that's what I used when I was working on this recipe originally

Is this seriously edible after only 35 minutes of simmering a whole bird? Other chicken soups I've seen using this technique call for a 75-90 minute simmer. Looks like an awesome soup, but I am VERY skeptical of that detail.
All of my recipes are tested and tested again, and I follow instructions to the letter when I make the videos. So, yes! The timing works. I think the key here is that the stock continues to simmer after the bird comes out, which intensifies the flavor. And the chicken goes back in to reheat. For a 3.5 to 4lb bird, this works as written and the meat is juicy 😜

I did simmer the bird longer since I hadn’t seen your comment yet, but it’s great to know I can save half an hour the next time I make this. FYI - I added a few prunes to sweeten and deepen the color of the stock even more. Loved it!
