For all fellow plantbased people: Just blend some cashews with lots of nutritional yeast + garlic powder and salt to subsitute the parm and voila, you got the equally delicious vegan version! :)

AND THIS LOOKS DELICIOUS. excited to bring home cooked pasta back into my life.

Spaghetti’s great because it’s easy to keep submerged as the sauce reduces. I find with other shapes like rotini or fusilli I have to fuss with it a bit more because the ends want to poke up. Love this roasted red pepper idea, esp. with the mushrooms, looks very earthy and rustic!
my dad used to have those same blue fish bowls!!!!! oh my goodness. he passed many years ago and I forgot all about those bowls-- what a nice surprise :)
Carla! on your note re: steam- i make your burst tomato chicken from TSSG at least 1x/week, and that recipe benefits so much from steam! It saves me at least 5-7 minutes of cook time on the tomatoes to cover with a lid without losing any deliciousness 🙂

But you can try a larger grocery store in your area that may have a wheel or pre-cut wedges available. In my neck of the woods, Giant and Weis would be where I'd check.
i would take a bullet for the "vegetable" better than boullion! its just roasted vegetables but it is life changing. its great for vegans and vegetarians that dont like the "meatyness" of mushrooms.

CARLA! 2 things: 1) the bold lip - yes ma'am... and 2) you know best, but personally, half the weirdly soothing/ASMR element to watching cooking shows is watching the chopping! I'm not kidding. I'm weird, but watching things get chopped is so relaxing & cool. So I for one would disagree that none of us out here "want to watch you chop" that onion & garlic! It also helps to watch people w/ good knife skills, since I'm always trying to get better. So, chop away, my sister! Just my 2 cents : )

I'm definitely a fan of al dente, so I would want to make sure phreshhh noodles wouldn't get mushy or even dissolve. No. You can just put it straight from the box into the pan, but then get it to a simmer/light boil before adding pasta, then bring temp down. Be sure to stir often because it tends to stick to the bottom and can burn.
I’m not a huge fan of roasted red peppers in some stuff so I have used sun-dried tomatoes instead or halved cherry tomatoes with pretty good success as substitutes :)

a l'assassin; has been around for a while. My issue is the sauce comes out very sticky and starchy rather than smooth and thick.
My husband is allergic to shitaakes and maybe that's why I don't like them, but I feel like porcinis would go really well with this instead.
