Healthy Multigrain Biscuits/ Cookies - No Maida, No Egg, No Refined Sugar | Gluten Free Cookies

  • 🍪✨ Get ready to indulge in some wholesome goodness with our homemade multigrain biscuits! 🌾 Gluten-free and packed with the goodness of oats, ragi, sorghum (jowar), and rajgira (amaranth) flour, these biscuits are both nutritious and delicious. Plus, they're incredibly easy to make with simple, pantry staples. The best part? You can customize them by swapping in your favorite grain or millet flours. Let's get baking!
    Ingredients:
    1/4 cup softened butter (or ghee)
    1/4 cup jaggery powder (or any other sweetener of your choice like coconut sugar/stevia/honey, maple syrup )
    1/2 cup oat flour ( To make oat flour, grind some oats in blender into a fine powder )
    1/2 cup finger millet (ragi)/ रागी flour
    1/2 cup amaranth (rajgira)/ राजगिरा flour
    1/2 cup sorghum (jowar)/ ज्वार flour
    1 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt
    2 tbsp flaxseed/ Alsi (अलसी)powder ( grind flaxseed in a blender into a fine powder )
    1 tsp vanilla extract/ essence
    1/3 cup water
    Instructions:
    In a medium-sized bowl, add softened butter and jaggery powder. Mix well using a whisker, hand blender, or spoon until nicely combined. Set aside.
    In another bowl, combine oat flour, finger millet flour, amaranth flour, sorghum flour, baking powder, baking soda, salt, and flaxseed powder. Mix well with a spoon.
    Add the butter and jaggery mixture to the dry ingredients along with vanilla extract. Mix everything together using your hands until well combined.
    Gradually add water to the mixture and continue mixing to form a dough.
    Divide the dough into equal portions and shape each portion into a cylindrical shape. Use a knife to cut the dough into equal-sized biscuits.
    Smooth out the edges of each biscuit and place them on a parchment paper-lined baking tray.
    Preheat the oven to 180°C (350°F) for 10-15 minutes.
    Bake the biscuits at 180°C (350°F) for 35-40 minutes or until golden brown.
    Once baked, remove the biscuits from the oven and let them cool completely before storing them in an airtight container.
