the added notes are called 'non chord tones' that play with the harmony. The hammer on's add rhythmic variations that play with the rhythm.
Are there specific non chord tone degrees that work particularly well for this?

So play simple folksy chords and make the melody within the chords. Don’t think he crated that style. It’s a bluegrass classic.
All the older players played like that.
