LENTIL BALL / LENTIL KÖFTE
Servings: 8-10
Difficulty: Medium
Cooking time: 30 dk
Prep time: 10 dk
2 cups red lentils
4 cups of water, 1 L
1 cup fine bulghur
2 onions, chopped
2 tablespoons tomato paste
2 tablespoons red pepper paste
1 bunch of spring onions, finely chopped
1 bunch of parsley, finely chopped
¾ cup olive oil, 2,82 oz or 80 g
1 tablespoon cumin powder
1 teaspoon black pepper
2 teaspoon salt, according to saltness of the pastes
Serving;
Lettuce leaves
Lemon slices
• Rinse the lentils, transfer them in a pot. Add the water and 1 pinch of salt, let them boil for 20-25 minutes on medium heat. Don’t forget to close the lid and mix time to time.
• When the lentils are all cooked and look like a thick soup, turn the heat off. Open the lid and wait for 5 minutes for the first heat to come out.
• Add the bulghur into the cooked lentils and mix, close the lid again wait for 10-15 minutes.
• While the bulghur absorbing water, pour 3 tablespoon of olive oil, onions and a pinch of salt in a pan on high heat. Sautee them until the onions get softer and a little caramelized. Add the tomato and pepper paste, cook them like 3-4 minutes and turn the heat off.
• When bulghur-lentil mixture and onion-pastes mixture get cooler, mix them in a tray. Add cumin, black pepper and salt and knead them until they all mix well. Add rest of the olive oil and knead again.
• Add spring onions and knead until their edgy taste gets lighter. Then add the parsley. Knead a bit more to all ingredients mixed well.
• For the traditional serving style grab lime size pieces, place inside your palm and squeeze gently to give the hand shape. To shape easier wet your hands time to time.
• You can also serve lentil köfte as a big ball, and let your guests take their own squeezes. Or you can make small balls and cover them with some sesame seeds, red pepper flakes, poppy seeds or parsley. In another option you can shallow fry your lentil köftes.
• Serve your lentil köfte which is the best vegan treat with lemon slices and some lettuce leaves. - Развлечения
I am Turkish and have been cooking for nearly 30 years. The mere reason I watch your recipes is to enjoy your sincerity. You are more than perfect as usual Refika. Lots of love.
Im Kurdish and I said exactly the same she is lovely ❤
I am Jamaica and i am same
I'm so grateful to you for making videos in English as well as Turkish; it's so much work - thank you!
I like her no show off style and not trying to be the perfect presenter. She's genuine
My wife is vegan im going to make this for her. thank you
That nice of you.
So sweet!
serve it with a little bacon, she'll love it!
@@Marcel_Audubon That's not funny.
@@tamcon72 calm thyself, fragile blossom
At last to see a cook clean the pot, bowl, measuring cup, getting all the ingredients, the goodness not wasted. Cheers to you!
As a meat lower, I can confirm that lentil köfte is freaking delicious. Don't hesitate to try it even if you are not a fan of vegan recipes. It's a food older than a few hunderts years old and it survived for a good reason.
I am not vegan/vegetarian also. I do, however, have a list of favorite vegan foods. All of them are from cultures that have a long vegan tradition. I won't touch most American vegan food but this is at the top of my list of vegan foods to try.
Ok, I found the pepper paste this morning, came home and made it. I think I have a new favorite food.
vegan recipes get a bad rep. probably because there are so many people who make TERRIBLE meat-free food. it's a d*mn travesty. and forget restaurants. you'd be lucky to find 1 out of 100 that are good. i was vegan for years BUT I COOK and i was flabbergasted that their doors were even open. trash food. (how do you mess up split pea soup?????? no flavor and it was THICK, like they had no concept what *soup* was. gross.) meanwhile, i've cooked for friends and they were surprised it was good and they didn't miss the meat.
i think people get too caught up in labeling foods. if it's good, it's good. plenty of traditional stuff didn't have meat. sometimes because of hardships (costs), or scarcity. and yet new, wonderful foods could be born! : )
Finally a DELICIOUS lentil recipe that is not curry. I just made a half portion. I may eat the whole bowl. ❤❤❤
Flattering…. Enjoy honey ♥️
OK, so my family is now obsessed with these! I made the traditional shape but also the 'cool' balls rolled in sesame, sumac and zaatar. Repeated 2 days later to take to a friends party where they were a huge hit. Many thanks 😍
You can do a children's cartoon Refika version with easy recipes and safety tips in several languages. That would be adorable. You could also include cartoon versions of your crew to teach about herbs, spices, vegetables, and some basic gardening. That would probably be a great idea and will get children more interested in real food.
What a good idea Would Assure continuity in developing future talented food lovers Thanks to a very special and unique chef

Oh, please consider it. My picky eater is influenced by such things and wants to try food from cartoons and games ❤🙏❤️
True 👍 lols I'm involving my kids with cooking 🍳 often 🎉 ofcourse sometimes they do wanna to cook sometimes they're not interested atole.
Wow.
I imagined now plating these lentil balls in quartered bell pepper boats. All colors, red, green, yellow. Real party for both taste buds and eyes.
Can you get good results even if you do it with an ice cream spoon-scoop? Worths trying i assume.
Love that idea
So much goodness from ONLY 2 CUPS of red lentils!! 😮wow!!
So delighted to learn that we will be able to enjoy your natural warmth instead of artificial intelligence. I very much doubt AI would come up with the phrase, "lentil sponge"! This technique is fascinating and seems endlessly modifiable. We are not vegan but we have vegan friends and we always like to have things to offer to them. We can't wait to prepare this for them!! Thanks to you and especially to your lovely team. Be well and stay safe!!
Hi from Tennessee USA. Looks absolutely delicious. Thanks for sharing your talent for cooking with us.
As someone who eats primarily plant based, I love how many vegan and vegetarian recipes you publish. I suspect I should be thanking Bahar’s influence! 💕
I always wait for your videos and watch them as soon as they are uploaded. You're such a beautiful spirit Refika❤ thank you for bringing Turkey closer to us through your wonderful cuisine, love from India!
Sweet Sulagna, what lovely words to hear from you! Thank you for watching us 😍
Thanks. I’m always grateful for your videos. I’m not a vegan, but most of my family members are pescatarian or vegan, so this recipe is very welcome. Do you have a video for making the red capsicum paste? Thanks again.
@Refika's Kitchen Fantastic enthusiasm and clean ingredients appreciated. Would it work to freeze the balls? How long can recipe be refrigerated?
I love this channel.... I am learning all my Babanna's recipes . She has been gone for 15 years, - watching your video's is like being with my Nurten Teyze in her kitchen watching her cook. Thank you.
Enjoy the taste of ages ♥️ thank you for watching us!
A Turkish friend taught me how to make this YEARS ago - and it has become a firm favourite! These patties make GREAT party food just on the lettuce leaves but rolling them into coated balls takes them to a whole new WOW level - so *THANK-YOU Refika!!* I've found the paste can happily be made the day before but leave the herbs to the day of serving. We have also used leftovers in burgers and wraps - versatile, delicious and healthy!! Next time though any leftovers will definitely get the 'fried patties' treatment. YUM!!
That looks yummy. I would love it if you came to America and open up a restaurant. We would welcome you and your crew and your family here with open arms and love and peace.. Thank you once again for sharing your recipe. Sending prayers and love to you and your crew and your family and to Turkey God bless ❤
İyi ki varsın Refikaaa
I just love you guys! Your joy. Your sweet character. Your warmth. Your love for your country and culture. Thank you for sharing. 💞
Hey Karen, thank you for your kind comments ♥️ WE LOVE YOU!
This is really delicious. I made it with just the oil for frying the onions, and didn't knead it as much as Refika did, and it was terrific, despite my laziness and the much lower fat content. Thanks so much for this fast and easy healthy recipe!
If you guys opened a restaurant in Denver, Colorado I would leave my “stay at home mom “ job to come work for you!!!
It feels pleasantly warm to know that we have you guys from somewhere in the world and we can share all the love we have ♥️ so strong!!
When she makes the little noise to express the bulgur soaking up the water I died. So adorable and memorable!
I was watching the Lebanese version and then I saw this video. Of course, the Turkish version takes it to the next level. My favorite!
Thank you again for this vegan video and so happy to hear you will be doing the videos it is much more personal and feel like you are right here with us. You and your crew are very amazing. Thank you and be safe!🐞🦬❤️🐢
Thank you for being with us dear 😍 lotsss of loveee!!!
My mum always made a red onion, tomato and sumac salad with even more chopped parsley, olive oil and lemon juice and its great dipping the köftes in this salad.
I am new to Turkish food. (I started dating a guy who's half Turkish, half Persian a year ago). The salad you mentioned sounds good. Could you give rough estimates of measurements for the salad? If you are like me, you never measure anything. LOL
😋
@@tessalynne6778 oh, how nice 💕 let me give you an estimate recipe, you can add salt, olive oil and even the sumac to taste, and if you're not vegan, this onion salad goes sooo well with meat köftes as well)
Onion Salad
1 medium onion (diced or strips)
1/2 cup (or a little less) finely chopped parsley
1 medium-sized diced tomato
1/2 tablespoon sumac
1 tablespoon olive oil
Add sumac into the onions and mix, add parsley, tomato and olive oil and mix, serve with lentil köftes.
@@ulqulqu thank you so much! Just one more question for clarity if you don't mind. Is the sumac you use the powdered stuff I can get at Middle Eastern stores? Just checking because I grew up with wild sumac trees and some people used the berries from them to make a drink similar to lemonade but I don't have access to that now.
@@tessalynne6778 nooo problem at all :) Indeed, I'm talking about the powdered sumac spice. Just add to taste, it should give a nice lemony flavor.
This is the only dish i can never say no, even i’m full. Oh god.. you can not imagine how delicious it is.
Beautiful recipe! Thank you. And you telling us the many ways of serving this in the end of the video was amazing ❤
Rafika, I just made this with Ulka the Great's onion salad and had an out of body experience. It was fantastic. Thank you so much.
Damn! I am making this today! Looks incredible! Thanks for the vegan recipes Rafika! Keep them coming ❤
I am not vegan but I really would like to try This.
You have so many amazing recipes. I have tried and repeated a huge amount of them already. There have been none that I didn't like.
🙈 what beautiful words! ♥️ thank you for watching us dear, food connects us… we are really wondering which ones have been your favourites so far?
as a carnivore, I can attest to these tasting amazing and very morish and filling. Putting in the air fryer is a new idea I will definitely give that a go.
I’m so pleased to find you and your channel. A fairly recent veggie (4 years or so) I’m looking for amazing flavour and here I am. Thank you!
Love your vegan recipes, Refika! Thank you.
Thanks
I just have to say this is the most delicious recipe. I have made this so many times, and even love it warm, makes my mouth water! keep the awesome recipes coming! Thank you!
As a vegan, English speaking living in Istanbul I really appreciate you bringing us Turkish cuisine with a twist that I can prepare and enjoy at home! Cos tesekkur ederim!
Yay, finally! Was waiting on your version of this dish for a while… thank you! And especially different ways to present at the end- will definitely make them
Just the recipe I wanted. I love all your recipes and you make them so easy to do. I am so sorry if last week my comments came across as arrogant being English speaker firstly, I can assure that was not my intention. Your English is amazing I don't know how you do it, you are so fluent. Your personality is the shining star as are all your wonderful team. I love you all. ❤❤❤❤ I have had Turkish tea and really enjoyed it. I maybe old but not past trying your wonderful recipes although I can no longer have much chilli. Bye for now beautiful girl and will see you next week ❤🙂💐
A day late watching this due to time management 😩( torturous for such a Refika fan) Your sincerity regarding your AI presentation was lovely and made me so relieved and happy🥰 Your presence is like tonic for the soul.
Thank-you for this video- yet another fantastic recipe- full of enthusiasm, team spirit and passion for your cuisine. Keep well and can’t wait for next Saturday‼️😁💃🏼
Fab! English people love this. However many times I made for them, it was always the first dish gone in seconds.
Yum yum! It's my favorite food and it's best when you squeeze A LOT OF LEMON on each of them!
A wonderful recipe you provided and demonstrated. Thanks👍
This must be delicious 😍 I imagine fried version would be even better!
There is a similar dish we make in India, with cumin, black pepper and ginger. We use the Mung lentils traditionally for this with lots of clarified butter instead of olive oil. Lentils and rice traditionally, but the healthier version I do is with Bulgur. Adding other spices and veggies are optional and are also regional variations. Personally I enjoyed this video! Good job Refika!
Thank you Refika's team❤
Another great recipe, thank you 😋
I highly recommend this recipe for anyone who may be hesitant to cook. I recently made it for my colleagues and they absolutely loved it.
Hey Cindy, it’s lovely to know that you made our recipe and everyone loved it 😍 i strongly recommend having a look at all the other recipes, we’re sure there are many to make you and your people happy 😘
I would love to try this but I can't use oil for health reasons.
Thank you for sharing this delicious recipe! I made it 2 weeks in a row. It's even better with some pomegranate molasses 😊
Love your AI-free channel, Refika! (And this lovely recipe.)
You must definitely try this one! ♥️
Beautiful recipe! I love naturally vegan dishes! Thank you for this recipe. God bless you, dear Refika. 🙏🏼
My grandma used to make a big pot of vosp (lentils) and then add wide noodles and broth to make soup one day, or add bulghur to make kufte another… such a wonderful memory. And lots of ideas to try, too-definitely going to be the vegan dish at our next party!
I love you with all my heart. Thank you for sharing your gifts. I’m so grateful to you. 🙏🏼♥️ Kelly
I made it today. OMG. We could not stop eating them. Thank You, for all your great recipes. I watch both, in Turkish and English. I looooove the Scenes of Istanbul. Gurbetlik zor. Keep up the Great Job!!
Thank you for another inspiring video and recipes! I love your energy, your love for food and for me this kind of a totally new approach to cooking! I saw a bunch of your videos til now and discovered lots of new things coming from a German cuisine to then cooking more Italian stuff and I love how you make my cooking horizon much more wider!
Through your videos I discovered cumin for marinade my meet and use just the juice of an onion (I normally would just use chopped onions for marinade) to tenderize it and it made SUCH a difference!!! I made a farmers stew today and with those little twits it tasted really like another level! Thank you sooo much!
I also commented the AI Video and thank you for dropping it and putting more effort in and re-do some videos for us non Turkish speakers so we can have the same energy from you, hear your passionate voice and get invested in re-cooking your inspiring recipes! Much love to you and your whole team! ❤
I completely love your vegan recipes
As a Turkish admirer of your works, this content has just made my day with one of my timeless and favourite recipes in Turkish kitchen, please try to share similar videos especially as International Turkish Cuisine Week is coming within this month, you are literally a cultural envoy for us to promote the abundance and variety of our gastronomy 🎉🙏
More vegan recipes please!
Thanks for the recipe. I used to eat something similar in a Lebanese restaurant, and I liked it with labneh and pita. I tried making up the recipe, and I used mashed potatoes in it and Harissa, but this sounds much better
Loved this recipe, perfect for summer!
I love all that greenery in your kitchen corner!
Super!
Will be making soon! ❤
Not only do your recipes make my mouth water, I love the tasting because seeing the look on your face when you really eat your food makes me want to eat it. You cook your food with love and that is to me the sign of a great chef. Thank you beautiful girl for your inspiration 💗

Who says you can’t teach an old dog new tricks! (I’m 75) My word! I’m mouth watering and definitely will try this and all the rest of your lentils works! By chance I stumble on this site. Oh yea! I’m in it🫶🏼👏🏼thanks so mucho. ❤

Love your vegan/vegetarian recipes! Thanks everyone!!
Looks great! Going to try it in the air fryer. Thanks for a great production as always, Refika and Team.
Tell us how it turns out ♥️a big thank you for watching and supporting us!
Thank you for putting out your videos in English! I love them! I was just telling my family about you and how much I appreciate you sharing your passion and your humor. There are so many channels that make you read the directions on the screen. They make me tired and I don’t follow them.
Sounds wonderful! I can’t wait to try it.
What a fantastic and easy recipe. I will be making this for sure!
We tried this recipe this weekend and love it! Thanks, Refika!
I live with a vegetarian, and I'm the house cook-

My kitchen has gotten way more interesting since suscribing
I love your sincerity. Your positive vibes. Continue the good work 🌺
I love this recipe.. i will definitely try this❤❤❤ thanks refika
Refika Love your recipes but most of all I like watching the excitement of the way you talk about your recipes - GOD BLESS YOU SISTER AMEN!
Mmmmmm as usual I wish I could step in and take a taste 😋 it sounds and looks so good. I'm sure it smells and tastes amazing! Another recipe to keep up my sleeve, I'm sure I'll give it a go over the summer if not soon.
It was great to have you back speaking directly to us. I so appreciate being able to understand you while still being able to hear your voice and the passion that's there for your food. I'm so glad you enjoy doing the videos in English for us too! Thank you so much. It would take me too long to learn enough Turkish to be able to watch and take in your videos this well. I do enjoy the language though and even watched a Turkish movie today (with subtitles of course) - it has a lovely sound.
I made your mütebbel recipe this week and oh it was so good! I never thought an aubergine dish could be as tasty even though I do like them.
Give each other a big hug from me! ❤
YOU MADE OUR DAY HONEY! 🥹 we love you ♥️
This looks awesome. Going to make it.
In you come to the United States, please move to Wisconsin!😄 I will help you open the restaurant. Thank you for the recipe.
