- Goan Mango Pickle 🥭 It is made specially during mango season and can be relished all round the year if stored under proper hygienic condition in a air tight container.

Ingredients
Mangoes. 6 each
Salt. 5 tbsp
mustard seeds. 1 1/2 tbsp
fenugreek seeds. 1 tsp
Kashmiri chillies. 20 each
byadgi chillies. 10 each
Sesame (til) oil
Hing (asafoetida)

Vinay,you can roast the mustard seeds first then when it splitters add the Fenugreek seeds.Stir a while and remove into plate.
The reason why I showed like this is, if you slightly over roast them it taste bitter .

Is it ok to use raw & semi ripe mangoes ...... Some pieces with and some without the mango skin? I need your advice please
Use Raw mangoes whole depending on size you cut some will have skin on doesn't matter .
Did u dry roast the red chillies before grinding into powder.
No don't dry roast, directly make the powder or use ready made chili powder

No. you have to add that water as shown

Quantity depend upon the mangoes and the container, you can use vegetable oil.

Process is good,but you have to keep Mango pieces for at least 3 days and you forgot to add roasted mustard seeds dear.without it pickle is incomplete .Take a note dear
Stuffed mango pickle you need to keep for three days this is instant Pickle and for mustard seeds you need to watch the video carefully.
What is the purpose of covering with heavy stone? And you are using plastic container to store the mango.
We keep weight on the mangoes so that they release it's own water and that helps the pickle to remain crunchy and also gives a better shelf life....I am not using plastic containers I have glass jars specifically to store my pickles.
I tride the recipe salt became more what should i do
Add more mangoes in it without keeping weight and after making the pickle store it in the refrigerator.

Byadagie chillie doesn't gives spiceness Guntur chillie is spicy
Guntur chillies are too spicy compared to byadgi chillies and byadgi chillies are spicier then Kashmiri chillies.
Nobody in goa use mustard oil for pickel .I doubt he is goan
Actually I used sesame (til) oil in this recipe, by mistake I said mustard oil but in the description box I mentioned it. Mustard oil is also very good for pickles but it is little bit expensive. Ani hanv Goankar ganvan Cuncolim cho😀

Where are you from? In Goa (India) they are available in all markets and yes this is our mango season.

I m from Punjab
June and July are our mango season
June is best for mango pickle
Coz June is dry season
Monsoon starts in July
Here in Punjab we use salt red chilli and salt in powder form
All masalaa use in raw and whole form 😀
