Seems like you do not use a constant current source for the led.... not the wisest choice. Furthermore, you shouldn´t use screw terminals with tinned wire, because the tin is "flowing" under pressure and you will have a bad connection after some time.
Using a potentiometer is not a poor design because it's wasting power through the voltage divider. On top of that, LED luminosity isn't linear, so you don't get a fine level of brightness control. You should be using PWM mapped to the ln function of the LED spec.
