    This is a great recipe with the Aji Amarillo. You definitely know your Peruvian cuisine. You can also add Aji Panca and get an excellent flavor.

      Peruvians don't use jalapeños. There are not jalapeños in Perú; those ají are from Mexico. But, taste good.

    Thank you for not "changing" the ingredients for the chicken. Yes.. Ají Amarillo and soy sauce is "key".
    If you "substitute" ingredients is just "broil chicken" but not "Peruvian".
    Note: peruvians do not use "jalapeños". Jalapeños are from Mexico.
    We use Ají Amarillo, Ají Rocoto, Ají Limo.

    You NEED to go to this Peruvian place called Pio Pio .. ugh it’s to die for, their chicken, green sauce and sangria are delicious ! Theres a whole bunch of them in the city 😁

    Spent a couple weeks in Peru... love Aji Amarilla sauce. I never had it before. I also love that cilantro mayo that is on almost every table. Show us how to make Aji de Gallina! That was my favorite.

    Add a little rosemary for a some richness to this great recipe. It really compliments it very well. You can grind them first if you don’t like the big pieces.

    Going to make this tomorrow. Just so happens I have some manzano peppers in the fridge in addition to the aji paste. Actually, come to think of it, I have frozen aji amarillo too. I might add a couple to the green sauce for a spicier version. Thanks!

    I made this recipe today and it was deliciously perfect! Very tasty and juicy. I marinated the chicken legs overnight for a richer flavor! I made the bourbon glazed ribs on Saturday also a successful recipe! This weekend was a Chef Zee at my house! I have also made your pernil as well.

    Hola, se ve muy bueno y seguro también rico, pero el pollo a la braza peruano tiene que ser en máquina giratoria y al carbón (rotisserie).
    En cuanto a la salsa seguro también debe estar buena, pero en Peru no usamos jalapeño eso es mejicano, el ají amarillo y el rocoto son los que usamos en Peru , entre otros ya que la variedad es muy grande.
    De todas maneras aunque no es exacto voy a hacer esta receta de pollo al horno para disfrutarla, gracias y saludos.

    I gotta tell you… I cheated and bought a Peruvian marinade. But i made your sauce. It’s amazing!!!!! I’ve tried a few different recipes and yours is the closest I’ve come to what I’ve tried at restaurants

    Hey Zee! I made it tonight! I opted for Aji Amarillo Sauce instead of paste which was what I found at Whole Foods. Other than that I followed the recipe to the T and it was so delicious! I’ve tried other Peruvian chicken recipes but they didn’t hit the spot like yours did. Y eso que I didn’t make the green sauce, I might have to next time and see if my taste buds explode 😂 Thank you!

      I live in Perth Amboy NJ and of course there is a big number of Peruvians and Dominicans. I’ve seen a lot of Peruvian products in Amazon.

    Learned about you from your interview on NPR. I made this recipe tonight for my family of 5 and it was a huge hit. Although marinated boneless chicken thighs and grilled them. The sauce was ridiculously good. My 3 kids had 3rds!

    No need for a substitution you can order it online. Delmont Imports it out of Miami and Peru food Imports out of Newark New Jersey. As a matter of fact it is the place to go when trying to make your favorite Peruvian meal. But definitely check if you have any Spanish grocery stores locally. Call them and see if they carry any Peruvian Foods and spices. Check the shelves and the freezer. I make my own aji amarillo from Peru Foods Frozen whole peppers. Make sure you wear gloves and face masks. LOL it is so worth it. Aji amarillo and Aji panca are such amazingly flavorful peppers. Cannot live without them. One other thing when making Pollo a La Brasa Peruvian chicken another must have with this meal is homemade french fries and french fried yuca. I buy Yuca fries frozen and they only take 3 minutes to fry. Dip those babies in the green sauce and you will be in heaven

    Thanks for the recipe Chef Zee! I made this today. It was very good. Only thing my chicken wasn't orange, it turned dark brown from the soy sauce. Made it on the grill.

    And I recommend a nice plump healthy free-range antibiotic-free whole chicken. You're going to love this so much I would go ahead and just do two whole chicken. You will have no regrets but you will actually think me. LOL I would use a little more cumin and fresh garlic paste. And I would either buy or order online the Peruvian food brand black mint paste and add about a tablespoon to your marinade

    I followed the recipe almost to 100 the same. Except for the cumin part. she says 1/2 tablespoon of cumin, that’s too much. I did 1/4 tablespoon and I still tasted it; next time I will use less cumin. When I tasted my marinade it was salty; but when we bit into the chicken it was bland. I left it for like 6 hours in the marinade. Next time I’ll leave it overnight and add lots of more salt and make some slits in the chicken so the flavor can seep in. All the flavor was on the skin and nothing inside the meat.
    My oven took like 1 hour and 15 minutes, not 45 like in her video. Overall, the Chicken tasted good and it looked like the Peruvian chicken but it was not the same as in Peruvian restaurants. Not sure what was missing; maybe the fact that I under salted may have affected this factor.
    The green sauce was wonderful. This saved our meal! 😂 It tasted just like the Peruvian restaurants’ sauce. I added 3/4 of one jalapeño. Two would be too spicy and overpowering. I also added half of the Aji sauce recommended and a bit more Mayo, because originally it was too liquidy; when I added more Mayo, it got a bit thicker.

    I think you shouldn’t use paprika for Peruvian dishes instead just ají panca . Also you should t use jalapeño instead rocoto . Every vegetal has different flavors . Thank you for sharing Peruvian dish 😊👍
