Nearly my recipe! My only suggestion is to add a a half lemon’s worth of juice to the top of the bird midway. Then put the other half inside the bird (and give it a bit of a squeeze). The lemon tenderizes the meat and adds a bit of flavor. Delicious!! 🍗

What you don't eat chicken but you do eat turkey, why? If your worried about chicken being over processed you should look into turkey farms (unless your eating Wild Turkeys that are hunted and cleaned at home). Just querulous.

I think your oven is identical to mine. Which means it has a convection option. If choosing the convect option, wouldn’t that eliminate the need to turn the pan?

The cycle continued for eons. So today in search of the perfect luncheon bird sandwich material for my hunting pack (One must have sustenance) I started looking around and settled on your method. Just got through taking the meat off the bone and I have to say, possibly the best we ever cooked here. We seasoned well with Tony Chacerony, salt and pepper. It was still the teensiest bit raw (cavity check) at 165 so we let it go to 175. El perfecto! Writing to say thanks 10 hundred times. Ya done great! UPVOTE and RECOMMEND! (PS... We went to the store for a rotisserie chicken today (lazy way out) but they're always an hour out, somehow. So we bought the chicken.)

I use my fried chickens for filling: parsley, garlic halved with peel, lemon zest and pressed juniper berries.
0:50 4 to 5 pound chicken Mine is just under 6 lbs 1:02 take chicken out of fridge 30 minutes before so it can come to room temp. 1:25 425 degrees preheat oven 1:38 start high then lower the temp 1:48 rack liower 1/3 of oven 1:57 pat chicken dry with paper towel. 2:26 kitchen twine 2:55 thin even layer of oil all over the bird 2:58 seasonings. Rub spices all over chicken. Roast 70 to 90 minutes depending on size of bird. 5 lbs took 85 minutes to cook 3:43 bast half way through 3:58 turn pan half way through bcs hot spots 4:12 temp in thickest part of the thigh. 165 deg F. Breast meat only needs to be 155 to 160 deg F. 4:49 let rest 15 minutes
I tried it and it came out perfect. My family and I enjoyed it very much. Now how long do I have to leave 8 chicken thighs skin off, using the same method.

Bought a pressed flat chicken seasoned with "Brazilian style" spices from the store. Roasted it and when I tasted it , I had to spit it out. It tasted like tobacco mixed with coffee and dirt. Now I bought some dishwasher poultry shears and I will make my own and season it the way I want.

I’ve heard that in New Zealand and Australia they brush the bird with Apple cider Vinegar midway to make the skin crispier with a delicious ZING .

The FDA recommends you don't wash your chicken to avoid cross-contamination in the kitchen.
