      I also season the cavity so the flavour is inside and out. Also, I place the chicken on top of a rack so the juices drip down to the pan and won't touch the bottom of the chicken. This makes the bottom not soggy and crisp up like the leg and breast part.

      There is nothing like a good roasted chicken and the simplest, the better. My favorite way to season my roasted chicken is with salt, pepper and dried garlic. Occasionally, I put wedges of onion inside the cavity or around the inside the roasting pan to flavor the juices; I use the broth to flavor my rice. Roasted whole chicken or chicken pieces make me happy. Thank you so much for sharing your recipe and techniques.

    Nearly my recipe!
    My only suggestion is to add a a half lemon’s worth of juice to the top of the bird midway.
    Then put the other half inside the bird (and give it a bit of a squeeze). The lemon tenderizes the meat and adds a bit of flavor.

    This looks like a great staple indeed.
    Chickens here are typically only 3 pounds, how would you adjust the cooking time for that?
    Looking forward to the broth recipe, mine always turns out cloudy white in stead of clear 🤦🏻‍♀

      Since this chicken was around 5 pounds and needed close to 90 minutes to cook, I'd say check your chicken at the 50-minute mark to see if it has reached 165°F yet.

    Off topic - you look great in a white turtleneck (how can anyone cook wearing white is beyond me, this is what huge pro’s do, I guess:)))
    PS this is how I usually roast my chicken ☺️ but I also put some salt inside the bird (not the seasoning, just salt), and a few wedges of lemon or a rosemary twig inside.
    Also, cannot wait to try the book recipe 🙏🏻☺️

    Once cooked cover with tin foil and a teatowel let it rest for 45 minutes to 1 hour trust me juiciest chicken ever.

      What you don't eat chicken but you do eat turkey, why? If your worried about chicken being over processed you should look into turkey farms (unless your eating Wild Turkeys that are hunted and cleaned at home). Just querulous.

    We just made this for our New Year’s Day brunch. It was fantastic! I like how you break down the recipe into simple steps. This was the most tender and juiciest chicken I’ve ever cooked! Even the white meat, which my family usually avoids, was super juicy! I also made a gravy from the drippings by adding a tablespoon of flour, a cup of chicken broth and simmering until thickened. Great dish!

      @@Downshiftology when I saw this I was like hey I am making her chicken thighs today lol-your recipes are always my go to and always use fresh ingredients then available and the best dishes are the easiest-this is off topic but I was laughing to my crazy self-I always use cut my own chicken if needed and last week at my local store I asked the butcher to cup up a whole chicken for me as I was just being lazy and he looked at me like I was crazy or he didn’t know how to cut up a whole chicken-one of the other butchers did-I just like was lol ok -thank you but really that was just a No,Maria bake it whole so,I did hope that makes sense-your cookbook is so beautiful inside and outside- on my kitchen counter

    I think your oven is identical to mine. Which means it has a convection option. If choosing the convect option, wouldn’t that eliminate the need to turn the pan?

    So, how could anyone NOT know how to roast a chicken? It's sort of like knowing how to boil water. Salt, pepper. No other seasonings needed. Not avocado oil. If it gets into a hot spot, between bird and pan, it will burn, despite its high smoking point. Burnt avocado oil smells awful!!!! Vegetable or olive oil are fine, vegetable oil leaving the least taste to the bird.

      It is under seasoned, but still a good guide for cooking and she does say seasoning is the part where you can get creative. I'm going to stuff mine with Lennon, garlic, and thyme, and I'm thinking about a jerk chicken rub on the outside.

      Besides the chicken juices, I also add some chicken broth, and some wine. The broth keeps the chicken from drying out and keeps it moist. I do the same thing when I cook a turkey.

    Please 🙏 tell me what temperature you set your oven at? Do you cook at a hotter temp for a time & then decrease for the remainder? Or cook consistently at one temperature? 😊

    I’ve heard that in New Zealand and Australia they brush the bird with Apple cider Vinegar midway to make the skin crispier with a delicious ZING .

    It is freshly cooked and comes without convenience from the supermarket. Therefore, a clear LIKE. I would definitely fill the belly of the chicken with herbs. This gives a very intense aroma. I use my fried chickens for filling: parsley, garlic halved with peel, lemon zest and pressed juniper berries.

    I don't understand what I did wrong ?! I was a bit reluctant for the 425F in first place (a very high temperature), but I though I would go with the recipe. And so, after some 15 minutes, the skin started sizzling, and the fat start jumping and spread all over the oven, causing a thick smoke. I had to turn everything off. Thanks for the answer.

    Bought a pressed flat chicken seasoned with "Brazilian style" spices from the store. Roasted it and when I tasted it , I had to spit it out. It tasted like tobacco mixed with coffee and dirt. Now I bought some dishwasher poultry shears and I will make my own and season it the way I want.

    I refuse to pay over $10 for a prepared rotisserie chicken from the grocery store. I make my own almost like this, but I use salt, pepper, onion and garlic to coat and line the cavity.

      The FDA recommends you don't wash your chicken to avoid cross-contamination in the kitchen.

    I know the point was simplicity, but I feel starting at a high temp, then lowering, basting every 20 min yields a little better results. And don’t be stingy on the seasoning, it’s the best part!

    I am 35 and have been cooking for over 18 years, cooked chicken hundreds of times in many forms, but have never roasted a whole chicken! I am going to try yours, as in my long experience its always best to master a base recipe and then add your touch from there :)

    Oh, and i so do not like roasted chicken from the market or from Costco, I don’t know what they do to them. They must brine them like crazy, because they are watery and so salty. Yuk! Your recipe looks great.
