What you don't eat chicken but you do eat turkey, why? If your worried about chicken being over processed you should look into turkey farms (unless your eating Wild Turkeys that are hunted and cleaned at home). Just querulous.
We just made this for our New Year’s Day brunch. It was fantastic! I like how you break down the recipe into simple steps. This was the most tender and juiciest chicken I’ve ever cooked! Even the white meat, which my family usually avoids, was super juicy! I also made a gravy from the drippings by adding a tablespoon of flour, a cup of chicken broth and simmering until thickened. Great dish!

So, how could anyone NOT know how to roast a chicken? It's sort of like knowing how to boil water. Salt, pepper. No other seasonings needed. Not avocado oil. If it gets into a hot spot, between bird and pan, it will burn, despite its high smoking point. Burnt avocado oil smells awful!!!! Vegetable or olive oil are fine, vegetable oil leaving the least taste to the bird.

It is freshly cooked and comes without convenience from the supermarket. Therefore, a clear LIKE. I would definitely fill the belly of the chicken with herbs. This gives a very intense aroma. I use my fried chickens for filling: parsley, garlic halved with peel, lemon zest and pressed juniper berries.

And so, after some 15 minutes, the skin started sizzling, and the fat start jumping and spread all over the oven, causing a thick smoke. I had to turn everything off. Thanks for the answer.
Bought a pressed flat chicken seasoned with "Brazilian style" spices from the store. Roasted it and when I tasted it , I had to spit it out. It tasted like tobacco mixed with coffee and dirt. Now I bought some dishwasher poultry shears and I will make my own and season it the way I want.
I refuse to pay over $10 for a prepared rotisserie chicken from the grocery store. I make my own almost like this, but I use salt, pepper, onion and garlic to coat and line the cavity.

The FDA recommends you don't wash your chicken to avoid cross-contamination in the kitchen.

Oh, and i so do not like roasted chicken from the market or from Costco, I don’t know what they do to them. They must brine them like crazy, because they are watery and so salty. Yuk! Your recipe looks great.
