    Escarole and beans is a traditional Italian peasant recipe. My recipe and the way I prepare my escarole and beans has been a tradition in our family for over one hundred years!

    My grandmother used to make similar dishes. I never paid much attention to how she cooked it. I'm so glad you posted this. I've already made it a couple of times and last night's came out absolutely delicious. I kept saying to my husband, How can something so simple, taste so good? I make other "peasant dishes" that seem to have made it to mainstream, like they discovered something new. When I was a kid, my friends would make fun of the foods we Italians ate, joke's on them now. I totally got a kick out of, "We're Italians, we don't measure." SO true. :)

    You’re absolutely right about Italians don’t time things, (or measure either). They go by sound, smell, and just experience. My Nana made this and so did my mom,, now I do, and I taught my daughter. It soooo good.

    OMG...I've never had scarole with pasta I've got it draining right now and came upon your video looking for something different. I'm making it this way now !!
    I usually just make it like soup. This time it's YOUR way. I grew up on this stuff. Love and respect from the Long Island Italian in Florida.

    What I like to do, and what my grandmother from the old country taught me a great trick for flavor is throw in a stick of pepperoni, chopped up into two pieces or more. What a great flavor it gives it.

      Me too! But I love pasta of any kind and pasta fagioli. What’s not to like?i always cook a whole # when I cook pasta and put the second half in the freezer. Easy enough to throw it in some hot water and add to the dish. Thanks for the idea. I bet the lady of the household or your friends love to let you cook!

    WOW this is the FIRST recipe I finally found that makes it the same as me. Adding the pasta, sheeze no one I clicked on was adding the pasta Im like hmmm you do know its missing pasta. I usually add ditalini but any small pasta is good. Ciao

    Loved your video, and I made it following your steps. I didn’t use as much garlic, a little less oil. One thing I added was a small amount of cut up ham steak, which I added to the sauté. My grandmother used to add the juices or soup from boiling a ham bone, which had a subtler flavor than the ham steak. Have you ever used ham or whatever toadd a little meat flavor?
    Well it was delicious! Mom used to get the leftovers and sauté them in olive oil. Then she would add pieces of crusty Italian bread, which would soak up the juices. This so-called “peasant” food is extremely healthy and scrumptious.

      Yes, like buy a little bit of pancetta and put it in the pan first and fry that and then do the rest. My ShopRite has pancetta over near the deli section in these sealed plastic packages. I asked the guy in the meat department for pancetta, and he didn’t know what I was talking about, then I found it over by the deli section.🇮🇹

    Nicely done, Vincent! Ever try it with a little chicken soup or stock? Another twist is with bacon or pancetta. Just add a fresh loaf of toasted Italian bread, done. Any which way, it's my favorite dish growing up as a kid, still love it today.

    I'm not Italian but I cooked just like you do. I use my senses and that's why it's difficult for me to teach people to cook. I used to give cooking lessons and I had to measure out all my recipes and then I put them in a cookbook as well and it was so tedious I wanted to scream!

    I'm not sure you used enough garlic....As if your accent didn't give it away, when you showed the bread I knew exactly where you were from! Making escarole and beans today but my crusty style bread will come from Panera since in SC we don't have Italian bakeries. Manja!!

    Like no one knows that. . . I guess a lot of people don’t know how to “properly” slice an onion. Seriously, I’m 100% Italian and I was so skeptical about you at first, (some people that never even heard of Scaloe. I know what it is and cook with it like my nana did. It’s so good for you. Anyway, just wanted to say you’re impressive. I wish my man would cook, let alone good Italian food. Sounds like you’re from NY. 💕

    first of all may I say your so cute and adorable and funny I make this dish too try it with Bacon I fry the bacon half way then I throw in my garlic then my beans one can water then my escarole iike my a little bit more on the soupy side! wold love to see more of your videos thank you for shareing

    I made sure the escarole was dry before sauteing it, by placing the washed leaves in a salad spinner.

    Giada did not say to clean Escarole. He is correct, it can be very dirty and you will ruin your soup. He's terrific, adds comedy to the drama of cooking Escarole.

    Thanks. Add a little stock to it and you have a delicious soup (I actually love the method you've proffered much better on it's own). I'm Italian-Sicilian-American.     Try using bacon grease instead I use a whole pound only cook it half way nerver chrispy then had your Beans and Garlic I never tried it with onions use a whole pound of bacon chopped up and I use chicken broth instead of water comes out soooo good
