    Ooh goodness, my mom made escarole and beans ALL THE TIME when we were growing up. I'm 60 years old now, all of my family is gone, but you just transported me back to a time that put a smile on my heart! Thank you for all you do and always bringing back such fabulous memories!! It would be an honor to cook with you one day... just like with my mom and grandmother! God bless you!! ❤❤

      I cook with Pasquale all the time... Whenever I make one of his recipes... I keep my laptop on the counter and I follow his instructions all along the way! I couldn't do this without "pause" and "rewind" =) ~ Maria

      @ Marian R , ma'am, i do not know you, but i'll be 57 in a couple of weeks & i read your post & i'm so sorry your family is gone, may God Bless you & comfort you. I'm glad you enjoy Pasquale's recipes as do I, & i'm an Irishman from rural Kentucky, i'm recently on a disability retirement( 22 scope surgeries in the last 11 years on my back , along with other health problems) , but shows like this help me get thru the day from not being bored, i'm guessing they do the same for you, God Bless you.

      Pasquale brings back so many good memories. I grew up the same as you, learning to cook /W/ my Mom & Aunt, my Mom sister & my godmother. Unfortunately my grandmother passed when I was 9 yrs old & didn't get the honor of learning to cook /W/ her. But I sure enjoyed learning to cook /W/ my Mom & Aunt. Now I enjoy so much watching Pasquale create dishes. Love Pasquale

    I bought a beautiful head of Escarole at my local farmers market. I thought it was a nice head of lettuce. It’s tough and kinda bitter.
    I just cooked this easy recipe and it is delicious! It tastes like something I’d get in an authentic Italian restaurant. Good thing I had the French bread and red wine on hand. 🍷Cin Cin!

    Pasquale, we try & make this in rural Kentucky, if we cannot get cannolini bean's we use great northern beans, if no escarole we use kale, & we use the the onions in the recipe, but we also cut whole sweet vidalia onions in wedges to eat on the side raw, very popular in rural Kentucky, we sometimes eat the sweet ones raw like fruit, lol., anyway, great recipe. btw, if we cannot get italian bread loaves, we use homemade cornbread with real butter, it is good.

    I was at the farmer’s stand today and reached for the escarole at the same time as another woman. Behind the covid masks, we locked eyes and she started talking to me. That’s how you find another Italian/American in the south. Lol.

    I make a cannellini bean soup which is white too. I think I would like your white version too. My soup has spinach in, but will try your version with escarole. Thanks for sharing.

    Escarole and beans with white sauce is the standard one we cooked at home. My grandparents always put fresh virgin olive oil on top with crusted bread ( they had a bakery do we always had fresh bread and sweets in the house). We also used some pancetta or guancale in the mix when frying onions and garlic for deep taste. I always love escarole and white beans...thanks for the recipe Pascuale!     You are the best! I made the red this morning (7am) and had it with a glass of red wine. As I tasted the soup I could hear my mother saying "Mangia da figlio mangia". My mother, like you, was born in the Puglia area of Italy (Cassamassima). Thank you so much for doing this!

    My mom made this all the time (she used red pepper flakes with the garlic and onions) and always added Parmesan cheese on top to individual bowls. Thanks for the great memories!

    Number one selling soup at my restaurant is: Sausage with escarole and beans. Really a popular dish where I’m from in Chicago. Love your show. One day I’ll come teach you how I make mine and you can teach me something else. Lol

    I grew up having this dish with the white sauce, but as I've grown older I've grown to like the red sauce more. But both are amazing! Italian comfort food in a bowl.

    Escarole and cannellini beans was a staple in our house growing up. My mom made this at least once a week. It’s such a healthy dish too. We used to dip rustic Italian bread into it. So delicious 😋

      but it was hard to tell.
      Anyway, just type in 'types of Italian breads' or something
      and many come up !

    My Mom always made escarole /W/ beans, same as you do, plain or /W/ sauce. Some times she served it over macaroni. Years ago we didn't eat meat on Fridays, so she'd made this /W/ the macaroni. Loved it ! I enjoy watching you make home cooked dishes. Reminds me when I was a little girl & helping my Mom. Love You Pasquale

    You're the best Pasquale!!!! I love you!!! I make both kinds-my mom was a Sicilian and the greatest cook in the world!(to us).....this was one of her most beloved dishes...I love both equally!!! But we loved pecorino Romano cheese on top. And it just isn't right to serve this without crusty bread. Divine, scratch made, and if people are vegans they can use vegetable stock for this.

    My kind of recipe, like Nonna made, thank you! The dried chilis, my Nonna grew those too. What I did, is I took leaves off, and scrubbed them each, under water. A big bowl to soak is good too. Salute!

    I have made this using swiss chard too. I always add some form of pork or chicken to this dish and definitely a bit of clove and nutmeg. I also never make a soup where I don't crumble in at least one leaf of dried sage. I wouldn't think a hint of white wine would hurt this either. Yummy! Thanks for the recipe.

    I made this tonight but with cabbage instead of escarole because you just can't find it in rural Ireland. It was hearty and delicious along with a few pork chops.

    This is my favorite dish of all times i cook mine with bacon i use a whole pound cut up and fried only half way then i put my Garlic in some of the bscon grease then add the beans back in then my escarole and water back in i

    I like the 2 versions. My mother’s pasta e fajiole was always white. But I see others make with tomatoes. I imagine good cooks use what they have.

    A wonderful recipe like all but may I suggest sautéing/sweating (uncovered and covered) the escarole in olive oil, garlic, salt, black pepper and red pepper flakes before adding some chicken stock. Then add the beans and more chicken stock. I find it intensifies the flavors and I use only one pot (12" sauté) and one spoon. Throw in a fresh, prepared hock, a loaf of bread and I'm in heaven. Just a suggestion.
