    Today we're making a classic Italian beans and greens soup. I used escarole, but you could easily sub spinach or kale if escarole proves too hard to find. I hope you enjoy this escarole and beans soup!

    Ingredients
    ¼ cup (54g) olive oil
    4 ounces (114g) pancetta - diced
    3 ribs celery - diced
    1 medium onion - diced
    3 cloves garlic - sliced
    2 medium Russet potatoes - peeled and cut into small cubes
    1 pound (454g) dried cannellini beans soaked overnight, or 3 16-ounce cans
    1 head escarole - washed and chopped
    6 cups low sodium chicken stock - plus more to thin as needed
    salt and pepper - to taste
    1 small Parmigiano Reggiano rind - optional
    ½ cup Parmigiano Reggiano for serving

    To James’s point, an option: if you remove the rendered, crisp pancetta at the beginning, you can then use an immersion blender on the potatoes/beans before you add the greens. Thus you’ll get the creaminess James wants without adding cream, then garnish each bowl with some of the reserved pancetta.

      You can keep some of the potatoes and beans separate or unblended for extra texture.

    Love this soup! Btw, quick fix-it tip. If you need to thicken soups or sauces to correct a mistake, sprinkle instant mashed potato flakes in and stir until you get desired consistency back. Just do it SLOWLY and wait a bit between additions, because it takes a bit to reach full thickness.

    I can't wait to make this one, thank you for the effort! I love the way you are with James, treat him like an adult instead of a kid. I agree with not putting as much salt in, I do the same, because you can always put more salt, but you can't take it out when it's too much for someone.

    I am insanely addicted to this channel! Awesome awesome cooking. I am Italian and really love seeing your generation continue the legacy of great Italian cooking at home. Kudos!!! Ps…if you want to prevent spillage from your measuring cup, hold it up above the pot by about 6 inches and then pour it. Pouring too close to the pot causes the measuring cup to pour from an angle that causes backflow.

    This is another one of those dishes that is so much more than the sum of its parts. James' idea of crunchy pancetta made me think of something that I make. It's focaccia, and I add some sun dried tomatoes, fennel seed, red pepper flakes, sauteed onions and garlic. I always make tons extra because it goes so fast, so I end up cutting some of it into cubes and putting it on a sheet pan in the oven on low until they're crunchy. It makes the best croutons ever and I think they might add the perfect crunch to this wonderful soup. Thanks for reminding me of this soup from my childhood!

    I love this soup! My mom made it often and I have memories of her soaking the escarole in the sink and then drying in a large colander, salad spinners are such a great invention, lol! Another thing she did with escarole was sauté it with olive oil, garlic salt and lots of hot red pepper. That was also soo yummy! She used to eat it on a nice crusty piece of bread. Love watching you cook the recipes I grew up with and putting your twist on them! I

    I love cooking with scarola. I think it's more widely available here in Italy during the winter and into Spring. It disappears in the Summer. I also use it as a fresh salad or at Easter cooked with fava beans and artichokes. I have never made this soup, but will definitely try it! Thanks for the inspiration!

    Love your videos! These are the recipes my Italian grandma, and my mama made, especially the white bean and escarole soup! Unfortunately I live on the west coast and I have to use kale and it’s not bad but there’s nothing like that beautiful tender escarole! 🙏👏💕🥰😍

    I’ve even used smoked Polish sausage before and that’s good, too - it has a lot of fat and smoky flavor. I like your idea of using celery and onions, which I’ve never used for beans and greens, so I think I’ll try that.

    I often blend up a can of canilenni beans and add to soups to make them creamy thus eliminating all or some cream.

    I have those same measuring cups and they always do that to me, too. I think it’s due to the well rounded lip of the rim. If the rim had a sharper, more defined edge to it, I don’t think it would do that.
    Great looking recipe. I’m definitely going to give it a try.

    I’m northern Italian and we used to use spicy sausage and fennel as well as beans and escarole and called minestrone bianca

    My local Italian restaurant makes an amazing beans and greens soup but there's no potato at all. But there so SO MUCH garlic and their broth is amazing. It really feels healing. Happy to try out this recipe.

    There's a soup just like this one from Spain and they use Mustard greens..It is amazing! Only difference, which is a super nice touch is they add like 1/2 t. of Smoked paprika. Gives it a nice touch. Instead of pancetta, they use Smoked ham hocks! Really enjoyed this video! Reminds me of that Spanish soup❤❤❤

    This us very similar to how I make my version of Zuppa Toscana, which started out as a copycat Olive Garden recipe that has evolved over the years.
    I use bacon and Italian sausage, some red pepper flakes, and kale instead of escarole. And I add about a cup of half and half to the pot.
    Zuppa Toscana doesn't usually have the beans, but mine does. They are a game changer.

    First time viewer; will def ck in again. The recipe is on my to-do list. Based on James' review, I think, I'll be using an immersion blender a bit and add a tad bit of half-half or heavy cream to the finished dish. Thanks for sharing; loved the interaction of you guys!

    What I really like about this kind of soup is that the olive oil and the bean starch eventually emulsify which is also an indicator that it's done cooking. Give it 20 years and I guarantee that James will rate it a 10! 🙂

      It's the Pyrex. I always have this problem too. I think something about the spout design. You have to pour really slow. Too slow for our satisfaction and patience.

      @@Cunnysmythe I have used Pyrex and have an Anchor Hocking and I don't seem to have a problem with the Anchor Hocking pour, but the glass on the Pyrex possibly seems nicer.

    This is very close to your prior recipe for Tuscan bean soup, but sub’ing sliced for roasted garlic and adding potatoes. I made the Tuscan recipe 2 nights ago and added kale per your advise and it looked almost identical to this new recipe. I think the roasted garlic adds a ton of flavor, so think I will stick with that version.

    You guys are so adorable.Could pare it with Brie or feta incrusted bread also and and a couple tablespoons of Greek yogurt maybe or buttermilk for creaminess maybe some white pepper as well.But the greens would of never thought of doing that , that’s a super good tip I’ll have to try very soon.

    A suggestion: Use a tall slim pitcher when pouring in the stock to prevent spillage.

    My family hates escarole so I make it with spinach. I prefer the escarole, but the spinach is a good replacement. Great recipe!

    Great recipe! To avoid spilling liquids while pouring try putting the back of a spoon against the spout while pouring. It directs the liquid better.
