I'm gonna add some roasted potato and probably roast 3/4 of the broccoli. Wife doesn't like soups so for her: more like a gravy over chicken thighs. This'll be the 7th recipe I've made from your channel. Thank you and keep em coming!!!!
I make a cheese soup, and top with the best vegetable, bacon. But, the best way to serve it is in hollowed out bread rolls lightly toasted in the oven. The soup soaks into the buns, and it’s all edible, absolutely delicious. I toast the bread I tear out as well to dip into the sauce. Just butter, flour, milk and chicken stock (recipe calls for grated pumpkin, nah) and add cheese of your choice at the end and blend it in using a spoon. once the roux is ready, add the liquid gradually as the soup thickens. Bring to a gentle boil, simmer for a while, while this is happening, fry up some bacon and use to top with cracked pepper and some chives go great as well. Cheddar cheese works perfect but add whatever cheese you want.
I have to tell you, between you and Billy Parisi, your recipes kick butt. You both explain what you are doing and why are both spot on regarding how you prepare your dishes, as well as the passion you both show. You do score extra points with me with your son. He likes so many different dishes that you offer him. Most kids his age have a certain "pickyness" to the foods in front of them. I like his participation in your videos!!

Yes! This soup rings all the taste, warmth, and even nutrition bells for me. I like that it can be made with or without the cream, cheese, or wine for people with diet sensitivity to those. I like to sometimes try cream in recipes but I find it is a bit heavy as I get older so I could make this without it, too. I am a big broccoli fan! And about your mom, good for you! Enjoy your mom because someday she might be gone, so take time now to engage in fun happy moments! (My mom is deceased so I sometimes miss her wisdom. She was 96 and her body was done. I did try to spend quality time with her but the last year especially was tough for her and for me.)

Can I just say....Perfection! I made this tonight, and it was delicious!! I added 5 slices of processed cheese to smooth out the consistency, but that was the only change. The wine, nutmeg, and roasted broccoli push it over the edge of greatness! We topped it with bacon pieces, sour cream, and shredded cheddar and dipped pull-apart garlic bread boule into the soup. YUMMY!!😋 Thank you for another family-friendly recipe!❤️
I’ve been making this soup forever! It’s always a favorite. Sometimes, I’ll make a version with potatoes in it. I guess it’s a cross between potato soup and broccoli soup, with cheese. Just for something different and more hearty. I’ve always kind of just used what I had. That’s the beauty of soups!

First let me say you are an inspiration, you can really see how genuine you are with your cooking and your family. I love how you aren't catering to the 'buy my blend' kind of cooking show. You are effectively teaching cooking! Heck I cut onions/celery differently now cause of you! My wife adores your channel, we actually had a 30 min convo on olive oils! lol I use Lucini for my finishing oils, especially for deviled eggs. Now we are planning trips to little Italy in Baltimore to see if we can find some of these 'better' ingredients you talk about! I'm jazzed about making your pizza dough and want some of the canned tomatoes you use for sauce! Lastly, we have tried several of your dishes and we would rate them 8 or higher, we used to think it was just your kid being nice to you, but now that we've tried a few, your son is spot on with his scores! I made this for dinner a while back and it was a hit! I used frozen broccoli instead of fresh and microwaved it before adding it to the soup and that was just fine. Same with the roasted bits- you can still make roasted broccoli with frozen broccoli, it just takes more time to get the water to evaporate. Absolutely fantastic recipe and pretty dang easy! I’ll definitely make it again. My only complaint is that I need to buy a bigger pot so I can make a double batch next time!

we made some last night and had it with fresh frence bread. the margarine is so the cheese will be soft . melting cheese add margarine so it does not reharden.
I might have steamed the non-baked broccoli the get some tenderness and to speed up the time; otherwise, the carrots and onions would be over-cooked by the time the soup was ready. Also, if you don't have an immersion blender, a potato masher is a great stand-in tool.
I love this soup. But it’s hard on my tummy. I love creamy soups. Cheesy potato bacon is my favorite. Chowders are good too. My Mom never made rues. She did a flour slurry at the end. Then added cheese. It was usually provolone or Romano. I do the slurry with cornstarch and a little butter at the end. I love the gloss it gives the plate. I’ve tried to make rues but it just tastes like flour to me. I am rue challenged I guess. Great recipe. Yummy. ❤
It's getting to the point where every time you release a video I end up making that recipe the next week because they are all so darn delicious! The lemon orzo chicken soup was a HUGE hit at our house by the way. we have that same stick blender, a Kitchenaide, my wife got it as a yearly seniority gift at her job. One year on a BIG number anniversary like 25 or 30 years we got a Kitchenaide "PROFESSIONAL SERIES" stand mixer a number 600 mixer....... talk about a nice seniority gift.

You might look into using Wondra flour. You can sprinkle it in without having to add a fat. It will dissolve quickly and thicken the gravy or soup. Just in case you needed to add extra thickening.
I just made this tonight. What a great soup! I’ve been really enjoying your videos but this is the first one I decided to make. I will be making this again in the future. It was delicious. I don’t have an immersion blender, so I used one of those ground beef mashers to break up the larger pieces. It wasn’t as much of a purée but was still amazing. I also added chicken to the soup to give it some extra protein. Thanks for sharing your recipes with us 😊

I usually make things Keto so no wine or flour. It came out delicious! I completely use the immersion blender then add more cooked broccoli and carrots for color and extra cheese. I found out you usually have to pre order the bread bowls at the market. I guess it depends on where you go I guess. My daughter hates broccoli but will eat this or cream of cauliflower. Win win!
Me and my wife had a friend who was pregnant. She had a craving for cheddar and broccoli soup. I made this for her and she was sooo happy! Fast forward to today and the baby is now 4 months old. She jokes about how she wants to get pregnant just so I make the soup again. I made the veggies and stock in a pressure cooker. The vegetables soften faster!

Love your channel. We tried the soup recipe but used a store brand vegetable stock (instead of chicken stock) because one of our soup eaters is a vegetarian. I think it made a difference in the final product, which was lacking in flavor. I ended up doubling the wine (an Italian Pinot Grigio) which seemed to enhance the cheese flavor and added 1/3 more cheese which seemed to balance the broccoli flavor. Now, my husband and I are looking forward to every bowl with a slice (or two) of artisan bread I baked. All said and done, if substitutions are made, don’t be afraid to make allowances in other applications. Keep up the good work!

Absolutely fantastic recipe and pretty dang easy! I’ll definitely make it again. My only complaint is that I need to buy a bigger pot so I can make a double batch next time!

Ha I made broccoli cauliflower cheese soup last weekend with French bread. It was also a big hit favorite for the family.

I was out of wine (I Know :( ) but I had some Guinness so I used some of that and I through in some ham, Amazing! we made some last night and had it with fresh frence bread. the margarine is so the cheese will be soft . melting cheese add margarine so it does not reharden.
I might have steamed the non-baked broccoli the get some tenderness and to speed up the time; otherwise, the carrots and onions would be over-cooked by the time the soup was ready.
Also, if you don't have an immersion blender, a potato masher is a great stand-in tool.
I love this soup. But it’s hard on my tummy. I love creamy soups. Cheesy potato bacon is my favorite. Chowders are good too. My Mom never made rues. She did a flour slurry at the end. Then added cheese. It was usually provolone or Romano. I do the slurry with cornstarch and a little butter at the end. I love the gloss it gives the plate. I’ve tried to make rues but it just tastes like flour to me. I am rue challenged I guess. Great recipe. Yummy. ❤
Jim I've made this with broccoli and also cauliflower and I prefer the cauliflower version. Both are excellent and easy.

It's getting to the point where every time you release a video I end up making that recipe the next week because they are all so darn delicious! The lemon orzo chicken soup was a HUGE hit at our house by the way. After this hurricane skedaddles out of here we're going to have a cool blast of weather this weekend so I'm definitely going to make this one on Sunday!

Broccoli cheddar soup is tied with chicken dumplings as my favorite soup but adding the roasted broccoli sounds sooo good such a good idea. i can't wait to make it. I've yet to see u make something that doesn't look amazing,thank u for sharing.

we have that same stick blender, a Kitchenaide, my wife got it as a yearly seniority gift at her job. One year on a BIG number anniversary like 25 or 30 years we got a Kitchenaide "PROFESSIONAL SERIES" stand mixer a number 600 mixer....... talk about a nice seniority gift.

You might look into using Wondra flour. You can sprinkle it in without having to add a fat. It will dissolve quickly and thicken the gravy or soup. Just in case you needed to add extra thickening.
I just made this tonight. What a great soup! I’ve been really enjoying your videos but this is the first one I decided to make. I will be making this again in the future. It was delicious. I don’t have an immersion blender, so I used one of those ground beef mashers to break up the larger pieces. It wasn’t as much of a purée but was still amazing. I also added chicken to the soup to give it some extra protein. Thanks for sharing your recipes with us 😊

I usually make things Keto so no wine or flour. It came out delicious! I completely use the immersion blender then add more cooked broccoli and carrots for color and extra cheese. I found out you usually have to pre order the bread bowls at the market. I guess it depends on where you go I guess. My daughter hates broccoli but will eat this or cream of cauliflower. Win win!
Me and my wife had a friend who was pregnant. She had a craving for cheddar and broccoli soup. I made this for her and she was sooo happy! Fast forward to today and the baby is now 4 months old.
She jokes about how she wants to get pregnant just so I make the soup again.
I made the veggies and stock in a pressure cooker. The vegetables soften faster!

Love your channel. We tried the soup recipe but used a store brand vegetable stock (instead of chicken stock) because one of our soup eaters is a vegetarian. I think it made a difference in the final product, which was lacking in flavor. I ended up doubling the wine (an Italian Pinot Grigio) which seemed to enhance the cheese flavor and added 1/3 more cheese which seemed to balance the broccoli flavor. Now, my husband and I are looking forward to every bowl with a slice (or two) of artisan bread I baked. All said and done, if substitutions are made, don’t be afraid to make allowances in other applications.
