Ingredients
2 lbs Chuck Roast cut into chunks. Use either Bone-In, or add Beef Bones.
1/2 White Onion Leave halved
4 Garlic Cloves Whole
10 Cups Water
1-2 Tbsp Salt, Have more on hand
2 Russet Potatoes Cut into chunks
3 Carrots Sliced into 3 in pieces
2 Zucchinis Sliced into 3 in pieces
1 Cup Green Beans Whole
1/2 Head of Cabbage Cut into quarters
2 Cobs of Corn Halved
Tortillas, Limes, Cilantro, and Hot Sauce for serving

I’ve been wanting to buy an instant pot and I just found one for a great deal! I love making caldo de res but it ALWAYS take me about 3-4 hours to make it on the stove and I am soooo excited to try the instant pot and get it done in so little time!!!

I followed your directions only change since I didn’t have a bone, I added Beef Flavor Bouillon, less salt and a whole cilantro bunch. Omg it was so good and my picky husband loved it. Thank you!

Though i made a mistake!
When I was adding the veggies etc, for 5 min...I tried to hurry the process by de-vaporizing the pot, and manually opening the lid, when the pressure almost blew off the lid causing me to get burned with the hot broth. But it was delicious anyway lol

For the zucchini, I would highly recommend using Mexican squash. It's near the Italian zucchini but it's a lighter shade of green and has sort of a rough texture. It tastes so much better in this type of dish 👍🏻👍🏻👍🏻👍🏻

This is the first recipe I made in my new Instapot😍. Came out perfect although the preheat was 23 minutes, then more than 15 minutes again after i added the vegetables😥.Is this similar preheat time you get?
I"m glad you enjoyed the recipe! Yes it can take a about 15 min to come to pressure. Make sure the seal inside the lid is pushed all the way down. and the valve is on sealing. Also if the beef is really cold or frozen, then it will take longer.
Short and sweet vid- GOOD STUFF but I'd use more garlic and at least a whole onion.
You can definitely add more garlic and onion based on your preference :)

How does it work when the liquid increases above the appropriate line once the veggies are added?
Hi Patricia, if the liquid goes past the Max line once the veggies are added, you will need to remove liquid until it goes under the line. Set it aside because you can mix the broth later once it's done cooking. Does that help?
Can we use the regular stove burners to do this caldo. And do we have to add a bone? The bone grosses me out. I am glad though that you do not use the beaf shank meat that most people on youtube use
Yes, you can cook it on the stove, the beef will need about an 1 -2 hours simmering until it's tender. Then add the vegetables for about 15 minutes or until they are soft (the potatoes will need the longest time to cook). The bone adds more flavor to the broth and has immune boosting properties. You can leave it out if you don't want it.
when do you add the potatoes to the instapot? At start tme of cooking or after 30 mins?

@@JuanSoto-jz2eh My perspective too! I asked my in laws who are from Guadalajara, and they said they always had it growing up.
@@ThaiCaliente I'm Central American and we call it Sopa de Res, and we add chayote and we like the more boney cuts of meat, but basically the same thing..... But at the end of the day, I'm with you, how cares where it came from because practically every culture has a hearty beef soup/ stew that is very similar to this.
