    Biryani Masala paste link: • Home-made Biryani Masala
    Prep Time: 30 mins
    Cook Time: 1 Hour 30 mins
    Servings: 8-9 persons
    Ingredients:
    Basmati Rice - 1 kg (Buy: amzn.to/2RD40bC)
    Ghee - 3 tbsp (Buy: amzn.to/2RBvKxw)
    Oil - 2 tbsp (Buy: amzn.to/2RGYvrw)
    Whole spices
    *Cinnamon (Buy: amzn.to/31893UW)
    *Cloves (Buy: amzn.to/36yD4ht)
    *Cardamom (Buy: amzn.to/2U5Xxrn)
    *Bay leaf (Buy: amzn.to/2Gz9D4r)
    Onion - 5 nos (thinly sliced)
    Tomato - 4 nos (chopped)
    Biryani Masala paste - 4 tbsp
    Coriander leaves - 1 bunch
    Mint leaves - 1 bunch
    Coconut Milk - 1 liter
    Salt to taste (Buy: amzn.to/2vg124l)
    To Marinate Chicken
    Chicken - 1 1/2 kg
    Chilli powder - 2 tsp (Buy: amzn.to/3b4yHyg)
    Turmeric powder - 1/2 tsp (Buy: amzn.to/2RC4fm4)
    Salt - 1 tsp (Buy: amzn.to/2vg124l)
    Home-made Biryani Masala Ingredients
    Red Chilli - 8 nos (Buy: amzn.to/37DAVT1)
    Coriander powder - 3 tsp (Buy: amzn.to/36nEgEq)
    A piece of Ginger
    Garlic - 15 cloves
    Shallots - 10 nos
    Green chilli - 3 nos
    Coriander leaves - 1 cup
    Mint leaves - 1 cup
    Water - 4 to 6 tsp
    (Note: The above measurements are for 1Kg of rice)
    Method for Biryani Masala:
    1. First Blend Red Chilli & Coriander powder.
    2. Then add Ginger, Garlic, Shallots, Green chilli & blend it.
    3. Now add 1 cup of Coriander leaves & blend it.
    (add a tea spoon of water if needed)
    4. Add 1 cup of Mint leaves & blend it.
    5. Finally add 4 to 6 tsp of Water & blend it to a paste consistency.
    Suggestion: Avoid refrigeration. Try make the masala paste fresh. Fresh masala will give a nice aroma and taste to your biryani.
    Marinating Chicken:
    1. Marinate the chicken by rubbing Turmeric powder, Chilli powder & Salt.
    2. Let it aside for 15 to 20 minutes.
    Soaking The Rice:
    1. Soak the Basmati Rice in water for 30 minutes & strain the water.
    2. Let it aside for another 30 minutes.
    This is the Pressure cooker Chicken Biryani recipe.
    1. Heat 3 large tbsp of Ghee & 2 tbsp of Oil.
    2. Add the whole spices. (Cinnamon, Cloves, Cardamom & Bay leaf)
    3. Add the sliced Onions & saute till it becomes brown.
    4. Add the finely chopped Tomatoes.
    5. Add the Biryani Masala paste & mix well.
    6. Now add the marinated Chicken pieces
    7. Add Coriander leaves & Mint leaves.
    8. Add Salt to taste
    9. Now add 1 litre diluted Coconut milk & mix.
    Note: Check for seasoning, add more salt if needed.
    10. Pressure cook it for 5 whistles.
    11. Wait till the pressure is gone
    12. Final step add the soaked Basmati rice to the chicken gravy & mix it gently.
    13. Close the lid & put the flame to medium-low.
    14. Wait till you see steam on the nozzle & then add the weight.
    15. Let it cook for about 10 minutes.
    Your Chicken Biryani is ready :)

    Hi Hema maam...today i made your chicken biriyani and it was awesome...my husband told me that he didnt feel that he was eating biriyani...he felt he was having some light food...even me too felt that the biriyani was light not heavy...no words to compliment the taste...thanks for such wonderful and easy recipe...the main highlight is that the biriyani is not heavy...digests soon...

    I love making this biryani. My family too loves it. I have a request, can you specify the no of cardamom, cloves , bay leaf and cinnamon you add? I find myself having to watch and quickly count the no of spices as the video plays!!

    Tried this. Best decision ever. One of the tastiest biriyani I have ever tasted. And it's so easy to make. It's important to stick to the ingredients in the quantity and the cooking time also exactly as per Hema's instructions.

    Hi Mam, was just wondering, the chicken we're using is broiler ones. Will it not be over cooked and fall apart from bones if kept for 5 whistles? Can I do this without pressure cooker? I don't have one. Please let me know the steps to do without cooker.Thank a lot!

      let the steam come out and then put the weight, cook for 10 mins, turn off the stove and leave the lid without opening for 10 mins :)

    can i make same thing in microwave....?
    if i mix all ingredients together with chicken, rice, masalas, onion, tomatoes in 1 go with double quantity of water as that of rice and cover it, steam in microwave for 20 minutes.... Will it work out...?

    You never said about the preparation of biriyani paste. Also, you fried the chicken very little, was it adequate!

      @@syamprakash522 I gave 2 whistles. and then the last 7 minutes i got 2 more whistels. i think 3 whistles should be enough. Anyways we are cooking the chicken first. So if its not cooked after 2 whistles you can give it one more whistle since we are adding rice in the end.

      Biryani Masala
      Ingredients
      Red Chilli - 8 nos
      Coriander powder - 3 tsp
      A piece of Ginger
      Garlic - 15 cloves
      Shallots - 10 nos
      Green chilli - 3 nos
      Coriander leaves - 1 cup
      Mint leaves - 1 cup
      Water - 4 to 6 tsp
      Note: The above measurements are for 1Kg of rice
      Method:
      1. First Blend Red Chilli & Coriander powder.
      2. Then add Ginger, Garlic, Shallots, Green chilli & blend it.
      3. Now add 1 cup of Coriander leaves & blend it.
      (add a tea spoon of water if needed)
      4. Add 1 cup of Mint leaves & blend it.
      5. Finally add 4 to 6 tsp of Water & blend it to a paste consistency.
      Suggestion: Avoid refrigeration. Try make the masala paste fresh. Fresh masala will give a nice aroma and taste to your biryani.

    I am sure your biryani is good but in my view, giving 5 whistles to chicken makes it a total mushy meat and I am not a big fan of mushy meat. At the least, 2 whistle should be fine so the rice can be cooked along with the meat to have the right consistency. Unless of course, you are cooking an organic chicken which is bit more tougher than the ones you easily get at the butchers. But overall, easy and quick method to cook biryani.

      the chicken we get here are a bit tough hence more whistles but you could do it your method works just fine :)

      Tough, that's strange. Even after 5 whistles and cooking again with rice didn't make the chicken mushy.

      I have cooked several times following this recipe and the chicken doesn't become mushy and I use the ordinary chicken sold in butcheries not the organic one and it comes out perfect
