I’ve been vegan for 16 years, and this is the most amazing lasagna recipe I’ve seen. I’m making this once the weather gets cool and it will be tolerable to have the oven on. Thank you for this recipe!
Im a vegan private chef and I am def going to try this.. Only thing I would add is a dollop of white miso or chic-pea miso to the blender when you were making the cauliflower cheese sauce. The umami in the miso is really tasty.
Miso works, it's just extra when trying to make this simple - and oddly enough they don't sell fresh miso in many grocers here in the U.K. which is a miss!
Question: Do you have a recommendation for a great stainless knife for the smallest female hands ever? Really fun to watch your knife skills! Also, that Mornay looks amazing.

I am Greek and I understand your desire to find the traditional taste in your plant-based recipes. We recently moved to the Netherlands and most of our friends are vegetarians. At the same time they want to taste Greek food. This was a challenge for me. Last New Year's eve they asked for a “pastitsio” (like yours “Lasagna”) So I made a Bolognese with lentils (half green lentils, half whole red lentils soaked overnight). My husband couldn’t believe it was plant based. I ‘ll try it and I will send you my comments As I first discovered your channel 2 months ago, with your Butternut Squash recipe, I didn’t know about your Béchamel with cauliflower. i really appreciate your creativity, keep in the videos we have to learn a lot.

A lifetime ago I worked in the kitchen of a Whole Foods Market before it was Amazon, before it was Whole Foods; it was small home-town stores; the one I was employed at was called Wellsprings. People used to call in on a landline telephone and we would stop cooking to help them. Upon penalty of death no-one ever was to give out a recipe to anyone. They were handwritten on index cards. We used to joke if they ever wrote a cookbook it would sell out. Thanks for your genius in the kitchen; you've become my new favorite cooking channel!
Made this recipe for Christmas. I think I have this video memorized by now. I used one large lasagna pan instead of two. It's in the oven now. Fingers crossed!

Adding nuts makes it pasty when cooled, without them is less expensive and helps keep the viscosity more pliable hot or cool. Plus nuts are an allergy for some. Thanks for watching!

hmm I love cauli! It may come to you, but don't fret if it doesn't. People keep trying to get me to eat avocado and I can't stand it! and I think at the age of 65 that is unlikely to change
@@helenswan705 I actually just prepared and ate brussel sprouts for the first time since being traumatised by them as a child (and I'm 54) so I still will definitely give cauliflower another go soon 🙂 The sprouts were incredible...I just needed to find the best way to cook them (roasting!) and the right flavours to go with them. So happy I've added another yummy veg to my list
@@Paula-wn6do I recommend being very careful not to overcook it. I like to top the sauce-covered cauli with a mix of breadcrumbs, herbs, ground almond and grated cheese (I am not vegan)
I make a lasagna that instead of bechamel, use a cauliflower+tofu(+chickpea) cheese. The fennel is key, and gives a taste of Italian sausage. We also use a little rosemary. In addition to the greens, we have a layer of sauteed mushrooms. Well try the layer of julienned onions on the bottom. And the roasted pepper in the sauce. That sounds delicious. And the lentil layer. Thank you.

Been vegetarian since early 70s and vegan about 10 years, I watch your show for inspiration and relaxation:) Back in the day no yoghurt even in stores, made our own in a thermos, no tofu, but beans and legumes and lots of protein throughout veg world according to brother in law cellular physicist back when we are accosted with child abuse etc...my children are all very grown all athletes and highly educated, I still am highly active and beyond healthy. do filter my water, living in middle east.

I have admired your recipes before and your expertise, care and mindfulness but as a petite 60 year old woman, I can’t eat that rich or I have to keep buying a new pant size every 6 months! I love going back to watch your older videos which I haven't seen when I have the time to spare. But this one blew my mind! There's so many recipes which can be made out of this one recipe! Just off the top of my head you could make lasagne (obviously), bolognese sauce, a carbonara base, cheesy mac, potato bake, cauliflower bake, and on and on. Seriously, thank you for your videos. I've been vegan for around 15 years now and love cooking, but until I came across your channel I was starting to feel a bit stale with cooking and being very reliant on easy options such as plant based mince. If I get nothing else from your videos it's to just have fun with it. But I do get so much more than that, believe me! I think the next time I cook a pasta sauce I'll leave the plant based mince in the freezer and the wine in the bottle and start with the lentil sauce you've got here. I'm sure it'll be great and no doubt I'd I make it again I'll add a dash of wine as usual, but I'm keen to just try what you've done as a starting point. Anyway, thank you again!!

Yay! I passed this video several times because I did not think it would be gluten-free. So glad it is. I am a day after girl as well. When I bring lasagna to people, I always make it early in the morning or the day before so they have to reheat it because it’s always best then.

I've been a professional cook and baker for a big part of my adult life. Your recipes - and this one especially, tick off so many boxes for me; interesting, creative, veg forward and, as I can see from the methods and the ingredients, delicious. I can't wait to make a batch of this lasagna. Will make a great dish for throughout the week for my family and me. Been vegetarian since early 70s and vegan about 10 years, I watch your show for inspiration and relaxation:) Back in the day no yoghurt even in stores, made our own in a thermos, no tofu, but beans and legumes and lots of protein throughout veg world according to brother in law cellular physicist back when we are accosted with child abuse etc...my children are all very grown all athletes and highly educated, I still am highly active and beyond healthy. do filter my water, living in middle east.

I have admired your recipes before and your expertise, care and mindfulness but as a petite 60 year old woman, I can’t eat that rich or I have to keep buying a new pant size every 6 months! So this one will be a good one to try! Excited about that WFPB bechamel! 🤯 And the tip about slicing onions to caramelize on the bottom of the pan. 👌

But this one blew my mind!
There's so many recipes which can be made out of this one recipe!
Just off the top of my head you could make lasagne (obviously), bolognese sauce, a carbonara base, cheesy mac, potato bake, cauliflower bake, and on and on.
Seriously, thank you for your videos. I've been vegan for around 15 years now and love cooking, but until I came across your channel I was starting to feel a bit stale with cooking and being very reliant on easy options such as plant based mince.
If I get nothing else from your videos it's to just have fun with it.
But I do get so much more than that, believe me!
I think the next time I cook a pasta sauce I'll leave the plant based mince in the freezer and the wine in the bottle and start with the lentil sauce you've got here. I'm sure it'll be great and no doubt I'd I make it again I'll add a dash of wine as usual, but I'm keen to just try what you've done as a starting point.
Anyway, thank you again!!

Yay! I passed this video several times because I did not think it would be gluten-free. So glad it is. I am a day after girl as well. When I bring lasagna to people, I always make it early in the morning or the day before so they have to reheat it because it’s always best then.
