@@curvenut wrong way around if you do it at home without a big burner like his!!! Boil it first and then rinse in cold water to separate the noodles and let it drain properly!! 😉
I eat this from place next door to where I live. This looks exactly the same except they put some strips of pork in theirs. You made it look really simple to make. I cook a lot of Chinese food myself and now I know I can also make this. Thanks for sharing :-)

Uncle does good cooking demo, the recipe itself is very flexible, I can replace and add additional vegetables and different meats. I can also use egg noodles and it still taste great

I absolutely love Singapore Mei Fun. Unfortunately, my favorite go-to Chinese restaurant was recently shut down when a real estate developer bought the block and razed everything on it. Since then I have been struggling (with no success) to find a restaurant that makes a decent facsimile. What I have found are inedible due to some strange ingredient, presumably the curry powder they use. Whereas the curry powder used in my favorite version is clearly a hot madras curry powder, full of flavor and heat, the curry powder (again I assume it's the ingredient which offends) renders a permeating scent that falls somewhere in between decorative floral hand soaps and industrial detergent. The first time I experienced it I thought that maybe the restaurant (a new one I was trying for the first/last time) had screwed up, used a soapy container or something. But then it experienced the exact same nauseating floral soapiness from no fewer than three other restaurants. Do you have any idea what ingredient could be attributed to this bizarre flavor and odor? All of the other ingredients are standard, no rose petals or anything different that I can see. Just soapy grossness. Needless to say, I have given up on ordering Singapore noodles from any new restaurant. Hoping my favorite place is able to find a new location and reopen. In the meantime, I am glad to have found this recipe (as well as all of the other amazing recipes you've posted) and intend to attempt to produce this at home. Love your site and eagerly anticipate new recipes as you post them!
If you're ever in Minnesota, try a place called Satay 2 Go. Tiny little restaurant run by a former street chef. Menu consists of various dishes from all across east asia. Consistently the best plate of Singapore Noodles I've ever had, by a wide margin. If they ever closed up I'd probably cry myself to sleep.

Buy pre cut veg or frozen veg it helps save time. I usually cut my veg and keep in box in the fridge then just use it when I need

You might have overcooked your noodles. It usually only takes 30 seconds to soften the noodles in hot water.
