I let the noodles sit in boiling or hot water until the right consistency and then drain well. No need to do anything else to the noodles. You continue with recipe to cook the noodles. Enjoy!

You will need to follow the package directions. Each brand/type is different. We’ve made the mistake of assuming they are all similar and ended up with a soggy mess.

Hi! I can’t post pictures of the noodle package but I used Maifun thin rice noodles. However you can use any brand of rice noodles. I do find the thin noodles to be best. Good luck!

You should always add the onion after carrot and pepper or harder vegetables like that so the onion won't burn by the time the harder veggies cook. Garlic at the very end.
Tip.....put the noodles into the pot of hot water. Then you don't have to worry about burning yourself pouring the water into the bowl. And 1 less thing to have to wash when done cooking.
Funny I’ve watch 20 videos on making this dish and the type of oil used, no cooks ever say? I asked a very good Asian restaurant in my area and they said peanut oil . Trust me the wrong oil during frying changes the flavor. Also I pre scrambling the eggs.

Please don't use a metal spatula on a Teflon coated non-stick pan. Metal can scratch or chip the coating and if that happens, you'll definitely need to replace the pan rather than continue using it. Instead, opt for a wooden spoon or silicone spatula.
I was actually born in Korea. And I would say I have a good combination of my Korean heritage and American culture. I love being both! As far as the recipes… I primarily share Korean recipes that I learned from my mom growing up but also love all cuisines and share some of those dishes/recipes as well. After boiling the water, why dump the water into the bowl? Why not just dump the noodles into the pot? Same result. Won't spill the boiling water.

To strain the noodles, I use a salad spinner. Give em a spin.
