    As a Singaporean this is neither Singaporean nor does it exists in Singapore. It should be rightfully called Hong Kong noodles as she mentioned in the start. love from Singapore

    What’s a good substitute for Chinese cooking wine and fish sauce please

      Hi there! You can substitute Chinese cooking wine with sherry.
      For the fish sauce, there really isn’t a substitute. I would suggest you just not add it.

      @@janeshome4843 I can’t use alcohol at all. It’s against my religion, and I guess I can go to the grocery story right now and buy some fish sauce.

    Should the noodles be immersed in cold or ice water after cooking to stop the cooking action?

      Hi there! First of all, thank you so much for watching the video!
      As far as your question, I don’t immerse the noodles in water. I let the noodles sit in boiling or hot water until the right consistency and then drain well. No need to do anything else to the noodles. You continue with recipe to cook the noodles. Enjoy!

    Thank you Jane for the excellent video! This is one of my Go-To Dish at my local Chinese Cafe. Always order this delicious dish with the beef stir-fry and house-fried rice 😋 I'll give it a whirl and try your recipe, especially the dry chilis. I love spicy food!     Also, when mixing and tossing the noodles with the vegetables, it's better to toss with copsticks instead of using the wooden spatulas.

      You will need to follow the package directions. Each brand/type is different. We’ve made the mistake of assuming they are all similar and ended up with a soggy mess.

      Hi there! I soak the noodles in hot water and follow the instructions for the time, on the packages as each one is different. I like my noodles slightly chewy so I don’t leave them in too long.

      Hi! I can’t post pictures of the noodle package but I used Maifun thin rice noodles. However you can use any brand of rice noodles. I do find the thin noodles to be best. Good luck!

    After boiling the water, why dump the water into the bowl? Why not just dump the noodles into the pot? Same result. Won't spill the boiling water.

    For sugar snap peas how do you trim and cut them to prepare them?

      Yes. I wash and rinse them and slice in half, lengthwise. The smaller ones I leave alone .

    You should always add the onion after carrot and pepper or harder vegetables like that so the onion won't burn by the time the harder veggies cook. Garlic at the very end.

    Tip.....put the noodles into the pot of hot water. Then you don't have to worry about burning yourself pouring the water into the bowl. And 1 less thing to have to wash when done cooking.

    To strain the noodles, I use a salad spinner. Give em a spin.

    Funny I’ve watch 20 videos on making this dish and the type of oil used, no cooks ever say? I asked a very good Asian restaurant in my area and they said peanut oil . Trust me the wrong oil during frying changes the flavor. Also I pre scrambling the eggs.

      I’ll make sure to include the types of oil I use in my future videos.
      FYI, I sometimes use peanut oil for this dish. But if I don’t have it, I’ve found vegetable oil works for as well. I also pre scramble the eggs sometimes as well.

    Please don't use a metal spatula on a Teflon coated non-stick pan. Metal can scratch or chip the coating and if that happens, you'll definitely need to replace the pan rather than continue using it. Instead, opt for a wooden spoon or silicone spatula.

      I was actually born in Korea. And I would say I have a good combination of my Korean heritage and American culture. I love being both!
      As far as the recipes… I primarily share Korean recipes that I learned from my mom growing up but also love all cuisines and share some of those dishes/recipes as well.
      I’m sure your mom has amazing dishes and you are lucky you can learn from her.
