That brownie just sounds gorgeous, you guys. My favorite homemade brownie has canned or frozen boysenberries or blackberries (needs a little judgment as to baking time if berries are large and still frozen) pressed into the top of the brownies just before baking. It's nowhere near the refined brownies you're making, but still delicious.
These look amazing! I would even cut up little hearts made of parchment paper, place them on the ganache before dusting it with the raspberry powder, so that once it sets, I can peel away the pieces of paper and reveal a heart pattern on top of the brownies! 💗

I've just attempted this and it's massive! Its taking loads longer than 40mins.... more like an hour and its still wet on the skewer. Where have I gone wrong, I think the tin I've used wasn't deep enough but other than that I followed to the letter. It smells divine though! Excited to try it 😊 just its risen so much that I won't get the ganache layer on it 🤦♀️😅
Struggling to get these cooked in the middle. Difficult to use a skewer to judge when there's goo and chocolate in there. Cooked for 60 mins amd still not set in the middle whilst rock hard on the outaide. Trying again with lower oven temp. Maybe its my tin? Got it! Turned oven down to 140 and baked an extra 15-20 mins. Perfect 🙂

@CupcakeJemma, just confirming the temp is definitely 160oC? Just cooked mine. Did it on 160oC fan forced for 40 minutes. Nope. Needed more. Ended up giving it another 20 minutes and it still wasn’t properly cooked. So it had an hour instead of 40 minutes and still needed more. Where did I go wrong? 😢

The golden syrup will be what keeps it a little softer given this is made with chocolate and butter which will both set up very firm, compared to a ganache with just chocolate and cream. If you don't need to post it around the country, and don't want to use golden syrup, I'd suggest just make a normal ganache e.g. 3 parts dark chocolate to 1 part heavy cream.

Normally the recipes for brownies are using brown + white sugar but you guys don't use brown sugar at all for all your brownie recipes! Is there any reason? I am just wondering as a home baker :)
Brown sugar results in chewy brownies due to the presence of molasses..and they wanted a fudgy texture ..I am guessing that's why they didn't use brown sugar.

Help guys!! 2nd time of me trying this.....1st time I didn't bake long enough, I'd had it in for 50mins and it still wasn't baked the whole way through but I took it out anyway and it was way too gooey even for me. 2nd time I tried baking until it was done and after 60mins it still wasn't quite there but the top is like a brick. What am I doing wrong? I think I'll carve the top off this one before putting on the ganache to see if it still tastes OK......
Buy a bag of freeze dried raspberries then blitz them up. I do it all the time. Not sure where you're at but here in the US you can find them in store at Target, Trader Joe's and Walmart occasionally has a brand there too. I always buy mine at Target. The amount you get from Walmart is pretty small but that price tag is still high. Hope this was helpful. Happy baking... 😋
