  • GUYS! Is this the best brownie we've ever made? I actually think it might be 😏, fudgey brownie stuffed with mini creme eggs, topped with a duo of eggy looking layers that are melt in the mouth delicious and finished with chocolate ganache and even more creme eggs? Absolute filth and absolutely DREAMY! you'll find everything you'll need below :)
    8" Square tin
    BROWNIE
    165g dark 70% chocolate
    165g unsalted butter
    135g plain flour
    45g cocoa powder
    ½ tsp baking powder
    ½ tsp salt
    3 eggs
    330g caster sugar
    1 tsp vanilla extract
    FUDGE
    560g white chocolate
    400g condensed milk
    1 tsp vanilla extract
    GANACHE
    150g dark 55% chocolate chips
    150g of double cream

    It was only when you said cutting the egg often ended in disaster that I noticed the blue plaster on your thumb 😳. That’s dedication and leadership, it was obviously too dangerous a bake to delegate to Sally or Dane! Happy Easter to all at C&D.

    What I usually do to thin out white chocolate when I’m making my Christmas bark before setting it is adding a touch of vegetable oil and it helps make it just that little bit more runny. Because I use mint extract in my bark, that usually works the same!

    I've made this 3 times now and each time it's taken 45mins in the oven at 170C. I always thought things were slow here in Kamloops, BC.

    So….. this is bloody lovely for starters :) but I’ve made a couple of brownie topped things now inc this and after I’ve chilled and cut up the brownie falls apart from the topping…. How can I get it all to seal together if anyone can help….

    Thank you again for another amazing recipe! The Sugarflair coloring is just a usual food coloring gel paste for buttercream, correct? Can you usually use good quality gel colors (such as anericolor soft gel) to white chocolate, and white chocolate ganache?

    Great recipe Jemma. My fudge went really thick & clumpy, it didn’t look silky smooth like yours despite mixing it plenty. Do you know where I may have went wrong?

      Most likely, this was due to overheating the white chocolate. Low and slow is the way to go when heating it, whether doing it on a double boiler or in the microwave.

    Hi Jemma and C&D team 🙂
    When my sister and her family went to London before Easter I recommended them to pay a visit to C&D (one of my (11 year old) nieces is a great baking enthusiast) and guess what? They did! And as it would have been risky to try and bring back some cupkakes to Germany, they brought back your brownie box and some NYC cookies...
    My favourite was the Cereal Milk Rocky Road and now I can't find the recipe/video on here!?! PLEASE, please, please, pretty please - could you? Lots of love to all of you

    Hi, made these on Saturday and they are awesome. Just a quick question on the gamache....the ingredients list says 150g of double cream but in the video Jemma says 170g. Which one is correct please?

      I followed the 150 and it was fine. 20 g isn't going to make a huge difference, especially since you're going to chill/fridge the brownies anyway which will set the ganache.

    Please educate me... when you say cocoa powder, do you mean natural or dutch process? When do you know which one to use when it is not specified? Thanks.

      In many cases you can just swap one for the other. The colour and taste may vary from the original, not necessarily problematic though. But the key giveaway is what leavening is asked for. A recipe using baking soda ideally needs natural cocoa powder, where one using baking powder needs dutch processed cocoa. It's to do with the acid/alkali differences between the two types of cocoa, from the processing.

      This recipe uses baking powder so dutch processed cocoa is a good match. Looks like what Jemma is using too, from the darker colour of it.

    Looking at the finished product, given all the sugar in that chocolate/condensed milk layer, plus the brownie layer, the creme eggs in the base could be overkill, even as a treat. Nice brownies though overall.
