You can also make potato pancakes with some of the same ingredients. Potatoes, salt and pepper, onion and garlic powder, chives some flour and an egg if they are a bit dry. Pan fry in oil. And the dipping sauce is soy sauce, lemon or lime juice, more chives and a bit of water if you don't like it as salty. It is nice as a late snack.
My grandmother made fried mashed potato patties for my grandfather's lunch as well as baked bean sandwiches. Oh they were so good. Of course in those days a cabbage heart was a good snack. Sigh. I've lived too long.
I recently watched a very similar recipe, with the same emphasis on "Extra Cheese". I still believe that this recipe would require a tad drier "batter". Pick the larger (usually 6 "cupcake" pan), lightly grease with a clean(🤣) finger and butter or same smaller amount of Non-stick spray and apply around the outside a of each cup while upside down. She propped it in the over at 350 degrees for 30 minutes. When they were brown and crispy and cooled, she pipped in light sour cream, topped each with a egg done your way! She made one with scrambled, one coddled and one with a crispy-edged over-easy or medium. Topped with bacon bits or sausage crumbles, more cheese, very fine minced chives sparingly sprinkled on top. Ta-da! Cheese and Egg cups that have endless probabilities. It you want to make and freeze, prepare whatever you're calling "batter" and place an ice cream scoop of batter in between lightly buttered COFFEE filters ( or Pam spritz). Refrigerate to use the next couple of days, or freeze to always have some. Anyway, Graham crackers crushed up, melted butter and I like fresh lemon zest in there. Mold them to the outside of muffin tins, Refridge, freeze or form for eating now. Bake the shells off- time always varies but 7-10 minutes, watch for that golden color and crisp crust. Allow to cool and carefully remove. Here's up to you! I prefer the longer cook pudding, but feel free to use quick-cook or instant. Pipe whipped creams on top.. maybe pecans on top. Crush a few vanilla wafers, garnish and stick one or two whole cookies it. See? You can adapt this into any meal and the kids and adults love them!

My MOM always made mashed potato pancakes without the cheese but I'm sure she would have added the cheese if she'd thought about it. My MOM was a Depression Era baby so she always found ways to stretch the leftovers.
