Best Leftover Mashed Potato Cakes!! On the Blackstone 36" Griddle

  • Do you have left over mashed potatoes in your fridge? You know, those ones in the back corner. Yeah, those. Get them out, throw some flour, cheese, onion, eggs, salt, and pepper and cook them!
    This is how I do potato cakes with left over mashed potatoes!
    2 cups left over mashed potatoes
    2 eggs
    1/4 cup flour
    1/4 cup onion
    2-3 chives cut
    1/4 cup cheddar cheese (you can use your favorite)
    Mix ingredients well, and fry in a pan or Blackstone about 3-4 mins a side in some bacon grease. Serve with some sour cream or your favorite condiment.

    One more thing I can cook on the Blackstone. My Grandfather grew up in the depression area, I remember as a kid he told me that he n his family were snowed in and they lived off tater cakes for a week, he said they had Chickens (eggs) had a sack of Flour, and had taters from their garden. I do mine very simple, Mashed taters, Egg n Flour... I cook em in vegetable oil n everyone loves em.

    I grew up eating fried mashed potatoes, and I still love them. I like pickled red cabbage and wurst or hot dogs with them Nothing fancy, but it nourishes the soul.

      The Hungry Hussey. I also like to take leftover fried taters and heat them up & beat eggs and pour over them. When they are done,i put alot in my plate and cover them with home made gravy and homemade biscuits on the side or crumbled & mixed with the taters,eggs & gravy. Along with BACON or sausage.
      And wash it down with Good homemade coffee.

    We just pat out round flat “cakes” out of cold mashed potatoes, flour both sides and fry in bacon grease. Yum!

    Great video again. Reminds me of something my mom used to do, but poor Mom didn't have a Blackstone so she made it as a casserole in her oven. One thing she used to put in that you may want to try is salami.

    Grown up eating potato cakes. If you make them plain, try apple sauce in place of sour cream.
    Taught my daughter how to make them because she loves mash potatoes. I will have to try them on the Blackstone

    Awesome Video Hussey....Just a side note...These are nearly identical to a traditional Jewish side dish called LATKES (pronounced LOT-KEYS). Often served with Sour Cream....and or Applesauce. Some people SHRED the potato instead of using mashed.....Either way....They and i'm positive....Yours....ARE DELICIOUS.

    Just made them for tea ( what we call dinner here in the country in Australia). I had to cook fresh mash potato... I can see why it’s best to use day old cold mashed potato because it would cook up firmer . It was a bit raw and soft tasting inside no matter how long I cooked it and I think that was the issue . Still tasted good though. I put some corn and some chopped up cooked bacon and garlic granules in it as well.👍 I don’t have a hot plate like that so I cooked them in my frying pan with a bit of olive oil

    This is like what my mother made long ago.Been looking for a recipe. I've only found the potato cakes made with grated raw potato. My mom never did that. She started with cooked, mashed potatoes.

      The sour cream really is just what I like for dipping. Growing up sour cream was never a thing with these.

    Omit the eggs, onion, garlic and the cheese and add shredded cooked white fish and fresh parsley - you've got fish cakes; or add chopped cooked green cabbage or kale plus sage and thyme and you have "bubble and squeak."

    I make a variant of Potato Cakes. I mix in Atkinson Buttermilk Pancake Mix and fry on Bacon grease!. Potato Pancakes with Real Maple Syrup, give it a try............................

    Have you ever done them with grated onion, bypassing the chunks, but getting the flavor? If so, which do you prefer?

      You can do that, but I like the chunks. Personal taste for me. Can also do onion powder too. I like that crunch element but I do know some do not.
