Fried Potato Patties
Use leftover mashed potatoes. Add egg, flour, salt & pepper. Optional: onions, garlic, etc. Mix well to a thick consistency that you can spoon out and fry. Fry until golden brown on both sides. You will love this. Potatoes with a crunch.

I remember my mom making these wonderful tasty treats for us :) she was a Mississippi lady. You're certainly correct about it being a southern thing. My dad was a Baptist preacher back in the early fifties, down in Louisiana and we were used to not wasting anything, especially food. Never made potato pancakes from mashed potato left overs, always from fresh fine grated potatoes and grated onion 🧅. I'll try this recipe now that I've seen it next time I have left overs of mashed potatoes. Thank you 😊
