Gingerbread Cake with Spiced Cream Cheese Frosting
Makes (2 layers) for one 9”(23cm) cake

Ingredients:
1 cup (240ml) molasses
1 cup (212g) white sugar
1 cup (240ml) vegetable oil
1 cup (240ml) of buttermilk
2 eggs
2 cups (280g) all-purpose flour
1 tsp (4g) baking soda
½ teaspoon (2.5ml) kosher salt
2 tsp (10ml) ground ginger
2 tsp (10ml) ground cinnamon
1 tsp (5ml) ground nutmeg
¼ tsp (1.25ml) allspice
¼ tsp (1.25ml) ground cloves
For the frosting:
24 ounces (680g) whipped cream cheese
8 ounces (226g) regular cream cheese
1 cup (120g) powdered sugar
1 Tbsp (30ml) + 1 teaspoon (5ml) vanilla extract
¾ tsp (3.75ml) ground cinnamon
½ tsp (2.5ml) ground nutmeg
For the Garnish:
Dusting of Powdered Sugar
7-10 Rosemary sprigs
6-8 whole raw fresh cranberries
METHOD:
Preheat the oven to 350F (180C). Spray two 9” (23cm) cake pans with baking spray. Then line each pan with a 9” round of parchment paper (Place the pan on 2 sheets of parchment and trace it with a pencil and then cut out the circles.) Set the prepared pans aside.
In a large bowl whisk together the wet ingredients and set aside.
In a medium bowl whisk together the dry ingredients. Then add the dry ingredients to the wet ingredients, whisking gently in between each addition, until combined.
Pour the batter into each pan, and bake for 23-25 or until a toothpick comes out clean.
Allow to cool completely.
For the frosting: beat the cream cheese and powdered sugar together until smooth. Then add the vanilla, cinnamon and nutmeg. Beat until smooth. Transfer half the frosting to a pastry bag with a round tip ½” (1.27cm) in diameter.
Remove the first cake payer from the pan, and place it on a cooling rack, upside down. Gently remove the parchment paper and transfer the cake with a cake lifter to a cake stand. A wooden cake stand looks nice! Pipe small “Hershey Kiss Size” dollops all around the perimeter of the cake working from the outside in until the full layer is covered.
Remove the parchment paper of the second layer and place the second layer on top of the first. Pipe small little mounds of frosting all around the top layer.
Place in the refrigerator uncovered until ready to serve.
Remove from the refrigerator 30 minutes before serving to come up to remove temperature.This will create a smoother, lighter texture for the frosting Then dust the top with powdered sugar for a snowy effect. Add the rosemary sprigs to the base, overlapping around the cake, and add cranberries here and there in groupings of 2 and 3.

I may try this cake in place of English Christmas pudding. My children don’t really like Christmas pudding, but think they would like this. Beth, this recipe is great! I made them into cupcakes so I could bring them to work and they turned out great! I also added some cranberry jam filling - it's a great combo! I love how moist the cake is and how the frosting isn't too sweet at all. Happy Holidays!!

You can do it! Just use a good one to ratio gluten-free flour. My favorite brands are cup4 cup, or Bob’s. Redmill has a good one-to-one ratio gluten-free flour, too!

Yes, you could absolutely make the cake a day ahead or you could make the actual cake layers a day ahead and frost the day of either way would be OK. Hope you enjoy it!

Sure you could try that. I know a lot of people do this with cakes, but I can't say I've actually tried it with this recipe, but maybe you could do 1/2 and 1/2? Half oil with 1/2 apple sauce? Just to retain some of the great texture the cake has :) Keep me posted if you try it because now I'm curious what it would taste like ha!

Good Morning Beth this cake looks delicious, I've got a question can you use self rising flour instead AP. Hope you and your family have a Very Merry Christmas and a Happy New Year
Well I think you might have better results with the AP flour, the baking soda, and the salt called for in the recipe. Self-rising flour already has the salt added along with baking powder. But because we added the Buttermilk, it needs the amount of baking soda called for to create the tiny air bubbles that help the cake rise and create that soft fluffy texture that creates such a wonderfully tender cake. But if it's all you have no need to go out and buy another sack of flour if you don't need it. It will still be yummy but may not have exactly the same texture. Hope that helps!

Love your channel Beth - is there any way to reduce the amount of oil in this recipe down to 1/3 cup? I make pumpkin bread with only 1/4 cup and it turns out delicious - I'm just not sure if I would need to change anything else in the recipe if I do this? Thanks for sharing♥
Well yes you would probably need to adjust a few things. Pumpkin has a lot of moisture in it and many people use it to reduce or omit the oil. But for this cake to retain its moisture I would only reduce it to 1/2 cup and then use 1/2 cup of water in its place. Hope that helps and so glad you enjoy the channel! :)

Yes, absolutely! You could make the cake layers ahead of time. All to cool completely. Then wrap the layers well in plastic wrap and then aluminium foil. Freeze and then place the whole thing in the fridge overnight to defrost. Then frost it the day before serving and place it in the fridge overnight. I hope you enjoy it!

Oh it’s something I already had. I actually found it at IKEA years ago but you could also invest in one of those pancake batter bowls for such a job. I think when dealing with batter to have a spout just makes it so easy! I hope you enjoy it and it’s a big hit. Merry Christmas to you and your family!
Beth, this cake was AMAZING!!!! My fam not only ate it for dessert on Christmas, but everyone took a piece home, too. I escaped with a piece that my hubby & son just split. 😄 I didn’t pipe the cream cheese frosting on, but just spread it. The cake was so moist, flavorful & you could really taste the molasses and spices. I think this will be my yearly Christmas cake.

My tip unfortunately doesn't have a number on it but I just measured it and it's measuring 3/4" in diameter :) Hope that helps!

Can you use a different type of oil? For example a extra light olive oil?
I’m not sure about olive oil that might have too much flavor in it and be too heavy. But you definitely could use melted, coconut oil, corn, oil, or canola oil.

Where do you get whipped cream cheese? I’ve seen whipped cream cheese icing (I’m guessing the sugar already in it) but not just whipped cream cheese. Please help
Oh sure if you are based in the U.S.A it's sold right next to the regular cream cheese. Otherwise, just buy the brick cream cheese and add 1-3 tablespoons (15ml-45ml) of heavy cream to the frosting to loosen it up. That would be better than anything pre-made and sold as "Whipped Cream Cheese Icing" since you'll be able to control the sugar and spice with the homemade :) . Hope that helps! Enjoy!
