I cooked the herbed chicken, without the potatoes (we were out and my Husband just had dental surgery so he needed soft and "small" food easy to chew) and served over orzo. It was great...but even better the next day for lunch! We had enough leftovers for another meal so I took the chicken and added mixed veggies and made chicken pot pie with the mixture. IT WAS AMAZING! One of the best I've ever made. This chicken recipe will become a "base" chicken prep in my kitchen from now on!

I love, love, LOVE crockpot meals. I call them my “lazy mom” meals lol. I love almost anything that is a soup type recipe too. Taco Soup is my favorite. I use ground turkey though. . I’ve made it with ground deer too and nobody can tell once I heavily rinse the raw meat before cooking it. Here’s the recipe if any would like to try it. Taco Soup Ground turkey (1lb) or any ground meet you prefer 3 Tbsp cream cheese Large box beef broth Frozen bag of corn 1 can Pinto Beans 1 can Black Beans Can of Rotel Can of diced tomatoes 2 cups water Taco seasoning packet Ranch Seasoning Packet (You can add diced onion and diced green pepper if your kids aren’t as picky as mine) In a Dutch Oven pot I brown the meat and drain off fat if any. (If using onions and peppers add at this point to soften them). Add cream cheese next and keep stirring until it’s melted and the meat is coated. Dump everything else in the pot, juice in the cans and all. Stir and let cook of medium low heat for about 30-45 minutes. (Some brands of tomatoes take a little longer to soft to your liking). We eat this with shredded cheddar sprinkled on top and my kids love to crush tortilla chips on top kinda like crackers.
Kimmie, Just wanted to say I was super intrigued by that mushroom soup and salsa chicken recipe. I noted what you said about it needing a little more oomph where flavor was concerned. I tried this today with some chicken I had and added in a teaspoon of chili powder, a chipotle pepper in adobo sauce and subbed cream of chicken for the mushroom soup. I used a mild salsa. This turned out really good! I made a tamale pie with my chicken mixture and will readily make this once again. Thank you for sharing the recipe and for your suggestions on what you'd change when you made it again.

I just made the Italian chicken and potatoes today! It was so delicious. I used frozen chicken breasts and just put my crockpot in high for 5.5 hrs and the potatoes were done and the chicken was delicious. I served with rice pilaf and steamed carrots. So good and such a Great recipe!

When I make the chicken and salsa I use store brand salsa or fresh jacks garden salsa and taco seasoning. One of my favorite go to meals. I make it more in the instant pot than the slow cooker.

I also find the salsa mushroom chicken intriguing to serve over rice my family are veggie eaters I know most like to figure out some good veggies to put in there not sure what direction to go with that certainly you can have veggies on the side. Like that idea a lot and may work on it a little bit
I make a dish similar to the chicken mushroom one except it has no soup just salsa and taco seasoning so maybe by adding the seasoning mix it would elevate the spice.

I used to make a similar recipe to the salsa chicken called Diablo Chicken, adding cumin, black olive and artichoke hearts to the recipe you made, so yummy also served with rice ❤👍

I make a chicken casserole dish with salsa, spaghetti sauce, and cream of chicken mixed together. You layer chicken breasts with black beans, corn, cooked minute rice and cover with the sauce mixture and cheddar cheese and bake it. It's one of my kids' favorite dinners.

I really want to try that salsa mushroom chicken. I'm almost tempted to use a jar of my tomato peach salsa I just canned last month, but I'm not sure how that would go with the mushroom soup. I did make something almost like the last recipe this past week, only I turned it into a type of Hunter's Stew. I went through all the veggies in the fridge and threw them in with the diced tomatoes, etc. It was so good, especially since we went below 70 degrees for the first time in months.
