I've always thought it was kinda a wuss way out to beat up on a guy while in the ring, as the other guy probably won't retaliate for fear of being fired, looking bad, being unprofessional etc. Someone like Rick rude did it the manly way, was a pro in the ring and fought in the locker room.
Another factor is it like a sneak attack from the front. There was an incident in early Japanese pro Wrestling where all time Judo great Kimura had a worked match with Rikidozan. Kimura was a great shoot fighter but he came in to have a worked match and put Rikidozan over. During the match Rikidozan started throwing hard palm strikes at Kimura. Kimura was freaked out and confused by he cheap shots and tried to communicate and get the match on track. Dozan then KOed him. Then he went around saying he beat the legendary tough in a real fight. Most jobbers knew their role and performed accordingly, but for the marks and also the top guys to think or believe said jobbers if need be couldn't kick their ass in a real world confrontation sets a difficult precedent.
I've seen the matches Steiner is talking about. Trust me there is no way any of those guys would stand a chance against him or Scott in a real fight. The whole reason they were using amateur wrestling moves on them was because they weren't good enough to do the pro moves properly. Neither did they have any amateur techniques to defend the moves. Landel was very scared, he couldn't figure out if they were shooting on him or just toying with them but he apparently deserved it.
In Stan Hansen's book he talks about how his gimmick as a monster heel was to beat up guys in the ring and that many of those guys would destroy him in real life, he mentions the Malenkos.
There were some jobbers who knew their rol, but never learnt how to play it. In my opinion the biggest risk is when you dont know how to move, and you are unable to coordinate those moves with your "opponent": Then is when they have to get total control and double power : to create the show and to overpower any move of that their jobber was doing in any other direction.
