  • This scrumptious Custard Pudding is made from simple ingredients, eggs, sugar and milk. Chill it well to enjoy the pudding.
    How to Make Custard Pudding

    4 tbsp Granulated Sugar
    1 tbsp Water
    1½~2 tbsp Hot Water
    - Egg Mixture -
    2 Eggs
    250ml Milk (8.45 fl oz)

    I appreciate that you advised to keep the temperature below the boiling point while steaming the custard. People should take note of this.

      Bring the heat to near boiling point (when the bubbles start emerging), then reduce heat and thee custard will be cooked. I've done it. Otherwise, your custard will have many pores and taste like steamed eggs.

      Exactly. And another quite IMPORTANT thing to note is that it has to be COVERED or it can also end up as you've mentioned above. I once made it and forgot (so stupid) to cover it and it did taste like boiled eggs or steamed or whatever.

      We also added vanilla to the recipe. It tasted amazing, but a good part of it floated to the top (or bottom, after flipping over) of the pudding. Is there a way to avoid this?

    I’m impressed with how Chef is able to create so many different foods and she works with a tiny burner on a tiny bit of countertop, usually with only one or two pans.     The cavities in the pudding were caused by high temperature. Lower the temperature to heat the pudding and make sure not to bring the water to a boil :)

    This was the first ever recipe I learned because my girlfriend recommended this channel for learning how to cook Japanese dishes, and that was months ago. Even now, I watch these videos and especially this one because they've motivated me to learn how to cook. Francis was such a gift and I hope he's resting peacefully! ^~^ He was such a good boy!

    You can probably use Lactose-free milk since the egg will help the pudding to firm up :)

      Butthurt? Where did you get that idea? We were colonized from 1521 to 1898 by Spain. Most of our Ethnic and Cultural Heritage were killed off from those period. Since then, we integrated Hispanic things/culture to ours, because you know, you can't change history.

      I've seen this recipe where it required some 3-4 types of syrup & had much more complex cooking in an oven despite the limited number of ramekins, esp when considering the most I'd need to make is 2 or 4 servings. Our oldest daughter is married, lives a county away, and she's raising a young teenage daughter with her husband. The 2 of them work long hours w/our daughter working 2 different jobs while also working with her husband in their side business of landscaping. Additionally, they do a lot of volunteer work. Our youngest is away at college. The university is practically on the other end of the state, which makes it difficult for her to come home each weekend. This August she began her 4th year as an undergrad; if all goes well, she will graduate in the spring. I've always cooked larger meals that fed at the least 4 people, but I am learning to cook for 2, well 3 counting my mil. I was really excited to find this recipe. Can't wait to share it with our girls, esp our oldest.

      Hello! Here are some possible reasons I could think of as to how that happens (I'm not a pro but here you go!)
      1. Milk was too hot or the eggs weren't mixed quickly enough while pouring.
      -When this happens, the eggs curdle and coagulate itself without including the milk part. To fix this, cool the milk for a minute and whisk the eggs a little quicker to prevent curdling.
      2. No foil on top of the moulds.
      -This will allow water to enter the moulds and cause the mixture to have way too much liquid than the eggs can allow to firm up. Make sure to use aluminum foil (even saran wrap/ cling film will work) to avoid water from entering. Also, don't add too much water in the pot that it enters the mould when it bubbles up a bit.
      3. Not enough cooking time.
      -Cooking time varies. You can steam the puddings longer than indicated. As long as the pudding's center is firm enough (You can test this by shaking the mould. If it moves too much then put it back and steam it a bit longer.)
      4. Egg to milk ratio is off.
      -I highly recommend making a test pudding before cooking the rest of the batch. If the pudding won't firm up no matter how long you've been cooking it for, add an egg yolk or an entire egg to the mixture for the next batch. And if the test pudding turns out great, then, more pudding for you haha!

    Maybe, the temperature of the hot water was too low or your steaming time was not long enough. Be careful not to boil the water otherwise your pudding will have lots of small holes inside.

    Key points to consider. Do not boil your custard it will cook the eggs too fast and you will have some lovely caramel scrambled eggs. Before you put the custard in the pot. Boil the water. Turn the water to just below boiling. Then insert the custards. Place the lid over. When cooking the caramel. Do not use a spoon to stir it. The cold spoon will crystalise the sugar. Swirl it slowly and away from you so as to not burn yourself.

      James iNG to make a tea flavored flan youd have to add the leaves while youre heating up the milk and let the milk simmer for a bit. Afterwards you can add the sugar then dissolve it

    in my day in the UK we called this crème caramel (custard caramel) or sometimes anglicised as cream caramel, a misnomer. In Japan I was really confused by both "purin" and "pudding" but then I guess it is made in a mini pudding bowl. For me a pudding was a boiled sponge cake, or a general word for dessert often including instant whips.

      timtak1 This is similar to how Flan is made but I like the custard flavor much better and it has a creamier consistency. I sometimes put a few drops of vanilla in my custard and a pinch of salt. Of course, Flan is usually made with condensed milk, more eggs and less sugar and a splash of vanilla and baked with or without the water bath (covered or uncovered too).

      I feel that eating delicious things is a bit like masturbation. Seriously. And I am wary of the latter.
      I now only eat to take in nutrients. That is to say, that I do not see food as a way of being happy, but merely as a way of taking in the things that my body needs. Since as an old geezer, I do not need all that much in the way of calories, or protein that means that I eat a lot of vegetables. I quite enjoy eating the vegetables that I think my body needs, but I have forgone all great enjoyment of cake, flan, chocolate, bread and cheese that I used to enjoy. I think that, as a famous model said, 'Nothing tastes as good as skinny feels.' It was Kate Moss. I am not as thin as Kate Moss but I think I agree with her sentiment. Alas, therefore, I will not be eating much flan.
      If you can eat flan and be skinny then Power to you!
      If you enjoy flan and are not interested in the enjoyment of skinny, then that is cool too.

      Crème caramel, caramel pudding, custard pudding.
      Many foods have countless names in different parts of the world.
      In English, flan is the North American name.
      In Japanese it's called purin (from pudding)

      i think the difference between leche plan and custard pudding is the ''Milk'' .
      leche plan use condenced (i heard others use evaporated milk for reducing sweetness) while custard pudding use fresh milk.
      they looks the same but different textures.

      The idea is the same, but as a Pinoy myself, leche flan is made with condensed and evaporated milk with sugar and egg yolks and is cooked in a steamer. Leche flan is also firmer and creamier than purin. 😊

      have eaten both and in my opinion custard pudding is less sweeter than leche flan.. both are really really good but i prefer eating custard pudding in a regular basis and leche flan ofc is best when eaten on Christmas and New year 👍👍👍

      Leche flan has a stronger, creamier taste (stronger taste than Spanish flan) in comparison to Japanese purin, which is lighter in sweetness. One difference is that leche flan uses egg yolks only, whereas purin uses the egg whites as well, and another is that leche flan uses condensed milk (just from what I've seen from mum's cooking). Same origin, but different in taste I reckon. :)
      I do love my leche flans, purins, and creme caramels in general :P

      ***** Mexican flan isn't Spanish flan.... it's from mexico so that makes it Mexican. And Mexican Flan's recipe also calls for egg yolks, condensed and evaporated milk.

    Caramel :
    - 50g of sugar
    - 15ml of water
    - 15ml of hot water
    Eggs Mixture :
    - 2 eggs
    - 250 ml of milk
    - 62,5g of sugar

    For those who want it to be less runny can try this recipe instead:
    3eggs
    4tbsp sugar
    1tsp vanilla essence
    300ml fresh milk
    1tbsp evaporated milk
    1tbsp condensed milk
    Pinch of salt
    Mix eggs with sugar,salt,condensed milk n vanilla essence. In a sauce pan, heat fresh milk with evaporated milk without boiling them.
    Pour milk into egg mixture n sift. Thats it...Pour the mixture into moulds,cover with foil n water bake at 180° for 35-40 mins.
