My dad knew how to do all this stuff. He was born in 1915. He served in WW2 as a bomber copilot /navigator on a 2-seater Martin B10 in Panama, guarding the Panama Canal from German ships and u-boats and Japanese ship (potentially) from Pacific theatre. Many people don't think about central America being a serious part of the war but in fact the Germans had naval forces in South America and they responded to u-boat and small vessels often.
Some time later he decided to put his Army Air Corps jungle survival training to use. So he moved to the Smokey Mountains of East Tennessee ... at the time there was only one lodge just getting started on the top of one famous mountain near to what's now known as Gatlinburg.
And the only way up was a hiking & horseback trail. Supply caravans took supplies up periodically in summertimes. He developed TB so he just survived in the wilderness for several years until he survived the TB.
Eventually he met and married my mom and had 3 girls and was almost 50 when I was born. Every summer we spent a week in the mountains camping and cooking on camp.
I still have my dad's USAAC machete.
My dad would spend copious amounts of time camping and living in the mountains painting landscapes a photographing the mountains. He was born with raw natural art talent and sold the photos to news papers, and sold his paintings to tourists and local clients. Many local businesses and restaurants in Gatlinburg had his paintings hanging on their walls. He died before finishing a last painting from cancer in 1973. This is the anniversary of his passing.

NEVER UNDERESTIMATE HOW QUICK MEDIUM RARE CAN TURN TO MEDIUM
And always make sure to let your meat rest. This relaxes the meat and makes it more tender and juicy.

Here's a quick cleaning trick for an hot grill when you don't have a wire brush: a loosely crumpled ball of tinfoil, holding with a pair of tongs!

Never put a wire brush on your grill.
i got one of those olive oil sprayers for the grill. I think it's for salads or some crap, but i use it to spray canola oil on the grill. And i use the oil from my little fryolator, so there's plenty of it, and i use it liberally on the grill. after i'm done cooking on the grill, i spray it with the oil then close the lid. Next time i use the grill, it's a nice shiny, seasoned surface.

The best fire starter I've found is just a couple of pages of newspaper. Ball it up and soak it in cheap vegetable oil. Pile your lump charcoal on top. Works way faster than my chimney ever did.

We barbequed chicken breasts after tenderizing them with lemon. Best chicken I've ever had in my life. Every single one of these tips are going to make your food fabulous. It takes it from good to so amazing that the neighbors invite themselves over the second they see smoke from the grill. We wound up with eight people last night :) It's really important right now to take care of your friends and neighbors. Thank you Kent and Shannon. You're the best.

Yeah under seasoning and over cooking is probably the biggest mistake people make!
So these tips are great advice for any *season!*
I used to tell my Mom to stop cooking things to death that are already dead. She would cook things so long sometimes that it lost all flavor no matter how much seasoning she put in it. Most foods can cook in minutes. Those foods don't need to cook over a hour to be done. Peas was her worst. They would almost be mush. Just taking them out of the boiler would break them up.
You are right, it is often the worst mistakes a person can make.

Hello. When I came to America back in -96 my now ex-husband used to grill but every single piece of food got completely burned on the outside and raw on the inside. He ALWAYS blamed the grill !! Those terrible foods were my first grilled foods I ate and I though how can people eat this stuff...boy it was Nasty !! Now I know better. It wasn't the grill it was the grill-er. We haven't got our grilling season started yet but it's so close. Our neighbors 2 houses away use that starter fluid and even the smell of it gags me. I like your tips. The lime, onion, thick pork chop. It's all good. Thanks Kent 👍👍

Mr. Rollins, first let me say, in the kitchen, I am NOT a cook. I can burn water. However I thought I was a pretty good griller when it comes to grilling steak, chicken, pork chops, etc. But after watching MANY of your videos, I came to realize just how bad I was. I have and still enjoy your videos very much. I learn something from each and every one. And since I ordered some of your original and mesquite seasoning, WOW! Thank you so much for teaching me and millions of others your secrets.

I tried your pork chop tip. I wrapped 4 in a foil pouch after I limed them up and seasoned them. I put a little beer and teriyaki in the pouch, put it over direct coals for about 5 minutes a side. I took them out of the pouch and got some real good grill marks on them while they basted in some barbecue. I put them back in the pouch to finish. These are the juiciest pork chops I have ever cooked. Thank you Cowboy, sir.
