California cuisine does not really have guardrails. When i grew up they talked about "california fusion" and because it's so multicultural every group is mixing everything: the bbq, the Korean Bbq, the tacos, the tacos, mixing with ramen. It's just all kinds of cultures and mixed up and ya keep what tastes good.
Just so you all people know, yes, birria is out go to breakfast (of course that being street food) and supposedly in Guadalajara is the place it is originated, don't know if it is true or not but they say they are the ones and I am going to belive them (sidenote, there in Guadalajara you will eat the birria as it is a soup, yes, in most places it is called consome but apparently it is not the same and don't you dare it is in front of any guadalajarians)
Hey!! Former donut maker here! The one you keep calling a long john IS called a long john in the midwest. I wonder if its called different things in different areas? Also the glaze donuts are also called yeast rings as they are made with yeast and rise like bread when cooking. The ones you had with the frosting and sprinkles that you call "classics." Are actually called cake donuts as they are made with a cake like batter that is then deep fried. 😁

There are some regional chains that are good but those tend to have been started by immigrants. National chains are often owned by US conglomerates with the attendant level of shit food as it’s all treated like chemistry being put together in a lab.
Only the first taco joint served consume - the rest are either soup or wet stew. Consume is a clear broth - not full of debris like the last 3. As "food" critics you should know this.

Different foods can share the same name and be completely different depending on what country you're in. Before correcting something and calling it wrong like a 'know it all' you should have known before commenting

It's sad how starved we are for legitimately good, A and S tier restaurants here in Lexington, KY. With few exceptions everything in this area does mediocre food and it's just a good market being a medium-sized college town for a restaurant to expand here and do something like amazing barbecue or birria tacos.
