A very warm welcome back to What’s For Tea :) Today I made lemon cheesecake! I put this to the vote along with two others and this won your vote. So easy and quick to make and it’s absolutely delicious! I hope you give it a go for yourself.

What I used (8 inch/20cm Springform tin)
For the base-
200g / 8oz of Digestive Biscuits
100g / 4oz of Unsalted butter
For the filling-
500g/ 18oz Philadelphia cream cheese
125g /4.4oz Icing or Powdered Sugar
150ml /5.3oz Double cream or heavy whipping cream
The zest & juice of two lemons
For the topping-
10g /2 teaspoons Gelatin powder
150ml /5 oz Boiing water
5 Tablespoons lemon curd
200ml (7 oz) Whipped double cream
1 Tablespoon Icing sugar

Looks yummy! Here is the Lemon Cheesecake I grew up with...
SOUTHERN LEMON CHEESECAKE
INGREDIENTS
FOR THE CAKE:
1 cup butter (2 sticks), at room temperature
2 cups sugar
1 tablespoon baking powder
3 cups sifted cake flour
¾ cup milk
6 large egg whites, stiffly beaten
FOR THE LEMON FILLING:
½ cup butter (1 stick)
1 cup sugar
6 large egg yolks
Grated zest and juice of 2 lemons
FOR THE 7-MINUTE FROSTING:
2 egg whites, unbeaten
1 ½ cups sugar
¼ teaspoon salt
⅓ cup water
1 tablespoon light corn syrup
1 teaspoon vanilla
FOR DECORATING:
1 cup shredded coconut
PREPARATION
MAKE THE CAKE:
Preheat oven to 350 degrees and grease three 8-inch cake pans.
With a standing or hand mixer, cream butter and sugar until light and fluffy. Add dry ingredients alternately with milk. Fold in egg whites until thoroughly combined; do not overmix.
Divide batter into greased pans and transfer to the oven. Bake for 25 to 30 minutes, or until top springs back when lightly touched. Cool on racks before removing from pans; let cool completely.
MAKE THE LEMON FILLING:
Combine all ingredients in top of double boiler set over boiling water. Cook, stirring constantly until very thick, about 15 minutes. Transfer to a bowl and let cool completely before using.
MAKE THE FROSTING:
Combine all ingredients in top of double boiler. Beat with a rotary beater or hand mixer for 1 minute, then set over boiling water and beat for about 7 minutes more or until frosting stands in glossy peaks. Remove from the heat and continue beating until frosting is cool and thick enough to hold firm swirls. Let cool completely before using.
ASSEMBLE THE CAKE:
Spread the lemon filling between the layers and on top. Spread the frosting on the sides of the cake and press with shredded coconut.
I have no doubt at all that this will be delicious,but these measures are a foreign language to me.I have tried conversion charts but they differ one from another.

I took German throughout school and University. Half 10 for them is 9:30. I just found it it's half past for you. You learn something new every day. Especially from other cultures, like you! Well, your culture, not that you're a culture, like yogurt! And I'm sure you are cultured, too! :D xx

That looks really good.
My go-to cheesecake recipe is white chocolate and ginger. Make the base with ginger biscuits instead of digestives. With the cream and cream cheese, add some melted white chocolate (or use white chip chips!) and add a little ginger syrup if you have some. It is sooooooo good, especially if you like white chocolate like me!

Ohhhh... I love cheesecake, and lemon’s my favorite! I can’t handle a lot of dairy, but we get lactose free cream cheese from Spring Green. You might have trouble finding it in Scotland. I’m going to pester my hubby into trying this! Yes, I like your accent, but it’s you I love, so never mind the other site. You and Cowboy Kent Rollins, the chuck wagon chef. are the only cooking sites we watch His stuff’s easy, though often time consuming, and it’s fun to watch him and his wife...and two pups! Wow, thank you for this, I’m so pleased it’s our twice monthly shop tomorrow, I’ll add these ingredients to the list. Asda smart price lemon curd and their crunchy peanut butter are both great quality and value (of course) in my opinion 🙂

Oh wow that looks good! I’ll see if I can find a substitute for the digestive biscuits...they’re over $4 in the States😳 Maybe a graham cracker or shortbread.... This would be perfect on a hot summer evening...or 10am😂💗...no time is the wrong time😂
Wow.. those digestives are expensive across the pond. I just bought two packets of a supermarket own brand for $1.08 (yep - for two packs) or if you like genuine McVities brand they are $1.35 per pack - and that's a family pack size. Maybe I should look into exporting some...? ;-) Best wishes from the UK.

Caroline, I've always believed that as soon as you slice it (or break apart, depending on item) any calories have an escape route and hurry out. LOL. I will make your lemon cheese cake later this month. For today how ever, I've made a version with red gel on top. Studded with blueberries and strawberries.
We celebrate our Constitution Day today in Norway. So cakes get decorated in red, white and blue. The colours of our flag.
May 17th this year will not be celebrated with our usual Children's Parades, but people will still dress up in their finery, and eat a lavish brunch consisting of national foods.
For pudding there will be all sorts of cheese cakes around ! 😍

Cheryl I have the ingredients to make this but the battery for my scale has died. Can you please tell me how many digestive biscuits I will need. I took them out of the packaging and have them in a biscuit tin. Everything else I can judge. Thanks so much for another mouth watering recipe..can't wait to make it.
In the United States we don't have those biscuits. We would use graham crackers. Tastes about the same.
