Æblekage is a No Bake Danish Apple Cake Recipe. Perfect Homemade Summer Dessert!

  • Æblekage was a recent viewer request on Google+. This traditional Danish apple cake called Æblekage is a wonderful homemade dessert. This refreshing & delicious dessert is served cool. Perfect homemade dessert to serve to your friends and family during the summer time! 🌺 ☀
    As well Æblekage is a cheap & convenient way to use leftover apples and breadcrumbs. If you have homemade applesauce, breadcrumbs and whip cream you are ready to go! Plus it is a No Bake Recipe! Learn How to Make This Traditional No Bake Danish Recipe. 🍴
    ♥ Ingredients ♥
    •3/4 stick (6 tablespoons) unsalted butter
    •12 slices homemade-type white bread, ground fine in a food processor (about 2 1/2 cups)
    •1/2 cup of sugar
    •3-4 cups homemade chunky applesauce (recipe follows) or bottled chunky applesauce
    •1 cup lingonberry, raspberry or strawberry preserves plus additional for garnish
    •1 cup of whipped cream for garnish and as an accompaniment
    Instruction:
    First stage is either to make your own applesauce or use applesauce from a jar. We prefer to make our own applesauce as it is less runny. A firmer chunkier applesauce holds better with this dessert. The breadcrumbs are less wet with a firmer applesauce. If you want to make your own applesauce, see our Danish applesauce recipe.
    Next you need to make whip cream in a small bowl with a handheld mixer. You can set it a side and keep it in the refrigerator until you are ready to use the whipped cream.

    The final stage is to assemble the Æblekage. In either individual size glasses or a large pretty glass bowl we need to layer the golden breadcrumbs and the applesauce. Make sure to have a clear glass because it is so pretty to see the layers! First layer is the golden breadcrumbs and spread it across. Next layer is the applesauce.
    Repeat the steps until you are at the top. The last layer is the whipping cream. Spread the whipped cream across the entire surface from glass rim to glass rim. Final step is to add a tablespoon of preserves on top such as either lingonberry, raspberry or strawberry preserves. Also, as you are layering the proportions are quite forgiving, so feel free to experiment. Refrigerate until ready to serve. 🍓
    We like to serve the delicious dessert with either a cup of coffee and/or a glass of port. For extra garnish we usually have a a bowl of preserve and a bowl of whipped cream on the coffee table. That way folks can add more flavoring to their liking.

    Is this the dessert known as Peasant Girl in a Veil?

      +coralarch Yes, I understand that in English it is called Peasant Girl in a Veil, however it is an old traditional Scandinavian dessert, and in Danish it is just calle Apple Cake. It is one of my favorite desserts. Hope you also like it.

      +coralarch Actually, we have a dessert called Bondepige med slør or, Peasant Girl with Veil, and it is almost the same. however, then you would use ryebread crumbs. Thanks again for asking. Happy New Year to you!

      Hi there!! Well, this one takes a bit of work, but it's very easy. Do you have "Panko" breadcrumbs in your country? If not, use whatever you have.
      1) Peel and dice 3 "Pink Lady" apples. Cook them in half cup sugar, 3 Tbs quince paste, 150 ml verjuice and the juice of a lemon, very slowly for 30 mins. Add more sugar if you like. Mash them til smooth, and chill. It will be a rich pink colour.
      2) Simmer 3 "Granny Smith" apples, peeled and sliced, in a little water, grated lemon zest, and a very small amount of sugar til soft- about 10 minutes. Mash and chill.
      3) Combine 3/4 cup "Panko" crumbs ( or any dry breadcrumbs) with 50g brown sugar, 1 knob butter, 1 Tb Frangelico ( optional) and 2 Tbs hazelnut meal, with cinnamon to taste. Warm it gently til it becomes well mixed. Cool and chill.
      4) Whip 150 ml pouring cream with 250 ml pure cream ( 45% fat) with 2 Tb icing sugar.
      5) Have your chilled glasses ready. Layer the pink apples, crumbs, cream, then the green apples, crumbs and cream.
      6) Serve to delighted guests!
