Coconut Curry Chickpeas - A Low Cal Vegan Dinner in 30 Minutes or Less

  • Coconut curry chickpea is a delicious combination of chickpeas, coconut milk, onions, garlic, ginger, tomatoes, curry, and other spices. Believe me, when the dish comes together, it is wonderfully aromatic and delicious. It’s also great if you’re diet conscious.
    We use tomatoes in the recipe, they are not traditional nor necessary but add extra taste and texture to the dish. You can use any type of tomato you wish.
    The chickpeas can be picked up in just about any grocery store, and any brand will suffice. Just make sure you drain them before cooking.
    In terms of the spices, I find the given amounts create a nice balance, but you can use as much or as little as you like. The same applies to the garlic, onion, and ginger.
    The dish is great served up over hot rice. Basmati rice is the best but any type can be used.

    I know everyone here is an expert cook and doesn't need notes or recipes, but for us inexperienced novice chefs, here are the details:
    Prep:
    Chop a thumb-sized piece of ginger
    Chop two medium-sized tomatoes
    Chop half an onion
    Chop 3 cloves garlic
    Drain a 540 ml can chickpeas
    Cooking:
    Add oil in pan
    Add onion, garlic, ginger
    Saute until fragrant
    Then add spices:
    2 tsp curry powder
    1 tsp garam masala
    Salt
    Pepper
    Cook until spices activate ... a minute or two.
    Now add tomatoes.
    Cook them down for a minute or two.
    Add 1.5 cups thick coconut milk (or cow's milk, yogurt, whatever).
    Bring to boil.
    Add in chickpeas.
    Let simmer 7-10 minutes.
    Last, add juice from half a lemon.
    Serve with long grain or, preferably, basmati rice.

    I just cooked the recipe with some changes... it was amazing. I used some Indian spices called "Podi" and instead of 2 tomatoes, only one plus added red bell pepper. It is very tasty, comforting.     So yummy and super easy to make! I made it 3 times this month already! Served with hot basmati rice is excellent! My addition is some grilled halloumi cheese or paneer cubes. It pairs great with the rest.

    Awesome & v.similar to my chick pea coconut curry.
    The difference I deliver is using coconut oil for sautéing onions, garlic & ginger, I then add the chickpeas with all my preferred seasoning, so they r coated with the seasoning. I then cook it (in Trinidad & Tobago, we say ‘run down’), with the coconut milk. Sometimes I will also add fresh basil toward the end too.
    So many concoctions💯 😍👍🏾✔️

    Great recipe! Just a minor suggestion based on my experience.
    Add curry powder and garam masala only "after" you add tomatoes into the pan OR mix the curry powder and garam masala with a small amount of water before adding the paste into the pan. This will minimize the risk of the spices getting burnt and loosing their aroma. It also enables the spices to blend easyly with other ingredients in the pan.

      gettingphinenow well MASALA’s are very aromatic herbs/spices(like star anise,large cardamom,bay,mace.... Heat(garam) add to it by adding regular spices like cloves,cinnamon,bl pepper,Chili’s etc.
      no worries ask around and each family can give you their ingredients.

    Looks yummy and quick. I modify this slightly by using chopped canned tomatoes and I double the spices. I use a squeeze of lime. I also eat it over cauliflower rice.

    Yum! When I make mine I add turmeric, chopped red pepper, and spinach. It's an easy way to sneak in more veggies!

    I am watching this and I can almost smell that wonderful aroma. My mouth is watering too. It actually looks more flavourful than the chickpea curry that I've made before.     I just made this and it came out great. I use raw chickpeas (soak overnight to soften) which probably are better than canned. Easy and tasty.

    Really good! Made it. You can't go wrong with the simplicity of the ingredients. You can vary the ingredients and add other things like potatoes cawliflower green beans peas and make a mixed vegi curry. Endless combinations. The sauce is a great base for the imagination. Love it!

    Fantastic, in the spirit of CookAndShare, my tip is as follows: when you wish to use fresh tomato in your dish, add a little bit of good tomato paste as well. This way, the colour and punch comes from the paste, while the freshness and texture comes from the fresh tomato. Same tip can be applied to adding fresh herbs into the dish; if available, add a bit of dry version of the same herb into the dish as well.

      Kay Dixie I hv seen the more cayenne(chili powder)+paprika(kumathi mild marchu)... version in a fast food masala dish. More of color appeal. Garam masala is hardly so red.

    Thanks for the demo. I made this with dried chickpeas taken from a 500g packet (by the way, 1lb = 454g) that I rinsed, soaked overnight in cold water, then set to 7 minutes in my Instant Pot. I waited until the release valve dropped naturally (NPR) which added ~30 minutes. I adore chickpeas, and think dried ones eventually come out a tad more 'buttery' than tinned. I wilted in a big handful of spinach near the end, too, as the colour, flavour and nutrition complement those of the chickpeas so nicely.

    Thanks for the easy and quick curry recipe! I would caution that if you're going to use yoghurt as a substitute for the coconut milk, before adding to the curry, you should mix 1 cup yoghurt with 1 tsp corn starch, otherwise the yoghurt will separate and you'll have something that looks more like a watery cottage cheese curry.

    I absolutely love this recipe. I have tried others, and this recipe is my favorite and quickest meal to make. Even though I had to stop for each ingredient, I was surprised that I had everything on hand, so it was an inexpensive, delicious, and flavorful dish for me to make. I will admit. I used the whole can of coconut milk and two cans of garbanzo beans. I like having the extra juice for dipping my nan bread. When I'm feeling adventurous, I add in some baked chicken. This really is one of the best and quickest dishes to make, Thank you.

    I came across this recipe the other day while looking for vegetarian meals after watching the video I made sure I had all of the ingredients I was missing on my shopping this week, my daughter is not and Indian food lover so I had to wait until she left for her boyfriend’s house tonight as soon as she walked out the door I rushed to my kitchen and cooked this for dinner, I literally hadn’t been able to get it out of my mind since I’d watched the video and I definitely was not disappointed, my house had the best smell ever while it was cooking and the taste was OMG Yummmmmmm..........thank you so much for sharing this recipe, I am so happy to have found it, needless to say, I am now subscribed to your channel 😍😍😍

    Great recipe ! I suggest to rinse the beans completely before cooking . People get gas from beans because they r not rinsed entirely before cooking . Put them in a strainer and run cold water over then and move them around in the strainer until All the bubbles are gone .

    Thank you I'm going to try this but I always eliminate tomato seeds by squeezing them out and I'd probably cook the onions a little more and I certainly wouldn't use tin chickpeas with the additives in them. But I realize that most people look for shortcuts and quick dishes so who am I to criticize. Just saying how I'll make it. Thanks.

    Half a lemon to give it that extra zip, or extra pip :) squeeze lemon over fingers to avoid pips going into your dish. Looks delicious !!

    I agree with the add some spinach comment. Right before the end so wonderful. This is a great way to stretch your food budget with a nutritionally dense meal.     Garum masala I am pretty sure they don't sell that where I live. What can I use in place of it?I love Curry, and Coconut milk, and Chickpeas .I will definetly try this with some quiona!I made this recipe it was delicious. I didn't have any Garum and I cooked it exactly the way he did. I will make this again!

      @@TheCooknShare thank you. I sure will be looking forward to it. Oh I made the chickpea Curry today and my daughter and I absolutely loved it. The only rice I had to go with it though, was brown and wild rides which I really would not suggest but she enjoyed it.

    Wow this is delicious! I had along with basmati rice. I baked some potatoes with paprika, salt and pepper and added them and it’s a total hit🤩😋🙏 Thank you sir for this recipe !!

    Coconut milk looked really thick - here in the UK it's very thin. I think I'll put coconut cream in when I make this.
    Love chickpeas too.

      I think he uses too much coconut milk. Just use one cup, specially if the coconut milk you have is thin.

      In UK coconut water is often called coconut milk. Coconut milk is coconut cream. The ones that gives a better value is the block or powder. I find the tinned products okay but not great. I'm from the Caribbean and find the brown coconut 🥥 best one to use. However, very time consuming.

      Coconut milk is very very rarely used in North Indian dishes. It's a favourite of Kerala cuisine.

      North Indians do not use coconut milk. It is used more in coastal states of Kerala. Tamil nadu and karnatala.
