      This is exactly why I watch her videos. She looks & talks like my grandmother who passed almost 10 years ago. The resemblance is uncanny. Her videos are like a warm blanket on a cold day.

    Both of my grandmothers died when I was very young and I never got to know them. I imagine that this is what it is like to have a Southern grandmother. I love watching.

    Thanks for the good laugh & smile. Years ago I was a teller and I can almost hear someone asking that. .. I just bought sour cream so I can prepare this at supper tomorrow night. Now I have to decide which meat to thaw out and cook with it.

    My family has it at Thanksgiving and Christmas. It’s so delicious. We use the cubed hash browns sometimes. Yours looks so delicious. Thanks for sharing.

    Nice and easy dish. So many wonderful recipes. Thank You.
    Denomination. Lol. Funny story. 😂 I was raised Pentecostal. Baptized in the Nazarene church as a baby. Then went on to serve in ministry for years in a non denominational church. I taught Sunday school to 4 th graders. Led 3 healing homes that housed wayward people who suffered from many different situations. Then was on the praise and worship team. Intercessory prayer team. Met many international pastors in my day. Kenneth Copeland and his wife. Jan and Paul Crouch and many more. You will probably remember back in the day Kathryn Kuhlman my mom took me to a Bible study with her, and I was just a little baby, just a toddler and she leaned down and said this is a child of God who has great plans for her life. God is upon this child and will be with this baby guiding her through her life. What an honor to have that prophecy at such a young age. I’m blessed. I’m grateful for God in my life. He’s taken me through so much and without him I wouldn’t have the mind for Christ that I do now. ❤

    P.S. I am from West Point Utah and we add buttered crushed corn flakes on top and call this " funeral potatoes" in Utah because this is served at most funeral luncheons.

    If you want to make this recipe even better, add more diced onion, cheddar cheese condensed soup, and 2 eggs. It will be almost identical to cracker barrel's hash brown casserole 👍🏻

    I ordered your cook book and it just came in the post today! I was so excited it came so quickly. I so enjoy you so very much. You definitely remind me of my sweet grandmother with your cooking and personality. We were blessed to have her for many years…she was 96 when God called her home. Man could she cook!     This is a very good recipe. I baked in two 8” x 8” tin containers so I could freeze one. Worked out perfectly and preparing it was “easy” like you say. Thank you for always uplifting everyone with your joyful spirit. Can you feel the love you bring in? ❤️

    I make almost the same recipe, however, (1) I make my own hash browns with a hand grater and then rinse them to remove some of the starchy liquid, then drain them thoroughly using a salad centrifuge (spinner,) (2) I use clarified butter instead of whole butter, (3) I grease the baking dish with clarified butter/olive oil prior to placing the mixture in the baking dish, so that the bottom browns while baking, and (4) at the end of the baking period, I switch the oven from baking to broiler and brown the top a little more. In either case, this is a great potato recipe. Thank you, Mrs. Leary.

    I have a scalloped potato recipe I make that calls for a can of cream of mushroom soup and your choice of American or cheddar cheese plus a soup can of milk. One time I made it and thought it needed no additional salt as the soup and cheese already had it in their ingredients. Too bland; It definitely needed that tad of salt to make it super good. 😋

    That story was so funny!! Cute! Id probably have been like your daughter!! Lol. I've been trying to find a casserole recipe for several years that had been brought to my sister-in-law's funeral. It was so good,rich and creamy. But it didn't seem to be hash browns, certainly not chunky. I've never had one since,nor before.

      There's one my Daughter in law makes that called Funeral Potatoes! Its made with sour cream! Almost the same blend as this one but she slices potatoes in rounds and uses sour cream, cream cheese, a can of creamed of mushroom or cream of celery soup! She tops it with Cheese of whatever she has or crushed Ritz crackers with melted butter mixed in for a topping! Its made different ways! Its a different taste but Oh so good! Funeral Potatoes is the name I believe you're looking for tho. Its mostly made to carry to a family that lost a loved one! Look it up. I'm sure its out there. She got the recipe from her Aunt who had made it for a death in her family! I hope this helps you! If I get the recipe, I'll put it on here for you! 🙏❤😁

    Watching this video now and didn't hear if you said the bag of hashbrowns were frozen or fresh. I have found them in Simply Potatoes and also frozen so wanted to check. You look so pretty in pink and as always, love watching and following you. The heat is on down here in Jacksonville as well as the afternoon rains. Stay cool!

    Dear Miss MeMe, Love your videos and thank you for inviting me into your kitchen. I see you're using Cream of Celery Soup. If anyone is paying attention, Cream of Celery Soup is proof that somebody up there likes us! It can be used it in any casserole, meat loaf, gravy or sauce.

    What temperature & how long would you reheat it for please ? I live in England but love hashbrown casserole from Cracker Barrel. I want to try your recipe but it will only be me eating it no one else would try it.

      Put it in an oven safe dish the portion you want. Cover and heat on 350 for about 20 minutes.

    Meme, I love the look you give when you taste something, and you like it!!
    I enjoyed your story. Reminded me when i was a child, we were headed on vacation and we stopped early to have breakfast at this little po-dunk cafe. (Best food ever btw those places) Well the waitress came over and took our order and she got to me and said "how would you like your egg cooked?" I immediately said "fried" and much to my surprise everyone was laughing. I didn't get what was so funny. She said I know that honey, do you want it well done, over easy...I said I don't know what you call it, but i want my yoke runny!!! (I thought that she wanted to know if i wanted it scrambled, boiled...)
    You can probably guess we didn't go out to eat much lol

    I am a recently divorced mother of three adult boys. I’m by myself now. I still tend to make big dinners and freeze individual containers meals for myself. Do you think that this would freeze and reheat ok? I’m trying to find new recipes. If I cook one big dinner a week I can keep a rotation of meals going for the whole month. Right now I tend to make soups, chicken & dumplings, chili, chicken spaghetti and chicken fried rice. I love casseroles, but I noticed with my tuna noodle casserole after being frozen it was quite mushy. Do you have any other ideas for meals that I could cook ahead and freeze for myself?

      That’s a hard question, because you’re exactly right. So many things do get mushy. I have frozen the chicken and dressing casserole. Most casseroles cook, cool, then freeze. If they have a bread topping, add that after you reheat.

    I learned how to make this in a Mennonite service mission program at 19. We used the frozen potatoes Obrien with diced peppers and onions in it and added cream of mushroom sour cream cheddar and a little salt and garlic powder delicious!

      I don’t have any reason about the bottom rack except I always have. I never got used to using a spatula so I grab whatever.

    Miss MeMe you remind me of my maternal grandmother. She taught me my love of cooking. She was a great southern cook and sio was my mother. I had a stool that I stood on and my grandmother would give me biscuit dough and I would play with it until is was black. Sha passed when I was 15 ancI never forgot the lessons learned by her side. Never change..you bring some sunshine every
    time I hear your cheerful voice and I hope I shine for Jesus the way that you do.

    Myother in law always made these at Easter. For an added taste she also put crushed sour cream and onion chips on top. Mine never turned out as good as hers.

    This casserole is always a hit, and MeMe's looks amazing. I cover mine with buttered cornflake crumbs -- try them instead of bread crumbs. You'll love them.

    I love the story about your daughter. When I moved to SC, someone in the grocery store asked me if I needed a buggy. A buggy??? I didn’t have a baby with me or a horse to go with a buggy. I was so lost until someone brought me a cart to use. 😮 My husband asked me to “cut on the light”. I looked at him like a deer in the head lights until I realized he wanted me to “turn the light on” 😂. BTW, We also “cut off the lights” around here. He was confused when I referred to my “purse” instead of my handbag. And I had NO idea what he meant when he told me to “mash the button” or “mash the brake”… ohhhh, you mean “push” it. I experienced culture shock when couldn’t understand what words meant in some of the most basic conversations. But worst yet, was not understanding the pronunciation of words or being understood when I spoke “Northerner” English. At work, at home, at church or anyplace else, my children and I often had to spell words back and forth with people in order to understand. Now my daughters can pull off the best southern accent without thought. They are bilingual 😂

    I love this casserole! I add more onion and cheese with Diced Ham and onion powder for extra flavor and a couple eggs. I let mine brown more on top. The 8 minutes you had left would probably browned it more. I always add salt to any recipe if it doesn't call for it even if there's salt in the indredients. I don't like bland foods. This is a great recipe to add whatever your liking is. Thank you Miss Meme... This made me hungry! Maybe tomorrow I'll make it for Sunday Dinner! I'm having Fried chicken so this will be perfect! 🙏🙏❤❤
