As of late I have found myself watching Ms. MeMe's videos until I fall off asleep. I do watch to learn new recipes as well but mainly because her loving video bring back soo many of my childhood memories, in that I was born and raised in a little town in South Carolina (Florence.) And not only does Ms. MeMe's sweet loving nature and voice reminds me of all of my three grandmothers, but she also reminds me of many if not all of my grade school teachers. Sadly, having to say I have not lived in South Carolina for over 40yrs. or so now but the love and simple way of life and living will forever be a very special part of my inherited DNA. In closing I also ordered the cook book on today, and I look forward to sharing it with my friends here in Saint Louis, MO. And, by the way my name is (River.) and thank you for inviting me into your life and kitchen. And as always continue to be a healing and blessing to all that are able to hear the reflection of the One God in your loving voice Ms. MeMe......

I have family in Florence. My Aunt Callie worked at the hospital there until she died. It’s a beautiful little town.
I'm sure you hear this often. But my grandmother was a tremendous cook. She was a preacher's wife in many small Iowa towns. She had thousands of recipes she had saved and she wrote two cookbooks very much like your own for church fundraisers. When I saw your cookbook it made me smile so much and then I thought to myself "I bet there are a treasure trove of culinary gems in that book!" Watching you cook and how you end your videos reminding us to shine for Jesus! It was like I was standing right next to my grandma. Your videos are a true blessing! I think these are so wonderful. When my grandma passed everyone wanted to know who was getting the recipes. I got them! Two big shoeboxes full of great classic recipes! Thank you for making these videos. They really are special!

I am scrunching my face watching you put extra sharp cheddar cheese with pineapple. I love pineapple and I love cheese, but would NEVER think of putting them together! (As I'm writing that, I realize it's no different than pineapple with mozzarella cheese on a Hawaiian pizza, which I often enjoy!) 9:27
It does seem like an odd recipe when you look at the ingredients. I live in SC and ate this at an All-You-can-Eat BBQ place for the first time. I was skeptical but you know … it’s all you can eat unless you don’t like, then you don’t eat it at all! I was blown away! Pineapple casserole was my dessert that night! The recipe I found on line wasn’t quite the same as what I ate in the restaurant. But Meme is a Southern South Carolina Belle, so I can’t wait to try hers. Pineapple casserole South Carolina style! This Northern girls Loves her some Southern lovin’ cooking’!
I use campbells french onion soup in mine. Also add browned pork chops in top and thats my “Pork Chop Casserole”. I will definitely try this recipe as a side. I love your channel MeMe!!!

I can't get my head around the American term casserole for what we call here in Australia a bake. So strange to me lol.

Thank you for sharing your stories and taking the time and effort to post this recipe. I have never tried anything like this pineapple casserole. It looks absolutely delicious. I no longer use sugar or regular flour. So I am going to modify with a self rising almond flour blend and try my allulose instead of sugar, once it cools off, here in Texas, the triple digits we are having keeps me from cooking, with enjoyment. I love pineapple! Your time is appreciated from the majority of us‼❤From Texas😊

I love how you're teaching young people the old recipes that their grandparents would have made. There's nothing wrong with simple dishes. Most of them will save them a ton of money at the grocery store too! If you cook one night, you have leftovers for the next few days. You don't have to have oat milk or soy milk to make dinner, and children need whole milk to grow properly along with good vegetables and protein. They're little and they need good nutrition. Thanks, Miss Diane. P.S. It breaks my heart, but my step-granddaughter just got told that if she doesn't start eating foods with cheese and milk, she'll stay under 5 feet. It breaks my heart to see this happen, but of course I had to keep my mouth shut and make sure she's over for dinner a lot!

In the 70s, when I was in college, we had a baked potato bar added to our salad bar once a week. I used to get pineapple chunks and add sour cream and cheddar cheese. It has stayed with me when I need to add a quick salad for supper. 😊

I make pineapple casserole every Thanksgiving for our family get together and I like using the tidbits. They are the perfect bite size, in my opinion. My recipe is similar to yours but not quite the same. I don’t mix the pineapple with the cheese but I’ll be making yours next time! It looks delicious!

Love this casserole so much - it really is something very special. Also, a tip for you that I do is to put whatever I'm heating in the microwave on a potholder or folded up kitchen towel so that I can use it to pick up the hot dish once it's finished heating.
I promise you this woman could keep ritz crackers in business single handedly

I strongly suggested that you grate your own cheese. The preshredded stuff is coated with a funky chemical preservative and doesn't melt well. It's not difficult to grate some cheese.

I've made this for years and notice that men don't seem to like this as much as women do. My aunt and cousin adore this but their husbands and sons don't. Whoever makes this runs a portion to the women that love it. Hard to make a huge casserole for just me. I went to the grocery one time and they had tons of fresh perfectly ripe pineapple. I used some to make this casserole. If you haven't ever used fresh pineapple, you should try it. I thought it elevated it several notches. I seldom find perfectly ripe fruit so when I find it, I make this.
This makes me want to invite people for Christmas ham dinner

My grandma used to make this every Easter Sunday dinner! Except she put mini marshmallows on the top instead of ritz crackers, and cooked them until toasted brown. This brought back so many happy memories ❤😊
