If you've had fried rice made with the sambal that has shrimp paste in it, you'd know how addictive the pungency can be. It's not an ingredient you'd necessarily want to eat by itself, but it makes other dishes taste so much better.
I actually studied about garum when taking various courses at an American branch University in Napoli while stationed there 1987-1991. Thanks to those classes we got a private seminar in Pompeii, inside the research labs and closed villas. Also did one on the Streets of Naples (stunningly amazing, learning the layer cake below the Centro Storico, all the way down to a rare Greek Arch) and another one in Vatican CIty where we got to go all the way down to see the bones reputed to be St. Peter's. I revisited Pompeii twice more on my own, because Jaysus there's a lot to see and learn there. The idea of actually MAKING garum makes my head asplode.
