  • This flavourful dish was featured in Netflix's documentary Street Food, Bangkok episode. In the documentary it's made by Jay Fai, a street food vendor who earned a Michelin Star for her "elevated street food" which uses a lot of large, expensive seafood in otherwise common dishes.
    Dry tom yum is basically the stir-fry version of the famous tom yum soup most people know about. It's quick, it's easy, but with bold, refreshing flavours. I'm using a mix of seafood for this, but you can use only 1 or 2 types of seafood as you wish. The important thing is the herbs-lemongrass, galangal and kaffir lime leaves-which is what gives it the iconic flavours of tom yum!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RUclips channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RUclips videos, her cookbook, and cooking classes.     I just made this dish tonight and it was delicious! My partner and I added green mussels, sole fish, scallops, squid and shrimp. thank you for the great explanation and breakdown on how to cook this plate. This became an instant household favorite for sure!

      not really about the scallops, is that they'll heated again back when you put everything back into the wok

    Visited an Asian Buffet and checked out the salad bar. Great surprise, the place has a Tom Yum shrimp salad - lettuce, shrimp, onion, tomato, and good flavor. And it was great!

    I just had that the other night at a friends restaurant in Udon Thani. They also made a yum yum with a banana flower that was great as well. Been in Udon Thani since November due to a motorcycle accident. But it all good been hanging out with my wife and friends and grand kids. but soon will have to go back to work. Love the show always makes me hungry and when I'm at work makes me miss home.

    Experimented with this recipe twice and I absolutely LOVE it to bits. Will chopping the galangal and lemongrass more roughly affect the taste of this dish? I love eating the shallots but not quite a fan of biting into the bits of lemongrass and galangal. Everything else about this dish is just YUMS!!!

    If you run a knife blade over the tails, it will eliminate the water and reduce splattering. This looks delicious! Can't wait to try it!

    Hi Pai, love your channel can you do Kra Prao Moo Grob please? I love Pork Belly, and I just tasted this dish at a Thai restaurant last week. The super spicy sauce really cuts through the fattiness of the meat.
