I lived in Thailand for 3 years and always ordered Thai dish that I still don't remember its name but I still can't find it anywhere, any book and internet except I visit in Thailand again. The soup is very hot, very red and has simple ingredients such as shrimp and one kind of fried square cut spongy kind of tofu with spinach in it ( I don't exactly know what it is, but I like the texture a lot). This soup is every where in Thailand in small restaurants and seem like very popular but not internationally. Could you teach or provide me the recipe of this hot chilly red soup please. thank you a lot!
Made this yesterday for my wife who generally does not enjoy duck. I cooked it sous vide 131°F for 1 hour, then seared in pad. It was great, thank you Pailin.
We moved to Australia from Thailand in 2017 and the biggest thing the kids missed was the MK Duck and sauce. We nailed the Hot Pot side of MK but never really tried with the duck. There are some great Chines Duck restaurants in Melbourne but nothing like the MK duck and sauce. Tonight i did the sauce...My 16 year old daughter who was by far the sauces biggest fan was first to try it....She almost was in tears, nailed it, she said, she couldn't believe it.Then my wife, also huge grin and wow, wow, wow. Then my 18 year old daughter, OMG how did you do you that? Then my 20 year old son, yeah its ok, would go with the Char Siu pork when we do that, lol... And all this while the duck breasts are still marinating in the fridge....lol. To be cont......
OMG you got no idea how much I love MK Duck! Every single time when I go back to Thailand, my first meal is at MK Suki to eat this roast duck and jade noodles !

Thank you for your recipes. Today I made whole duck with fourth time of powder. Two times of the sauce ingredients and eat with eggs noodles and Choy Sum. So so so yummy 😋. Aunty says no need to buy roasted duck for Chinese New Year, we will own self made. 😊 And then your Pad Thai also I made so many times already. Really really nice, especially the sauce.

Here for the sauce. Haaa. Tried duck for the first time in central Thailand back in Feb 2023 and it was like what is that sauce. I've watched several duck videos and then it clicked, hey you want Thai duck sauce, look for a video of duck cook with a Thai flavor. I might do just the breasts but wanting to cook the whole duck since it's in my freezer. Wish I could get fresh duck but not in my area in the Middle East. Thank you Pailin

I have one question though: one thing that I loved while on vacation in Thailand was Nam Manao (Thai Limeade). I couldn't find a recipe for that drink on your website. Would you maybe consider filming one soon? That would be awesome! Because I tried different recipes for Nam Manao that I found online, but they just weren't the same as the original. Maybe you have the saving tip! Keep up the good work!
That looks super delicious! The first time I tried duck that was prepared pretty much how you did was in Korea and it was medium rare also. That was the best version of duck I've ever tasted so the usual Asian style well done duck just doesn't really compare after that experience
How would you crisp the skin if cooking a while duck? Would I just out the rub in the cavity and put the whole duck in the oven? Would the rub get onto all the meat? Let me know. Thanks!
Oooh looks amazing!! I'd use the remaining sause as dipping for some tantanmen (dry ramen). 1 thing tho... Wouldn't It be better if the gravy was thicker? (Wether by reducing it or using cornstartch water)

Mini whisks are my favourite things in the whole kitchen. You can rest them in a small bowl without them tipping over!

The color to peking duck is really maltose and water bath. Thai uses light honey. So basically caramelized sugars.

While the duck is roasting I would use the rendered duck fat to sautee the herb past and make the gravy. Awesome recipe anyways!

You can make some noodle and drench it in this gravy it's super super good
Thai people don't like to thicken our sauces with starch, but if you prefer it thicker, go for it.
