My tips for tom yum: - I find that frying up the shrimp shell and head first + squeezing the head so that the guts have time to caramelize, and then adding water/stock will give it a much deeper shrimp-y umami flavour and a beautiful orange colour! (You can remove the shrimp shells once you've extracted the flavour, or leave it in) - Frying the aromatics at this stage (after caramelizing shrimp bits) also helps develop flavour by blooming it in oil. - Sugar (palm sugar if you have it) is an essential ingredient that will round out the strong sourness + spiciness of the soup. - Adding fresh lime during cooking will make it more bitter and less fresh/punchy - so definitely add lime (and half the fish sauce) after turning off the heat! :D

The paste is called น้ำพริกเผา (nam phrik phao), if ur making creamy version then add this along with the pounded red chilli and then add in evaporated milk (not coconut milk) its traditionally made using evaporated milk. If ur making clear version then dont add in nam phrik phao, just add the lemongrass, makrood like leaves and galangal to water and bring it to boil then add in small thai shallot (leave them whole) then add in pounded thai red chilli and tamarind paste then add in ur protein ( it can be made using river prawn, normal prawn, cubed pork hock and feet, soft bone pork ( its a type of cut which comes from near the shoulder and hip area, it might be really hard to find in foreign countries except for thailand ).
"If the Thai product says Hot, or Extra Hot, watch out. You're gonna hurt yourself." The way you said that so seriously and your facial expression was so funny to me!

I know it would be an extra step but, since a bit of it is inedible, could you maybe strain the stock before adding the mushrooms and everything else to it? This looks delicious and I want to try it but I don't know if I want to go fishing around for the mushrooms and shrimp haha
Yes, that is what some people like to do. After the herbs have infused their flavour you can strain/scoop them out and then add the rest of your ingredients
