- Homemade cereal bar
Who doesn't like a cereal bar? Especially when looking for something quick, healthy and satisfying to eat. When we leave the house and want to leave a snack in our bag, something to snack on is the best option, and what can save us in those moments of despair until we get home.
We can also eat on other occasions, when we really feel like it. And it will, because it's delicious!
The bar is made from oats (can be gluten-free), dried fruit and healthy seeds, and is sweetened with brown sugar.
homemade cereal bar
Ingredients (for approx. 34 units):
½ cup of sesame (60 grams)
1 cup of sunflower seeds (150 grams)
1 cup pumpkin seeds (150 grams)
1 ½ cups of oats (165 grams)
⅓ cup pistachios, broken into large pieces (50 grams)
½ cup of cranberries (70 grams)
1 cup of dark brown sugar (150 grams) (if you want to sweeten it more, you can add a little more)
2 large eggs
1 tbsp vanilla sugar (10 grams)
½ tsp cinnamon powder
*For the “Dates and almonds” or “fig and macadamias” versions, replace the cranberries and pistachios with:
½ cup of chopped dates (or figs) (70 grams) (open each date or fig) before cutting, as they may contain bugs)
And 1/3 cup sliced or flaked almonds (or macadamia nuts, chopped into cubes) (45 grams)
Method of preparation
Check fruits, oats and seeds that are clean because they may contain critters. Mix all the ingredients well in a large bowl except the egg with the help of a tablespoon.
Add the eggs to the container with the mixture. Mix well until you get a more uniform mixture.
Place a 7 cm diameter cookie cutter on a baking sheet lined with parchment paper and place a heaping tablespoon of the mixture inside the circle. Sometimes you need a little more. The bar is about 7 or 8 mm thick. Squeeze the mixture inside the circle with a teaspoon until smooth. (as in the video 5 min 30 sec)
We lift the cookie cutter and place it to the side, on the mold, to make more bars. If the cutter doesn't come out smooth, we can dip it in water a little bit and continue.
You don't need to keep a large distance between the bars because they don't grow in the oven.
Bake in a preheated oven at 160° for 12-13 minutes.
Wait for them to cool and then gently remove them from the parchment paper so they don't break.
Tip
You can dip the cereal bar in dark chocolate (preferably Belgian chocolate or some other good quality) to make a delicious chocolate-covered bar.
- Melt chocolate in the microwave, place in a large glass or container and dip the bar halfway in. Place on a plate covered with plastic bag inside the fridge until hardened.
Enjoy!
