My Dad was the Cook in our Family, and man, he was good. We literally went hunting and fishing for all our meat, far out in the Boonies, tiny town, we traded with neighbors who had Veggie Gardens - Cooked for the (nearby) Home-town Volunteer Fire Dept. Taught me that you cook today for eating tomorrow, you know what that means. Biggest things he taught me was how to cook Game without having that "gamey" taste. All in the prep. Love the Video's.

Fantastic! They look delicious! There's hardly a day that goes by without me eating an egg for breakfast. But for years I avoided frying eggs over easy because I was dead scared of breaking the yolk. However, for a number of weeks now I've been flipping my egg and so far with only ONE yolk broken. It's all about confidence. I'm getting to like eggs over easy because they don't need much butter, therefore it's healthier. But I'm still not confident enough to flip the pan! What I do is slip a Teflon spatula under the egg, then flip it.
Great job, Chef Johnny. You mention the basting method up aloft - my preferred method, as it's easy to adjust the look of the yolk/s to a smidgin on the cooked side of raw, while inspecting just how 'done' the top is. I just tip the oil to the side of the pan and use a long, small spoon. And I like a cast iron frying pan/skillet with enough oil+butter to ensure plenty of basting liquid. The oil and pan must be clean to be sure your immaculate egg doesn't grow freckles!
Finally somebody that knows how to cook eggs. Low heat is the key. And breaking the white membrane allows the white to cook before the yolk begins to get hard! Great video.
It came unexpected that a good egg frying recipe would come from Texas. First you start with ghee and no salt and I have to say this is the only way to get it right (lamb tallow or bacon fat would be great options too). Heat skillet, melt butter, add eggs, salt and pepper cover with dish, cook about one and a half minutes turn off stove, let set another minute or so until desired doneness. A grill guy taught me this. He said only one side of his grill is high heat to start cooking, the other side is medium low heat to finish. That's why you always see them shifting certain foods around. Also by using the plate to cover the pan you warm the plate. Hot eggs and cold plates make eggs cool too rapidly. That's why many grills keep stacks of plates near as possible to heat source. Many little nuances to cooking pros use we don't think about. Such as melting butter and brushing on bread for grilled cheese. Or par boiling ribs or sausages to remove excess grease before grilling. Ribs also come out tender and juicy. A lot of simple things for good cooking.
I like those sunny side up eggs. I started ordering over easy because every time I ordered sunny side up the white was always runny. your are perfect sunny side up but the white is cook through. Very nice.
Nice. A nice way is to add a touch more oil and a bit more heat (so probably better in a non-Teflon). This way when you break the end into the oil, it sizzles and bubbles a lot. It cooks quicker with some browning of the edges. This is good for putting on top of instant noodles or in a messy sandwich.

I was brought up in amish county PA. We called these dippy eggs. Went to restaurants in other parts of the country and they didn’t know what we were talking about. Sometimes people at other tables knew and we would just laugh and knew we were from the same area. But now I ask for sunny side up..haha!
Every time I flip them over the Yokes wind up breaking when they hit the frying pan I find it easier to put a cover on the Pan and the eggs come out just like if you flipped then over in the Pan etc, Thanks for sharing etc.
YOu are probably flipping them to high. Now remember if you do not turn them over you do not have over easy eggs. You have steamed or steam braised eggs.

Nice looking eggs!!! I have a friend who was a trucker for years and now when we go into eat breakfast some place he always asks for "French" laced eggs. He has some of the truck stops from years ago now call them that. He is a hard guy to go to breakfast with sometimes as he gets mad if they won't do french laced or if they dont know what he is talking about. I have seen him get up and leave if they won't do it for him. Too many trucking days I guess. LOL!!!! The funny part is my mother made those almost every day by putting them in the bacon grease (thin layer) I never knew what they were called till I met this guy.

I’m 62, and growing up my mom always made eggs in bacon grease. At that time, I think it was pretty normal. When I think back on how we ate back then, as opposed to now, lol.
My father was a chef who died in 1975 three days after my 11th birthday. I watched him cook many times but over time forgot things. I do remember that with eight children, scrambled eggs were the norm since it was the easiest way to get it done quickly. My mother was not a cook by any stretch of anyone’s imagination. I had to teach myself how to cook. I do my eggs pretty much like you do. I can’t tell you how many videos I have watched where they dump a half cup of oil in to cook two eggs 😖 my stomach hurts just watching it. I don’t flip mine that way because I’m a big chicken. But I’m glad to see someone who actually knows what they are doing has shown me I’m nit doing it wrong! ✌️

When you melt the cheese the burger is already prepared you place the cheese on it squirt water around it and cover it quickly so the the “steam” will melt the cheese. The culinary difference between a sunny or over easy egg is in how set the egg white is. The more cooked white can CERTAINLY be achieved without flipping the egg, that's just the common way to do it. As for the size difference between an egg and a burger having ANYTHING to do with how it's finished, and changing whether it's fried or steamed simply makes no sense at all. Using steam to melt cheese or cook the top of the egg really isn't much different. Oh, before I forget, you're welcome.
I have another way of doing over easy that doesn't require a flip. I start just like you but when the eggs are nearly done I pour about a teaspoon or two of water into the pan and immediately cover it with a lid. The steam from the water cooks the top of the eggs.

Visited my Cousin in Vancouver - we went through to USA. We had breakfast one morning in a restaurant. I had never heard of Sunny Side up or Over Easy! So - I asked for one of each! When they arrived they were joined (as if cooked together) - The Chef himself came out to serve my eggs. How did he manage two different style eggs - together? Look forward to someone seeing this and telling me!!! They were delicious btw...

Hi. I just made over easy eggs for lunch today and then coincidentally found this RUclips video. I often end up with at least 1 egg yoke broken by the time I get them on the plate. I’ll practice the 9 and 3 flip. I also sometimes pop a lid on top of the pan when making sunnyside at the last minute to be sure my yokes are done. Thx for your videos.

Yes the fresher an egg the higher the yolk stand and the less the white spreads. The color can actually change because of their diet. So they are not always orange. Thanks for the comment and for watching.
Now i am hungry. Looking very delicious. Butter for cooking eggs makes good taste, but it's also a reason to get overweighted. Look at the cook. Better for health is sunflower oil or other healthy oil, tastes also good.
The egg industry was under a microscope years back and cleaned them up allot. Now that you can get pasturized eggs still in the shell it really helps with food safety. If you are working with a high risk population then pasterized eggs are all you can use. Thanks for the comment.
crack the eggs into a separate vessel so they hit the pan at the same time, by the time you crack your second egg the first is halfway set so you either end up with one overcooked or one undercooked...
The steam will help cook them but on the sunny side up it will turn the yolks white if you are not carful. One the over easy the basting does turn them white, but they are not the same as one cooked on the top. Thanks for watching and for your comment. I always appreciate the tips.
I'm going to try and flip the eggs like you did instead of turning them over using the spatula, which often breaks the eggs. I'll do it over the sink though, just in case :)
Jack Ridge that will work and cook the egg just fine. But it is not over easy. To be over easy you have to turn it over and cook the top that is usually called a steamed egg. .thanks so much for watching and for the comment

I do my sunny side up with a glass lid on medium heat, so that cooks through and not worrying about splatter oil everywhere.

As for the size difference between an egg and a burger having ANYTHING to do with how it's finished, and changing whether it's fried or steamed simply makes no sense at all. Using steam to melt cheese or cook the top of the egg really isn't much different. Oh, before I forget, you're welcome.

I have another way of doing over easy that doesn't require a flip. I start just like you but when the eggs are nearly done I pour about a teaspoon or two of water into the pan and immediately cover it with a lid. The steam from the water cooks the top of the eggs.

Always put a lid on my fry pan, that creates steam. So, fried from underneath poached on the top. Works for me!
a lid works nicely, should also put in a teaspoon of water to create steam.
The lid and steam will work fine. But, you now have a steamed egg or a steam basted egg not an over easy. But you are very correct that the steam will cook them up just fine. Thanks for the comment and for watching.

Visited my Cousin in Vancouver - we went through to USA. We had breakfast one morning in a restaurant. I had never heard of Sunny Side up or Over Easy! So - I asked for one of each! When they arrived they were joined (as if cooked together) - The Chef himself came out to serve my eggs. How did he manage two different style eggs - together? Look forward to someone seeing this and telling me!!! They were delicious btw...

Hi. I just made over easy eggs for lunch today and then coincidentally found this RUclips video. I often end up with at least 1 egg yoke broken by the time I get them on the plate. I’ll practice the 9 and 3 flip. I also sometimes pop a lid on top of the pan when making sunnyside at the last minute to be sure my yokes are done. Thx for your videos.

I can't eat store eggs because they look too yellow and don't pop up perky like my orange-yolk farm eggs. I think store eggs are gross.
Yes the fresher an egg the higher the yolk stand and the less the white spreads. The color can actually change because of their diet. So they are not always orange. Thanks for the comment and for watching.

I'm using an induction cooktop. I wonder how high temperature I should set and how long I can fry egg for sunny side up?
Allot of variables there I say cook it on medium high and it will take 4-5 minutes. Just a guess

For sunnyside, to cook the white on top, you cover the pan and heat will be diverted on top and your white will cook in few seconds.

The egg industry was under a microscope years back and cleaned them up allot. Now that you can get pasturized eggs still in the shell it really helps with food safety. If you are working with a high risk population then pasterized eggs are all you can use. Thanks for the comment.

crack the eggs into a separate vessel so they hit the pan at the same time, by the time you crack your second egg the first is halfway set so you either end up with one overcooked or one undercooked...

Just add a splash of water and cover steam over top 1/2 min done
The steam will help cook them but on the sunny side up it will turn the yolks white if you are not carful. One the over easy the basting does turn them white, but they are not the same as one cooked on the top. Thanks for watching and for your comment. I always appreciate the tips.

Someone might've said this already but I cheat a bit for SSU. I put a lid on the pan and the white sets a lot quicker. Great time saver.

You don't need a spatula to get the yolks at 3&9. Just swirl the pan gently in a circular motion and they will rotate to wherever you want them.

Jack Ridge that will work and cook the egg just fine. But it is not over easy. To be over easy you have to turn it over and cook the top that is usually called a steamed egg. .thanks so much for watching and for the comment
